Japanese Salad Dressing image

A perfect blend of flavors for a salad dressing that will get you rave reviews. Serve at once or refrigerate in an airtight container for up to 5 days. Shake or stir well before serving.

2 tablespoons minced fresh ginger root
⅓ cup minced onion
¼ cup minced celery
¼ cup low-sodium soy sauce
½ lime, juiced
1 tablespoon white sugar
1 tablespoon ketchup
¼ teaspoon ground black pepper
½ cup vegetable oil

Steps:

  • Pulse ginger, onion, and celery in a food processor until thoroughly combined. Scrape down sides of food processor with a spatula. Add soy sauce, lime juice, sugar, ketchup, and pepper; process until combined, 10 to 20 seconds. Stream oil in a thin stream into the mixture with the processor running; process until well blended.

1/4 cup soy sauce
1/4 cup rice vinegar
1/4 cup olive oil
1 tablespoon sesame oil
2 tablespoons Dijon mustard
2 tablespoons minced fresh gingerroot
1/2 teaspoon crushed red pepper flakes

Steps:

  • Place all ingredients in a jar with a tight-fitting lid; shake well. Refrigerate until serving. Shake dressing again just before serving.

½ cup peanut oil
⅓ cup rice wine vinegar
2 tablespoons water
2 tablespoons minced fresh ginger root
2 tablespoons minced celery
2 tablespoons ketchup
4 teaspoons soy sauce
2 teaspoons white sugar
2 teaspoons lemon juice
½ teaspoon minced garlic
½ teaspoon salt
¼ teaspoon ground black pepper

Steps:

  • In a blender, combine the minced onion, peanut oil, rice vinegar, water, ginger, celery, ketchup, soy sauce, sugar, lemon juice, garlic, salt and pepper . Blend on high speed for about 30 seconds or until all of the ingredients are well-pureed.

1/2 cup rice vinegar
1/2-2/3 cup parsley
1 green onion, coursely chopped
2 teaspoons ginger, root peeled and grated
2 1/2 tablespoons brown sugar
1/8 teaspoon salt
1 cup oil (use all canola or up to half olive oil)

Steps:

  • Put all ingredients in a blender, blend on high 1-2 minutes, enjoy this frothy green dressing which will keep up to 3 weeks in the fridge.

This goes great with salad ingredients that include romaine, slivered cabbage, green onions, cucumbers or any of the bitter asian greens that many grocers and farmer's markets now carry.
