12 thick slices white bread, cut into 1 inch cubes
¼ cup crumbled cooked bacon
2 cups shredded Cheddar cheese
1 ½ cups chopped fresh mushrooms
12 eggs
2 ½ cups half-and-half
1 teaspoon Dijon mustard

Steps:

  • Toss cubed bread with bacon, cheese, and mushrooms, and pour into a 9x13 inch baking dish. Whisk together eggs, half-and-half, and mustard until smooth, then pour evenly over cubed bread. Cover dish with plastic wrap, and refrigerate overnight.
  • Preheat oven to 350 degrees F (175 degrees C).
  • Remove plastic wrap from the baking dish, and bake strata in preheated oven until the top is golden brown, and the eggs are set, about 1 hour. Let stand for 10 minutes before serving.

4 slices bread
4 slices bacon
2 eggs
½ cup maple syrup

Steps:

  • Dip bread slices in beaten eggs. Heat a lightly oiled griddle or frying pan over medium high heat. Cook until browned on both sides. Set aside but keep warm.
  • Place bacon in a large, deep skillet. Cook over medium high heat until evenly brown. Drain and set aside. Reserve 1 tablespoon of bacon grease in pan and fry remaining two eggs.
  • Place one piece of French toast on each of two plates. Place the fried eggs on top of the bread, top the eggs with strips of bacon. Cover with the remaining pieces of French toast. Following that by pouring on the syrup.

6 ounces cream cheese, softened
1 teaspoon dried parsley
3/4 teaspoon seasoning salt
1/4 teaspoon pepper
2/3 cup sharp cheddar cheese, shredded
2 tablespoons butter
5 eggs, beaten
1 (7 1/3 ounce) can refrigerated jumbo flakey biscuits
8 slices bacon, cooked and crumbled
1 egg white, slightly beaten
1 -2 teaspoon sesame seeds (optional)

Steps:

  • Preheat oven to 375.
  • Stir together the first 4 ingredients in a medium bowl until blended; stir in cheese.
  • Melt butter in a 9 inch skillet over medium heat; add eggs and cook without stirring until eggs begin to set on bottom. Draw spatula across bottom of skillet to form large curds. Continue cooking until eggs are slightly thickened but still moist. (Do NOT stir constantly).
  • Remove from heat and let cool.
  • Flatten each bisquit into about a 5 inch circle.
  • Spread cream cheese mixture evenly over the tops of dough circles, leaving a 1/2 inch border around the edges.
  • Top evenly with eggs and bacon.
  • Fold dough circles in half over mixture, pinching edges to seal.
  • Place 2 inches apart in a 15 x 10 jelly roll pan coated with pam.
  • Brush top of doughs evenly with egg white.
  • Press sealed edges with the tines of a fork.
  • Sprinkle with sesame seeds.
  • Bake at 375 14-16 minutes until golden brown.
  • Remove empanadas with a spatula onto a wire rack.
  • Serve Warm.
  • Leftovers store in a ziplock bag after completely cooled, then place in the refridgerator.
  • To reheat wrap in paper towel and microwave at 50% power for 1-2 minutes.

2 frozen turnover dough (empanada) wrappers*, thawed
2 ounces sharp Cheddar cheese
3 large eggs
3 scallions
1 tablespoon unsalted butter
2 slices Canadian bacon
*available at Latino markets and many supermarkets

Steps:

  • Preheat oven to 425°F. and butter a baking pan.
  • On a lightly floured surface with a rolling pin roll out each empanada wrapper into a 7-inch round. Finely grate Cheddar and in a bowl whisk together with eggs and salt and pepper to taste. Chop scallions. In a nonstick skillet heat 1 teaspoon butter over moderately high heat until foam subsides and sauté bacon until golden, about 1 minute on each side. Transfer bacon to a plate and add remaining 2 teaspoons butter to skillet. Heat butter until foam subsides and sauté scallions 15 seconds. Add egg mixture and cook, stirring constantly, until eggs just begin to set but are still very loose, about 30 seconds. Arrange 1 piece bacon 1/4 inch from edge of 1 empanada wrapper and spoon half of egg mixture on top of bacon. Fold empanada wrapper over filling to create a half-moon shape and seal by pressing edges together firmly with a fork. Make another empanada in same manner.
  • Transfer empanadas to baking pan and cut a few small slits in top of each empanada to create steam vents. Bake empanadas in middle of oven until golden, about 10 minutes.

  • To a pot with 2 cups (480 ml) of boiling water add the ramen seasoning packet and a tablespoon of butter. Stir until the butter melts and then add the ramen noodle cube and cook until the noodles become tender, 2 minutes. Pour the ramen into a bowl.
  • Top the prepared ramen with the fried egg, bacon, and scallions and season with salt and pepper.

3 cloves garlic, lightly crushed
3 tablespoons olive oil
1/2 pound bacon, chopped
1/2 cup white wine, or water
2 large eggs
1/2 cup freshly grated Parmesan, plus more for serving
1/4 cup chopped flat-leaf parsley
1/4 teaspoon freshly ground pepper, or to taste
1 pound linguine (or any other variety pasta)
Crushed hot red-pepper flakes, for serving

Steps:

  • Bring a large pot of water to a boil. Add salt and pasta, and cook until pasta is al dente, following manufacturer's instructions.
  • Meanwhile, heat oil in medium skillet. Add garlic, and cook until it begins to sizzle. Remove garlic from the oil, and discard. Add bacon, and cook until crisp, about 4 minutes. Drain off most of the fat. Add wine or water, and cook until slightly reduced, about 2 minutes. Set aside.
  • In large pasta bowl, combine eggs, cheese, parsley, and black pepper.
  • Drain cooked pasta, and immediately add to egg mixture. Toss until well coated. Add bacon, and toss to combine. Serve immediately, sprinkled with red-pepper flakes and additional Parmesan.

12 lasagna noodles, cooked and drained
12 hard-boiled large eggs, sliced
2 cups shredded Swiss cheese
1/3 cup grated Parmesan cheese
2 tablespoons minced fresh parsley, optional

Steps:

  • Preheat oven to 350°. In a large skillet, cook bacon until crisp. Remove with a slotted spoon to paper towels. Drain, reserving 1/3 cup drippings. In the drippings, saute onion until tender. Stir in the flour, salt and pepper until blended. Gradually stir in milk. Bring to a boil; cook and stir for 2 minutes or until thickened. Remove from the heat. , Spread 1/2 cup sauce in a greased 13x9-in. baking dish. Layer with 4 noodles and a third each of the eggs, bacon, Swiss cheese and remaining sauce. Repeat layers twice. Steps:

  • Take the eggs out of the refrigerator. Place a rack in the center of the oven, and heat the oven to 450 degrees.
  • Arrange the bacon on a rimmed baking sheet in a single layer, spacing evenly. Roast in the center of the oven until the fat renders and the bacon curls, about 8 minutes. Very thin slices will cook more quickly; thick-cut ones will take longer.
  • Take the pan out of the oven and quickly flip the bacon and move to one side of the pan. Crack the eggs onto the other side, then immediately return the pan to the oven and roast until the whites are just set, the yolks are still runny and the bacon is brown and crisp, 2 to 5 minutes longer. If you prefer medium or hard egg yolks or extra-crisp bacon, cook a few minutes more, but take out the bacon before it burns.
  • Using a spatula, cut the eggs apart. Slide them off the pan and onto plates right away to stop the yolks from solidifying. Season to taste with salt and pepper. Drain the bacon on paper towels, then add to the plate along with toast. Serve immediately.
