PASTA WITH VODKA SAUCE AND SHRIMP

It pays to perfect the classics. Pasta with vodka sauce is an easy dish that is both simple and sumptuous. Adding quick shrimp scampi elevates it to a perfect meal for a date night.

1 small to medium onion
EVOO
4 tablespoons butter
3 large cloves garlic
Salt
1 teaspoon Calabrian chili paste OR 1/2 teaspoon crushed red pepper flakes
1 cup vodka
1 can (28 ounces) Italian crushed tomatoes
A few leaves of basil, torn, plus a few to serve
1 pound penne rigate pasta
1 pound large raw shrimp, deveined and tails removed
1 lemon
1/4 cup Pernod or white vermouth
A handful flat-leaf parsley, finely chopped
1 cup heavy cream
A handful freshly grated Parmigiano-Reggiano cheese, plus some to pass at table, optional ( -- and controversial to some Italians)

Steps:

  • Place a large pot of water on the stove for pasta. Also put up a deep skillet for sauce and a nonstick skillet for shrimp.
  • Gather your ingredients.
  • Peel and finely chop the onion.
  • In a large deep skillet, heat EVOO, a turn of the pan. Add 2 tablespoons butter and when it foams add the onions. Stir to soften while you peel and chop the garlic. Add 2 cloves of chopped garlic to onions and season with salt. Stir in 1/2 teaspoon of chili paste or about 1/4 teaspoon of red pepper flakes. Add vodka and reduce by half, 2 to 3 minutes. Add tomatoes and tear in a few leaves of basil. Reduce heat and simmer sauce, 10 minutes.
  • Season pasta water with a fat tablespoon of salt, add penne and cook 1 minute less than package directions, about 8 minutes. Have a mug or measuring cup on hand.
  • Add shrimp to a medium bowl and toss with remaining garlic. Thinly slice a lemon and toss with shrimp.
  • In the second skillet, heat EVOO, 2 turns of the pan, over medium-high and melt in 2 tablespoons butter. Add the shrimp mixture and toss 2 to 3 minutes; shrimp should be pink and opaque. Add a splash of Pernod or vermouth, the remaining red pepper flakes, a little salt and parsley; toss. Turn off heat.
  • Add cream to sauce and stir. Add shrimp to sauce, bring back to a bubble and turn off heat.
  • Reserve about 1/2 cup of starchy salty water and drain pasta or transfer to sauce with a spider. Toss pasta with sauce and grated cheese, using water to loosen as necessary.
  • Transfer pasta to large serving bowl or to individual shallow bowls to serve.

1 quart Simple Tomato Sauce, recipe follows, or store-bought marinara sauce, blended until smooth
1 cup vodka
1/2 cup heavy cream, at room temperature
1/2 cup grated Parmesan
1 pound penne
1/2 cup extra-virgin olive oil
1 small onion, chopped
2 cloves garlic, chopped
1 stalk celery, chopped
1 carrot, chopped
2 (32-ounce) cans crushed tomatoes
4 to 6 basil leaves
2 dried bay leaves
Sea salt and freshly ground black pepper

4 tablespoons unsalted butter, optional

Steps:

  • Simmer the tomato sauce and vodka in a heavy large skillet over low heat until the mixture reduces by 1/4, stirring often, about 20 minutes. Stir the cream into the tomato and vodka sauce. Simmer over low heat until the sauce is heated through. Stir in the Parmesan cheese until melted and well blended.
  • Meanwhile, cook the pasta in a large pot of boiling salted water until al dente, tender but still firm to the bite, stirring occasionally, about 8 minutes. Drain the pasta and transfer it to the pan with the sauce, and toss to coat.
  • In a large casserole pot, heat oil over medium-high heat. Add onion and garlic and saute until soft and translucent, about 2 minutes. Add celery and carrot and season with salt and pepper. Saute until all the vegetables are soft, about 5 minutes. Add tomatoes, basil, and bay leaves and reduce the heat to low. Cover the pot and simmer for 1 hour or until thick. Remove bay leaves and taste for seasoning. If sauce tastes too acidic, add unsalted butter, 1 tablespoon at a time, to round out the flavor.
  • Pour half the tomato sauce into the bowl of a food processor. Process until smooth. Continue with remaining tomato sauce. If not using all the sauce, allow it to cool completely and then pour 1 to 2 cup portions into plastic freezer bags. Freeze for up to 6 months.

