1 lb Shrimp (shelled, peeled and deveined)
3 cloves Garlic (minced)
1 pc Onion (diced)
1/2 tsp Ground black pepper
1/4 tsp Salt
1 cup Tomato sauce
1 tbsp Cooking oil
1/2 cup Sugar
1 tsp Calamansi juice (extract)

Steps:

  • Heat cooking oil in a pan.
  • Saute garlic and onion for 2 minutes or until brown.
  • Add the shrimp, then season with salt, pepper and calamansi extract. Cover and cook for 5 minutes.
  • Pour-in tomato sauce and let it boil for 10 minutes over low heat.
  • Then add sugar and simmer for another 5 minutes.
  • Serve while hot! Enjoy.

Kosher salt and freshly ground black pepper
12 ounces gluten-free short pasta, such as BioNaturae penne or fusilli
Extra-virgin olive oil, for drizzling
3 large shallots, halved and thinly sliced
2 cloves garlic, thinly sliced
One 14.5-ounce can diced tomatoes
1/2 cup coconut milk
1/2 teaspoon crushed red pepper
12 ounces (31-40 count) shrimp, peeled and deveined
5 ounces baby spinach
1/2 cup chopped basil, plus whole leaves for garnish

Steps:

  • Bring a large pot of salted water to a boil. Add the pasta and cook according to the package directions until al dente. Drain.
  • While the water comes to a boil, drizzle a little oil in a large cast-iron skillet and heat over medium heat. Add the shallots and cook, stirring occasionally, until they begin to soften, 3 to 4 minutes. Add the garlic and cook, stirring often, until golden brown and fragrant, 2 to 3 minutes. Do not let it burn.
  • Next, add the diced tomatoes with their juices, coconut milk, crushed red pepper and a sprinkle each of salt and black pepper. Stir and reduce the heat to a simmer. Let simmer until the flavors meld and the sauce thickens slightly, 5 to 7 minutes.
  • Add the shrimp, stir and cook until they turn pink and firm up, 3 to 5 minutes. Remove from the heat and stir in the spinach and chopped basil. The heat from the sauce will wilt the spinach. Taste for seasoning and add more salt and black pepper, if needed.
  • Divide the pasta among bowls. Ladle some of the sauce over each portion, garnish with basil leaves and serve right away.

2 tablespoons dry breadcrumbs
1/4 cup extra virgin olive oil, plus
1 tablespoon extra virgin olive oil
3/4 lb spaghetti
1/2 lb shelled and deveined medium shrimp, cut into 1/2-inch pieces
1/2 pint small yellow pears or 1/2 pint red grape tomatoes
2 garlic cloves, minced
1 teaspoon minced rosemary
1 teaspoon crushed red pepper flakes
salt & freshly ground black pepper

Steps:

  • In a small skillet, cook the bread crumbs in 1 tablespoon of the olive oil over moderate heat, stirring occasionally, until golden and crisp, 2 to 3 minutes. Scrape the bread crumbs onto a plate.
  • In a large pot of boiling salted water, cook the spaghetti until just barely al dente. Drain the spaghetti, reserving 1/2 cup of the cooking water.
  • Meanwhile, in a large, deep skillet, combine the remaining 1/4 cup of olive oil with the shrimp, tomatoes, garlic, rosemary and crushed red pepper. Add the spaghetti and the reserved cooking water to the skillet and season with salt and pepper. Cook over moderately high heat, tossing the pasta and lightly crushing the tomatoes, until the sauce is slightly thickened and the shrimp are cooked through, about 4 minutes.
  • Transfer the spaghetti to bowls, sprinkle the bread crumbs on top and serve.

1 cup finely chopped onion
2 cloves garlic, minced
3 large ripe tomatoes, peeled,seeded,and chopped
1/2 teaspoon dried oregano
1 tablespoon harissa (or to taste)
salt & fresh ground pepper
2 lbs large shrimp, peeled and deveined
1 tablespoon minced fresh parsley

Steps:

  • In a saucepan over medium heat, melt butter.
  • Add the onion, cover, and cook for 7 minutes or until soft but not browned.

1 lb small shrimp, shelled and deveined
3 tablespoons extra virgin olive oil
8 -10 large garlic cloves, peeled and finely minced
2 dried red chili peppers, each broken into 3 pieces
1/2 teaspoon sweet paprika (if you can get pimenton, the smoky Spanish paprika, all the better)
3 tablespoons finely minced parsley

Steps:

  • About ½ hour before cooking, season shrimp well with salt.
  • Place shrimp on paper towels; let rest.
  • When ready to cook, add olive oil to a large sauté pan over med-high heat.
  • Add in garlic and dried chili pepper pieces; sauté 2 minutes and make sure the garlic doesn't brown.
