WATERMELON-CUCUMBER MARGARITAS
Very refreshing summer drink. Also yummy as a Mojito (sub Rum for the tequila) or non-alcoholic (sub club soda for alcohol). I'm not sure where I found this recipe, maybe Gourmet or Bon Appetit.

Steps:
- Place first three ingredients in a medium bowl. Press firmly on solids with a muddler or the back of wooden spoon until mashed.
- Mix in tequila, lime juice, Simple Syrup, and Cointreau, then 1 cup ice.
- Stir to blend well.
- Divide remaining ice between two tall glasses.
- Strain Margarita mixture into glasses.
- Garnish with watermelon skewers and mint sprigs.
- Note: To make your own Simple Syrup, stir together one cup sugar and one cup water in a saucepan over medium heat. Bring to a boil, then reduce heat and simmer about three minutes, until sugar is dissolved. Cool before using.

Steps:
- Place first 3 ingredients in medium bowl. Press firmly on solidswith muddler or back of wooden spoon until mashed. Mix intequila, lime juice, Simple Syrup , and Cointreau, then 1 cup ice.Stir to blend well. Strain into large glass measuring cup. Divideremaining ice between 2 tall glasses. Pour Margarita mixtureover. Garnish with watermelon skewers and mint sprigs.
FROZEN WATERMELON MARGARITAS
Steps:
- Place watermelon in a food processor and process until smooth. Pour the pureed watermelon into 2 empty ice cube trays and freeze until firm, at least 4 hours. Place 8 martini glasses in the freezer to chill.
- Place 2 cups of the watermelon ice cubes and the remaining ingredients in a blender and blend until smooth. Pour into 4 glasses and repeat with the remaining ingredients. Garnish each glass with a watermelon wedge.
CUCUMBER WATERMELON MARGARITAS
Steps:
- Liquefy the watermelon and cucumber in a blender and strain through a fine mesh sieve into a pitcher. Refrigerate until ready to use.
- Mix the lime zest and salt on a small plate and reserve.
- When ready to serve:
- Mix 1/2 cup watermelon-cucumber juice with lime juice, agave and tequila in a cocktail shaker filled with ice; shake well to chill. Rub the rim of a martini glass with a lime wedge and dip it into the lime zest mixture. Pour the margarita into the salt-rimmed martini glass and enjoy!

WATERMELON-BASIL MARGARITAS

Steps:
- Place 24 watermelon cubes on a baking sheet lined with parchment. Cover, and freeze at least 1 hour (up to 2 days).
- Puree remaining watermelon and the sugar in a blender until smooth. Pass through a sieve lined with cheesecloth into a bowl. (You should have 3 cups.)
- Place tequila and basil in a glass pitcher, and crush with a wooden spoon. Stir in watermelon juice and triple sec.
- Place watermelon cubes in glasses. Using a cocktail shaker, mix 3/4 cup margarita with 1 cup ice. Strain into a glass. Repeat. Serve garnished with basil.

- Cut 1 lime into 12 wedges; reserve for garnishes. If desired, coat the rim of each glass with sugar: Cut remaining lime into wedges. Using these wedges, moisten the rims of 12 margarita or cocktail glasses. Sprinkle sugar on a plate; hold each glass upside down and dip rim into sugar. Discard remaining sugar., Place half the watermelon in a blender; cover and process until pureed (this should yield 3 cups). Mixing cocktails may seem intimidating, but it's actually quite intuitive once you understand how to balance the alcohol, sweetness and acidity. In "3-Ingredient Cocktails" (Ten Speed Press, 2017), Robert Simonson presents the formula for a perfect margarita: 1½ ounces tequila, 1 ounce Cointreau and 3/4 ounce lime juice, shaken and served. Even easier to memorize, this version uses 6 ounces fresh watermelon juice - a sweet but subtle nod to summer - and 2 ounces each tequila, Cointreau and lime juice. Be sure to taste and add more watermelon juice if your margarita is too boozy, and extra lime juice or even a pinch of salt if it's too sweet.

- Prepare the salted rim, if using: In a small shallow bowl or plate, combine the sea salt and Tajín. Set aside.
- In a shaker filled with ice, combine the watermelon juice, tequila, Cointreau (if using), lime juice and jalapeño (if using). Shake to combine. (Note: The watermelon flavor shines brighter without the Cointreau, but the liqueur takes the drink into more traditional margarita territory.