1/4 cup chopped basil or 2 teaspoons dried
1/2 cup vodka
6 tablespoons whipping cream
1 pound uncooked medium shrimp, peeled, deveined
1 pound penne pasta
fresh basil

Steps:

  • Melt butter in heavy large skillet over medium heat. Add tomatoes with their juices and bring to boil, crushing tomatoes with back of spoon. Reduce heat, add chopped basil, simmer 15 minutes. Season to taste with salt and pepper. Add vodka and cream adn boil 3 minutes. Add shrim and simmer until cooked through, turning occasionally, about 3 minutes. Meanwhile cook pasta in large pot of boiling salted water until al dente. Drain. Add pasta to sauce, stir. Divide among bowls and garnish with basil.

1 (28 ounce) can diced tomatoes
1/2 cup vodka
2 tablespoons olive oil
1 onion, chopped fine
1/4 cup sun-dried tomato packed in oil, rinsed, patted dry and minced
2 garlic cloves, minced
1/4-1/2 teaspoon italian seasoning
1/4 teaspoon red pepper flakes
salt and pepper
1/2 cup heavy cream
1 lb penne or 1 lb fusilli

Steps:

  • Bring 4 quarts water to boil in a large pot. Meanwhile, process half of tomatoes in food processor until smooth. Transfer to bowl. Stir in vodka and remaining tomatoes.
  • Heat oil in large skillet over medium heat until shimmering. Add onion and sun-dried tomatoes and cook until onion is softened, about 3 minutes. Add garlic, red pepper flakes and italian seasoning and cook until fragrant, about 30 seconds. Stir in tomato-vodka mixture and 1/2 teaspoon salt and simmer until slightly thickened, 8 to 10 minutes. Add cream and cook until heated through, about 1 minute.
  • Meanwhile, add 1 tablespoon salt and pasta to boiling water and cook until al dente. Reserve 1/2 cup cooking water, drain pasta, and return to pot. Add sauce and toss to combine, adding reserved pasta water as needed. Season with salt and pepper. Serve.

  • Penne with Grilled Vegetables and Spicy Tomato Sauce;In place of the shrimp, use grilled or sautéed vegetables such as mushrooms, zucchini, eggplant, or green beans, cut into bite-size pieces. Toss the vegetables into the pasta with the sauce.

2 cups heavy cream
1 cup milk
3 tablespoons tomato paste

1 lb cooked shrimp

1 garlic clove, minced
1 (8 ounce) can tomato sauce
1/2 cup heavy cream or 1/2 cup evaporated milk
2 tablespoons vodka
1/4 teaspoon dried basil
1/4 teaspoon dried oregano
1/2 lb cooked medium shrimp (optional)
1/4 cup grated parmesan cheese
8 ounces penne rigate, cooked and drained (3-1/3 cups)

Steps:

  • In a large skillet, heat corn oil over medium-low heat.
  • Add garlic, stirring constantly, cook one minute.
  • Stir in tomato sauce, cream, vodka, basil and oregano.
  • Cook 8 minutes.
  • Stir in shrimp (optional) and Parmesan cheese; heat through.
  • Toss with penne.

  • Bring a pot of water to a boil and cook the penne about three minutes less than what’s listed on the package. Drain the pasta once it’s cooked reserving 1/4 cup of the starchy pasta water.
  • While the pasta cooks make the sauce. In a 10-inch skillet, bring the marinara sauce to a simmer. Add the red pepper flakes and vodka. Simmer the sauce for five minutes or until it reduces a bit.
  • Add the cream and stir to combine it with the marinara. Bring the sauce back to a simmer and add the shrimp. Stir the shrimp into the sauce and cook them for three minutes or so before you add the pasta.
  • Add the penne to the sauce and stir to coat it in the sauce. Finish cooking the pasta in the sauce for three or four minutes, stirring frequently. If needed, add a splash of the starchy pasta water to thin the sauce. Once the pasta is cooked and the shrimp are opaque divide the pasta between two bowls, garnish with parsley and serve.
