¾ cup feta cheese
½ avocado, diced
½ cup diced tomatoes
¼ cup chopped Kalamata olives
1 tablespoon chopped fresh basil

Steps:

  • Whisk eggs in a small bowl until smooth.
  • Preheat a nonstick skillet over medium heat. Pour in eggs. Scatter feta cheese, avocado, tomatoes, olives, and basil over 1 side. Cook until bottom is golden brown, about 5 minutes. Fold over; cook until center is set, about 3 minutes more.

I got this from an old friend. It is easy and quite good. Just make the omelet as you would normally with the diced avocado in the middle when you fold the omelet. Then pour the sauce over it. YUM! I added shredded pepper jack cheese like you would in a normal omelet. You could also use plain cheddar.

6 eggs
6 tablespoons milk
1/2 teaspoon salt (or as desired)
1 dash pepper (or as desired)
6 tablespoons butter
1 avocado, peeled and diced
grated cheese, as desired (I used pepper jack but you could use any you desire)
1 small onion, diced (I used green onions, tops only but you could use regular onion if you prefer)
2 large tomatoes, diced
1/4 teaspoon salt
2 tablespoons bacon bits (or as desired, can also use the imitation bacon bits for vegetarian)
1/4 teaspoon chili powder (can use more if desired)
1 (4 ounce) can diced green chilies (you could also just put these in the omelet instead of the sauce, however you prefer)
2 avocados

Steps:

  • In med. skillet cook onions, tomatoes, salt, pepper and chili powder in butter. Simmer several minutes or until onions are soft.
  • Remove from heat.
  • While onions are simmering, peel avocados and reserve a few slices for garnish.
  • Mash remaining avocados and add to the onion mixture. Simmer a few minutes to unite flavors.
  • Serve the sauce in a small pitcher or gravy boat so that your guests & family can "pour it on.".
  • Make the omelet from the omelet ingredients as you would a normal omelet with the diced avocado in the middle, and the cheese. Pour the sauce over the cooked omelet and enjoy. YUM!

2/3 cup finely chopped seeded tomato
2 tablespoons finely chopped red onion
1 pickled or fresh jalapeño chili, or to taste, seeded and minced (wear rubber gloves)
2 tablespoons minced fresh coriander
1 tablespoon fresh lime or lemon juice
4 large eggs
2 tablespoons water
1 tablespoon unsalted butter
3 slices of lean bacon, cooked and crumbled
1 small avocado (preferably California)
1/2 cup coarsely grated Monterey Jack (about 2 ounces)

Steps:

  • In a small bowl stir together the tomato, the onion, the jalapeño, the coriander, the lime juice, and salt and pepper to taste until the salsa is combined well. In a bowl whisk together the eggs, the water, and salt and pepper to taste.
  • In a 8-inch skillet, preferably non-stick, heat 1/2 tablespoon of the butter over moderately high heat until the foam subsides, pour in half the egg mixture evenly over the bottom, and cook it for 1 minute, or until it is almost set. Sprinkle half the omelet with half the bacon, half the avocado, peeled and cut into 1/2-inch pieces, and half the Monterey Jack and cook the omelet for 1 minute, or until it is set. Fold the omelet over the filing, transfer it to a plate, and keep it warm. Make another omelet in the same manner with the remaining butter, egg mixture, bacon, avocado, and Monterey Jack and serve the omelets with the salsa.

AVACADO TOMATO SALSA FRESCA
3 tomatoes, diced
1 avocado, pitted, and cut into ¼-inch dice.
3 green onions, white and light green parts,
thinly sliced
I small jalapeflo chili seeds removed and finely chopped .
2 tablespoons finely chopped fresh cilantro
2 tablespoons freshly squeezed lime juice
1/2 teaspoon kosher salt
CRABMEAT OMELET
8 ounces cook
crabmeat, picked oveR and shells removed
1 small red bell pepper, seeds and ribs removed and finely chopped
2 teaspoons finely chopped fresh chives
Juice of 1 lemon
8 eggs
1/4 cup water
2 teaspoons olive oil
Kosher salt
Freshly ground pepper
4 ounces Monterey Jack cheese
1 avocado, pitted, peeled, and sliced
4 sprigs fresh cilantro

Steps:

  • 1. To make the salsa fresca: In a glass or ceramic bowl, gently stir together the tomatoes, avocado, green onions, jalapeno, cilantro, lime juice, and salt. Cover and refrigerate for at least 1 hour to blend the flavors. 2. To make the omelet: Arrange the broiler rack about 5 inches from the heat source and preheat the broiler. In a small bowl, toss together the crabmeat, bell pepper, chives, and lemon juice. Set aside. 3. In another bowl, whisk together the eggs and water until frothy. In an ovenproof skillet over medium heat, warm 1 teaspoon of the oil. Add half of the egg mixture, stir briefly, and then let the eggs begin to set around the edges. Using a spatula, lift the edges and tilt the pan to allow the uncooked eggs to run underneath. Cook until the eggs are almost set but still moist. 4. Spread half of the crabmeat mixture over half of the eggs. Season to taste with salt and pepper. Fold the uncovered half of the eggs over the filling. Cut the cheese into 8 equal slices and arrange 4 slices on top. Place the pan in the broiler and cook until the cheese melts, about 30 seconds. Slide the omelet onto a warmed serving plate and keep warm. Make a second omelet with the remaining ingredients. 5 Cut each omelet in half and arrange on warmed plates. Garnish each omelet with a few slices of avocado and a cilantro sprig. Divide the salsa among 4 ramekins and serve with the omelets.

1 gallon ripe tomatoes, peeled and cut up
1 small head cabbage, chopped
6 medium onions, chopped
6 jalapeños, chopped
3 bell peppers, chopped
3 tablespoons ground black pepper
3 tablespoons salt
4 tablespoons prepared mustard
3 cups apple cider vinegar
2 cups sugar

Steps:

  • Combine all ingredients in large pot. Cook until well done, about 45 minutes. Use an immersion blender to preferred consistency. Put in sterile pint jars with 1/2 inch head space. Process in water bath canner for 15 minutes. Makes about 14 pints. Note: Sometimes I use my "stovetop smoker" to smoke about 1/4 of the tomatoes; just wash, cut out the stem, and stack in the smoker! This adds a little smokey flavor to the salsa.

1 can canned mild green chili works fine, if you can't find Rotel tomatoes)

1 clove garlic
1 whole jalapeno, quartered and sliced thin (use 1/2 for a milder version)
1/4 teaspoon sugar
1/4 teaspoon salt
1/4 teaspoon ground cumin
1/2 cup cilantro
1/2 lime, juiced

  • You only need to rough chop the vegetables and toss them into a food processor, which includes: Onion, jalapeno, garlic, sugar, salt, cumin, lime juice, and cilantro in a blender or food processor. Pulse just a few times. Add the tomatoes and mild green chilis (or the Rotel tomatoes, if using). Pulse until you get the salsa to the consistency you'd like-I do about 10 to 15 pulses.
