Rory's Most Wonderful Corn Bread image

This is a very sweet, delicious, cake - like cornbread that incorporates broccoli and cottage cheese to produce a heavenly tasting cornbread. I have tried this recipe on a number of anti-broccoli children and adults and they all end up begging me to make more.

1 (8 ounce) package dry cornbread mix
2 eggs
½ cup cooked chopped broccoli
½ cup chopped onion
½ cup cottage cheese
⅓ cup butter, melted

Steps:

  • Preheat oven to 350 degrees (175 degrees C). Grease one 8x8 inch square baking pan.
  • Combine the eggs, cornbread mix, cottage cheese, broccoli, chopped onion, and melted butter or margarine and mix well. Pour batter into the prepared pan.
  • Bake at 350 degrees F (175 degrees C) for 40 minutes.

Maybe it's because I have my grandmother's cast iron skillet that makes this SO good! I Love cornbread and my fellow of 10 years LOVES this recipe. I got it off Allrecipes but have done a few changes.. Enjoy!

2/3 cup sugar
2 eggs, room temperature
1/4 lb unsalted butter, softened
1/2 teaspoon baking soda
2 slices bacon
1 cup yellow cornmeal
1 cup flour
3/4 cup buttermilk
1/4 cup heavy cream
1/2 teaspoon salt

Steps:

  • Preheat oven to 375°F.
  • Rub cast iron skillet with raw bacon.
  • Melt butter in skillet over low heat.
  • In large bowl add eggs and sugar, mix well.
  • Add buttermilk, cream and baking soda; mix together.
  • Add cornmeal, flour, and salt; mix well.
  • Pour batter into prepared pan.
  • Bake 30-40 minutes.
  • Remove from pan and enjoy!

This is more like a cake it's so moist and light, you may want to add in some green chilies or shredded cheddar cheese --- for a less sweeter taste reduce sugar to 1/2 cup --- this is very good!

1 1/2 cups all-purpose flour
3/4 cup sugar
1/2 cup yellow cornmeal
1 tablespoon baking powder
1/2 teaspoon salt
1 pinch cayenne pepper (optional add in for heat)
1 1/4 cups half-and-half cream or 1 1/4 cups milk
2 large eggs, slightly beaten
1/3 cup oil (use vegetable or olive oil)
4 tablespoons melted butter
1 (10 ounce) can corn kernels, well drained

Steps:

  • Set oven to 350 degrees F.
  • Set oven rack to second-lowest position.
  • Butter an 8 x 8-inch square baking dish.
  • In a large bowl mix together flour with sugar, cornmeal, baking powder and salt.
  • In another bowl whisk together half and half cream or milk, eggs, oil and melted butter; add to the flour mixture and stir with a wooden spoon until just combined.
  • Mix in canned corn niblets.
  • Transfer to baking dish.
  • Bake for 35 minutes or until the the cake tests done.
