3 large potatoes (russets, yukon gold or maris piper are best)
3 tbsp sour cream
1.7 ounces whipping cream (double cream) ((50 ml))
2.6 ounces salted butter ((75g))
3.5 ounces creamy blue cheese like Danish Blue ((100g))
3 strips bacon
salt and pepper to taste

Steps:

  • Peel the potatoes and cut into chunks. Put into a pot and cover with cold water. Put on high on the hob and bring to the boil. Boil for around 20 minutes until the potatoes are soft.
  • While the potatoes are boiling, cook the bacon - either in a frying pan or oven. Once cooked, put to one side to cool and crisp.
  • When the potatoes are cooked, drain the water and return to the pot. If using a potato rice, pass the potatoes through this and into the saucepan.
  • Add the sour cream, whipping cream, butter and a generous pinch of salt and pepper to the potatoes and mash (or mix until combined if you have used a ricer). Keep going until you have a smooth consistency.
  • Break the cheese into small pieces and add to the potatoes, then break the bacon into small pieces and add in.
  • Combine well and serve.

3/4 cup heavy cream
4 ounces blue cheese, crumbled

Steps:

  • Place potatoes in a large stockpot and cover with cold water. Add salt and bring to a boil over high heat. Reduce to medium and cook until fork tender. Drain well. Add back to the pot that they were cooked in.
  • Meanwhile, heat butter and cream until hot. Add the crumbled blue cheese and stir together. Add sauce to potatoes and mash until smooth. Season with salt and pepper.

4 slices bacon, chopped
1 stick salted butter, cut into pieces, at room temperature
2/3 to 3/4 cup sour cream
2 tablespoons chopped fresh chives
Shredded cheddar cheese, for topping

Steps:

  • Put the potatoes in a large saucepan and cover with cold water by 1 inch. Season generously with salt and bring to a boil. Reduce the heat to medium and simmer until very tender, about 15 minutes.
  • Meanwhile, cook the bacon in a large skillet over medium heat until crisp, 7 to 8 minutes; transfer to a paper towel-lined plate.
  • Drain the potatoes and return to the saucepan over low heat; cook until any remaining water evaporates, about 2 minutes. Add the butter, then gradually mash in the sour cream with a potato masher. Stir in the bacon and chives, reserving 1 tablespoon of each. Transfer to a serving dish; top with cheddar and the remaining bacon and chives.

2 small shallots, peeled and quartered
1 garlic clove, peeled and halved
6 sun-dried tomatoes, chopped
6 brine-cured black olives, such as kalamata, pitted
3 tablespoons balsamic vinegar
1 tablespoon fresh thyme leaves or 1 tablespoon chopped fresh basil
salt & fresh ground pepper
3/4 cup olive oil

Steps:

  • With food processor running, drop shallots and garlic through feed tube and process until finely chopped.
  • Stop machine; add sun-dried tomatoes, olives, vinegar, thyme, salt and pepper; process until finely minced.
  • With machine running, slowly pour olive oil through feed tube and process until smooth.
  • Adjust seasonings and use immediately or cover and refrigerate.

3 lbs russet potatoes, cut into 2-inch chunks (about 6, peeled if desired)
2 -3 teaspoons kosher salt
1/4 teaspoon black pepper, to taste
3 ounces bacon, about 6 slices
3/4 cup whole milk
8 tablespoons unsalted butter, cut up
4 ounces blue cheese, crumbled

Steps:

  • Place the potatoes in a large pot and add 2 teaspoons salt and enough cold water to cover. Bring to a boil. Reduce heat and simmer until the potatoes are very tender, 20 to 25 minutes. Drain and return the potatoes to the pot.
  • Meanwhile, in a large skillet, cook the bacon over medium heat until crisp, 5 to 8 minutes. Transfer to a paper towel-lined plate. Let cool, then crumble or chop.
  • Combine milk, butter, ½ teaspoon salt. Warm in the microwave for 45 seconds. Pour over potatoes, add ¼ teaspoon pepper to the potatoes and mash to the desired consistency.
  • Fold in the bacon and top with the blue cheese.

1/2 cup chopped sun-dried tomatoes (not packed in oil; about 2 ounces)
1/2 cup (packed) grated Parmesan cheese (about 1 1/2 ounces)
2 tablespoons olive oil
3 pounds russet potatoes, peeled, cut into 1-inch pieces
1/2 cup whole milk
1/2 cup half and half
3 tablespoons butter
1 teaspoon salt
1/4 teaspoon ground nutmeg
1/4 teaspoon ground black pepper

Steps:

  • Place sun-dried tomatoes in small bowl. Pour enough hot water over to cover tomatoes; let stand until softened, about 5 minutes. Drain. Return tomatoes to bowl; stir in 1/4 cup Parmesan and oil.
  • Cook potatoes in large pot of boiling salted water until tender, about 20 minutes. Drain. Return potatoes to pot. Stir over medium heat until excess moisture evaporates, about 1 minute. Remove from heat. Add milk, half and half, 2 tablespoons butter, salt, nutmeg and pepper to potatoes. Mash until smooth.
  • Butter 8x8x2-inch glass baking dish. Spread half of mashed potatoes in prepared dish. Sprinkle sun-dried tomato mixture over. Spread remaining mashed potatoes over. Sprinkle with remaining 1/4 cup Parmesan. Dot with remaining 1 tablespoon butter. (Can be prepared 1 day ahead. Cover and refrigerate.)
  • Preheat oven to 400°F. Bake potatoes uncovered until heated through and top is golden brown, about 35 minutes (or up to 45 minutes if refrigerated).
