LAVENDER LEMONADE WITH HONEY
This home-brewed lavender lemonade with honey hits the spot with a distinctive, refreshing taste and plenty of Vitamin C.

Steps:
- Bring 2 1/2 cups purified water to boil in a medium pan
- Remove from heat and add honey, stirring to dissolve.
- Add the lavender to the honey water, cover, and let steep at least 20 minutes or up to several hours, to taste. You can put the lavender into a tea infuser or nut milk bag for easier clean up.
- Strain mixture and compost/discard lavender
- Pour infusion into a glass pitcher
- Add lemon juice and approximately another 2 1/2 cups of cold water, to taste. Stir well.
- Refrigerate until ready to use, or pour into tall glasses half-filled with ice, then garnish with lavender sprigs.
- Sit on the porch a spell and enjoy!

LAVENDER LEMONADE WITH CAVA
Steps:
- Put the sugar and 1 cup of water in a small pot and bring just to a simmer, stirring occasionally to dissolve the sugar. Remove from the heat, stir in the dried lavender, cover and let steep for at least 20 minutes.
- Pour the lavender syrup through a fine-mesh strainer. The syrup can be made up to 3 days in advance and kept cold in the refrigerator.
- In a large pitcher, add the lemon juice, lavender syrup, 2 cups of water and ice and stir to combine. Taste, adding more water to reach the desired sweetness.
- Pour the lavender lemonade into individual glasses with ice, top with chilled cava and garnish with lemon slices. Enjoy!

HONEY-LAVENDER LEMONADE

- Combine the honey, lavender buds and 3 cups water in a saucepan over medium heat. Bring just to a boil, stirring to dissolve the honey. Set aside and allow to cool completely, then cover and refrigerate overnight.
- Add the lavender sprigs and the lemon juice to a large measuring cup and muddle to release the lavender oils. Strain the honey-lavender water and combine it with the muddled lemon juice. Let sit for 15 minutes before removing the lavender sprigs. Divide the lemonade between two 2-cup to-go containers. Refrigerate until ready to serve.
- Divide the vodka, if using, between the containers. Add some frozen grapes to keep the drink cold! Serve.

- Over medium heat, combine two cups of water and sugar, bringing to a boil until sugar is dissolved. Turn off of the heat and stir in honey and lavender.
- Allow mixture to steep for 2 hours (less if you want less of a lavender taste). Strain the liquid, pressing the lavender down to make sure you get all of those juices into your mixture!
- In a large pitcher, combine freshly squeezed lemon juice, lavender mixture and water.
- Feel free to add a couple drops of blue or purple food coloring if you want more color than the lavender provides. Makes the lemonade especially cute for those brunches! Serve over ice.

- Warm the honey in a small saucepan over low heat. Stir in the lavender. Remove from the heat, cover, and let stand at room temperature for 24 hours.
- Warm the honey again over low heat until it is liquid enough to pour freely. Strain through a wire sieve (I place a clean paper coffee filter inside the mesh strainer), into a clean jar. Cool and cover.
- Store in the refrigerator for up to 6 months. Serve at room temperature.

- Using a vegetable peeler, remove zest from two lemons, leaving white pith behind. Squeeze all of the lemons for 2/3 cup juice and set aside. In a large pot bring 5 1/2 cups of water and zest to a boil over high heat. Stir in the lavender. Partially cover the pot, lower the heat, and simmer for 10 minutes.
- Meanwhile, place a large strainer lined with cheesecloth or a damp paper towel over another pot or heat-proof bowl. Strain tea, pressing on herbs to extract all liquid. Stir in honey until dissolved. Stir in lemon juice. Let cool completely, about 45 minutes. Fill four tall glasses with ice. Pour tea over ice and serve immediately.
