BAGUETTE WITH PARMESAN AND ROASTED GARLIC
Once the garlic has been roasted, guests can squeeze the cloves directly onto a piece of crusty baguette and spread them like butter. Serve the baguette with shavings of Parmesan on the side.

- Preheat oven to 475 degrees. Cut 1/2 inch off the top of both heads of garlic. Place each garlic head on a separate piece of parchment, and slowly drizzle 1 tablespoon oil on top of each. Wrap parchment tightly around garlic, then wrap each packet in foil. Roast until cloves are tender and golden brown around edges, 30 to 35 minutes.
- Preheat broiler. Brush torn sides of bread with remaining oil. Sprinkle with salt, and season with pepper. Place on a baking sheet, and broil until gold, about 3 minutes.
- Using a vegetable peeler, thinly shave Parmesan. Serve baguette with roasted garlic and shaved Parmesan on the side.
ROASTED GARLIC AND TOMATO BRUSCHETTA

- Preheat oven to 350°F.Cut the top 1/3 off of the garlic head, exposing cloves. Place on foil; drizzle 1 teaspoon olive oil over the head of garlic and sprinkle with a dash of salt and pepper. Wrap with foil. Bake in preheated oven 1 hour or until tender. Let cool.Meanwhile, combine tomato, basil, 2 teaspoons olive oil, salt and pepper to taste in medium bowl; set aside.Squeeze garlic out of skins. Mix garlic, cream cheese and 1/4 cup Parmesan cheese in a small bowl; set asideArrange bread slices on baking sheet; spread garlic cream cheese mixture over one side of each slice; sprinkle with 1/4 cup cheese. Bake in preheated 350°F oven 12 minutes or until golden brown. Top with tomato mixture and remaining cheese.

Steps:
- Trim tip off garlic head to expose cloves; place head on piece of foil.
- Drizzle oil over top; wrap in foil.
- Bake in 400°F oven until cloves are softened and caramelized, about 1 hour.
- Meanwhile, toast baguette slices on baking sheet in 400°F oven until golden, about 8 minutes.
- Spread pine nuts on small baking sheet; toast alongside baguette slices until lightly browned, about 5 minutes.
- To serve, arrange baguette slices, garlic, pine nuts, goat cheese and parsley on serving plate.
- Using small fork, remove 2 roasted cloves from garlic bulb; spread on baguette slice.
- Top with goat cheese round, pine nuts and parsley.

ROASTED GARLIC BREAD
Roast a whole head of garlic and then spread it on a baguette before another bake with Parmesan and parsley.

Steps:
- Preheat the oven to 400 degrees F.
- Cut the top third off the head of garlic, exposing the tops of the garlic cloves. Put on a piece of aluminum foil, drizzle with 1 tablespoon of the oil and sprinkle with 1/4 teaspoon each salt and pepper. Wrap tightly and roast until the cloves are golden brown and very soft, about 45 minutes; cool slightly.
- Unwrap the garlic and pour any garlic-flavored oil from the foil into a small bowl; squeeze the roasted cloves into the same bowl, discarding the papery shells. Add the remaining 2 tablespoons oil and mash with a fork until smooth; season with additional salt and pepper.
- Put the bread halves on a baking sheet and evenly spread with the roasted garlic mixture. Top with the Parmesan and a few grinds of pepper. Bake until the bread is toasted and the cheese is melted, about 10 minutes. Sprinkle with parsley and cut into pieces.
RIPPED BAGUETTE WITH GARLIC-PARSLEY BUTTER
Steps:
- Melt 1 tablespoon of the butter in a small saucepan over medium-low heat. Add the garlic and cook, stirring, until it softens but does not brown, 1 to 2 minutes. Let cool. Then stir this garlic butter into the remaining butter in a small bowl. Stir in the parsley, olive oil, salt, and pepper.
- Preheat the oven to 400 degrees F.
- Rip open the baguette lengthwise, so that it opens like a book but is not ripped entirely in half. Smear the inside of the baguette with the garlic butter. Wrap the baguette in aluminum foil and bake until heated through, 10 to 12 minutes.

- Heat oven to 350ºF.
- Toss tomatoes with next 3 ingredients in large bowl; spread onto bottom of 12x8-inch baking dish. Bake 1 hour; cool. Chop tomatoes coarsely, reserving any juices.
- Brown sausage in large skillet on medium-high heat, stirring occasionally; drain, if necessary. Stir in spinach; cook on medium heat 2 to 3 min. or just until spinach is wilted, stirring occasionally. Stir in tomatoes, reserved juices and 2 Tbsp. Parmesan. Remove from heat.
- Place bread, cut sides up, on baking sheet; top with half the mozzarella. Cover with sausage mixture.
- Bake 12 min.; top with remaining mozzarella and Parmesan. Bake 8 min. or until mozzarella is melted. Sprinkle with oregano.

- Preheat the oven to broil. Slice the bread 1/2"-1" thick, depending on how you like it best. (I am partial to the long crusty baguettes and I tend to slice them fairly thin, so they will be crisp.) Combine the butter, garlic and cheese in a small bowl and mash together until well combined. Slather the butter mixture generously over the sliced bread.
- Place the coated pieces of pieces of bread onto a large baking sheet. Broil for about 2 1/2 - 3 minutes, just until the edges of the bread have browned and the topping is bubbling and lightly browned. Remove from oven and serve warm. Enjoy!
