Steps:
- Tear 500g white or wholemeal bread into a large mixing bowl and add 500g mixed dried fruit, 85g mixed peel and 1 ½ tbsp mixed spice.
- Pour in 600ml milk, then stir or scrunch through your fingers to mix everything well and completely break up the bread.
- Add 2 beaten large eggs, 140g light muscovado sugar and zest of 1 lemon, if using. Stir well, then set aside for 15 mins to soak.
- Heat oven to 180C/160C fan/gas 4. Butter and line the base of a 20cm non-stick square cake tin (not one with a loose base).
- Stir the melted butter into the pudding mixture, tip into the tin, then scatter with demerara.
- Bake for 1½ hrs until firm and golden, covering with foil if it starts to brown too much. Turn out of the tin and strip off the paper. Cut into squares and serve warm.

- Preheat oven to 350 degrees F.
- Put butter in small bowl.
- Scald milk (heat till just below boiling) and pour over butter, stir to mix well.
- Beat eggs.
- Gradually stir into milk mixture. Stir in sugar, salt, and cinnamon.
- Put bread cubes and raisins in a 1-1/2 quart baking dish; pour in milk mixture. Stir gently to moisten the bread evenly.
- Set in a larger pan; add hot water to the outer pan to come halfway up the sides of the baking dish.
- Bake 40 to 45 minutes or until a knife inserted into the center comes out clean.
- Serve warm or cold.

- Preheat the oven to 400 F. Put the butter in a 9 inch cake pan or pie plate, and place the pan in the oven for a couple of minutes to melt the butter.
- Remove the pan and swirl the butter evenly over the bottom of the pan.
- Sprinkle 2 tablespoons of granulated sugar in the bottom of the pan. Set aside.
- In a large mixing bowl, combine the milk, sugar, salt, nutmeg, cinnamon,vanilla, eggs. Whisk briefly until just combined.
- Add the bread chunks to the mixing bowl. If you are using raisins, add them now as well.
- Stir until well saturated with liquid. Use your fingers to massage the mixture and break up any large chunks.
- Gently place the soaked bread chunks in the pan, on top of the butter/sugar mixture. Fill in any gaps in the bread and gently press down on the top to make it even. Pour any remaining liquid evenly over the top.
- Place the pan in the oven. Bake for 15 minutes at 400 F, then turn the oven down to 300 F and bake another 15 minutes. The bread pudding is done when the temperature in the middle reaches 175 F, or when the center jiggles but does not slosh.
- Remove from oven and cool on a rack for 30 minutes. Serve slightly warm, or let cool to room temperature, then refrigerate. Also tastes wonderful chilled.

- 1. Spray a 9 x 9 inch pan with Pam.
- 2. Place soft bread cubes in pan. Sprinkle with raisins.
- 3. Sprinkle cinnamon and nutmeg over bread and raisins in pan.

- Preheat oven to 350 degrees F.
- Whisk together the milk and half and half. Tear the bread into small pieces and put into a large bowl for soaking. Pour the milk mixture all over the top. Let sit for about 10 minutes. Stir.
- In a separate bowl, whisk the eggs with the sugar and vanilla until well blended.
- Rough chop the fruit, but don't puree it.
- Add the raisins and fruit to the egg mixture, pour over the bread and gently mix.
- Butter a 9 x 9 inch baking dish and coat the dish all along the sides and bottom. Spoon the bread pudding mixture into the dish, but do not pack.
- Bake uncovered at 350 degrees F for about 1 hour, or until bubbly on the sides, golden brown on top and set in the middle. Let cool for about 5 minutes before cutting into squares.
- Drizzle each serving with whiskey sauce if desired. Doubles great.

- Break bread into casserole dish/bowl.
- Add Cinnamon to bread and mix.
- Mix eggs, sugar, vanilla and milk in cooking pot.

- Preheat the oven to 375 degrees F (190 degrees C). Lightly grease a 10x12-inch baking pan.

- 1. Heat oven to 350 degrees F. Spray a 3-4 quart glass baking dish with cooking spray. Set aside. Have at the ready: a 9X13-inch baking pan with about 2" on water in it. You will need this to bake the bread pudding in a water bath.
- 2. In a large bowl, mix the sugar and flour. Add the eggs and beat well (by hand).
- 3. Add the vanilla and milk and mix well. Add the bread cubes and raisins Mix well. Let set for about 10-15 minutes until bread has absorbed some of the liquid.
- 4. Pour into prepared baking dish. Dot with butter and sprinkle evenly with cinnamon.
- 5. Place in baking pan (with water on the bottom) and place in heated oven.
- 6. Bake for 60-70 minutes or until bread pudding is browned and firm.
- 7. Cool slightly before serving. Serve garnished with whipped cream if desired. Store leftovers in refrigerator.
- 8. BE VERY CAREFUL WHEN TAKING OUT OF THE OVEN AS THE WATER IN THE BAKING PAN IS EXTREMELY HOT!!!!
- 9. HINT: you can use as much bread cubes as you want with this recipe. If you like your bread pudding dense, just add more bread cubes. But you may have to bake it longer so it sets up. If you do this, just keep and eye on it.... check every 5-10 minutes. I've already baked it for WELL over an hour.
