Jamaican Jerk Seasoning may seem exotic, but it's comprised of common spices you probably have in your kitchen cabinet. Tweak it to your personal taste - this homemade Jamaican Jerk seasoning is perfect for chicken, pork or beef.

1 tbsp Onion Powder
1 tbsp Garlic Powder
2 tsp Cayenne Pepper
2 tsp Paprika
2 tsp Salt
1 tsp All Spice
1 tsp Fresh Cracked Ground Pepper
1/2 tsp Red Pepper Flakes
1/2 tsp Cumin
1/2 tsp Nutmeg
1/2 tsp Cinnamon
1 tbsp Brown Sugar
1 tsp Dried Thyme
1 Tbsp Dried Parsley

Steps:

  • Mix together all the spices in a small bowl.
  • Transfer to an airtight container.

DRY JERK SEASONING

This seasoning is excellent for fish, vegetables, anything! It is not as strong as a rub or marinade. From Jerk from Jamaica.

1 tablespoon onion flakes
1 tablespoon onion powder
2 teaspoons ground thyme
2 teaspoons salt
1 teaspoon allspice
1/4 teaspoon ground nutmeg
1/4 teaspoon ground cinnamon
2 teaspoons sugar
1 teaspoon coarsley ground black pepper
1 teaspoon cayenne pepper
2 teaspoons dried chives

Steps:

  • Mix together all ingredients.
  • Store the leftover seasoning in a tightly closed glass jar. It will keep for over a month.

1 tablespoon allspice
1/4 teaspoon ground cinnamon
1/4 cup light brown sugar
1 teaspoon red pepper flakes
1/4 teaspoon ground cloves
1/4 teaspoon ground cumin
2 teaspoons salt
1 teaspoon freshly ground black pepper
2 tablespoons canola oil

Steps:

  • In a medium bowl, combine all ingredients with 2 tablespoons of canola oil.

I got this from her "Crazy Sista Cooking" book. She is Jimmy Buffett's sister. I know there a gazillion jerk recipes on here but I like this one because it's so simple, I always have the ingredients on hand, you only need 2 measuring spoons, and it keeps well. I usually leave out the orange and lemon peel granules and it's still great. I've baked, grilled and kabobed (I think I just made a new word) chicken with this. This is great served with a cucumber sauce too.

1 teaspoon white pepper
1 teaspoon dried onion flakes
1 teaspoon granulated onion or 1 teaspoon onion powder
1 teaspoon cayenne pepper
1 teaspoon ground allspice
1 teaspoon black pepper
1 teaspoon ground thyme (I like dried thyme)
1/2 teaspoon ground cinnamon
1 teaspoon garlic powder
1 teaspoon dried red pepper flakes
2 teaspoons kosher salt
1 pinch orange peel, granules
1 pinch lemon peel, granules

Steps:

  • Combine all ingredients. Store in air tight container.

Number Of Ingredients 6

2 tbsp ground cinnamon or 2 cinnamon sticks
2 tbsp black peppercorn
1 tbsp dried thyme
2 tsp allspice berries
1 ½ tsp cayenne pepper
½ nutmeg , grated

Steps:

  • Toast the whole spices in a small pan until they are aromatic and have turned a shade or two darker. Don't be tempted to skip this stage, as it really enhances the flavours.
  • Tip into a spice grinder (or use a pestle and mortar), then add the ready-ground spices and dried herbs if required, and crush to a fine powder. Store in a sealed jar for up to six months.
