A classic German pot roast: Venison or beef marinated and then braised in a rich sauce that's finished with crushed ginger snaps.

3 to 4 pound venison roast (or beef chuck)
1/4 cup melted butter or extra virgin olive oil
8 gingersnap cookies
3 tablespoons butter
2 tablespoons flour
Salt
Marinade Ingredients:
1 bottle red wine
1/2 cup red wine vinegar
2 cups water
1 tablespoon black peppercorns
1 tablespoon juniper berries
1 tablespoon mustard seed
6 to 8 cloves
3 to 5 bay leaves
1 tablespoons dried thyme
2 celery stalks, chopped
2 carrots, peeled and chopped
1 medium onion, chopped

Steps:

  • Marinate the venison: Put marinade ingredients (wine, vinegar, water, peppercorns, juniper, mustard, cloves, bay leaves, thyme, celery, carrots and onion) in a pot and bring to a boil. Turn off heat and allow the marinade to cool. Submerge the venison in the marinade and refrigerate for at least 24 hours, and up to 5 days. Three days is a good length of time for this. When you are ready to cook, remove the roast from the marinade and sprinkle it all over with salt. Set it aside for 15-20 minutes or so.
  • Preheat the oven to 275°F: Actually, 225°F is a better temperature, but the roast can take up to 8 hours to properly cook then; this is what I do at home on weekends. At 275°F, the roast will probably take about 5 hours to cook. You can go up to 300°F - a typical venison roast will be ready in 3 1/2 hours at this temperature - but you will get gray, not pink, meat. It will still taste good, though.
  • Brown venison in butter or oil (optional): Now you have an optional step: You can, if you choose, brown the venison in butter or oil. I chose not to because if you then simmer the venison at a low enough temperature, it will remain pink all the way through. If you brown the outside, you will get a gray ring around the edge of the venison when you cut into it. Either way is fine.
  • Cook the venison in the marinade: Pour the marinade into a Dutch oven or other lidded, oven-proof pot and bring it to a boil. Add the venison to the pot. Cover and put in the oven. If the venison is not submerged by the marinade, turn the roast over every hour. This is also a good way to test for doneness - you want the roast to almost be falling apart. The roast should take between 3 1/2 to 8 hours to cook, depending on the oven temperature. At 275°F, it should take about 5 hours to cook.
  • Remove roast from oven and coat with oil or melted butter: When the roast is done (completely tender), take it out of the pot and coat it with some of the 1/4 cup olive oil or melted butter. Reserve the rest of the oil or butter for later. Wrap it in foil.
  • Make the sauerbraten sauce: Sauerbraten is all about the sauce. Strain the cooking liquid through a fine-meshed sieve into a bowl. Take the 8 gingersnap cookies and pulverize them in a blender. You want it to look like a rough meal or coarse flour. In a medium-sized pot, melt 3 tablespoons of butter over medium-high heat. When it is frothing and totally melted, whisk in 2 tablespoons flour. Cook the roux until it is the color of coffee-and-cream, stirring often. Slowly whisk in the strained cooking liquid, one cup at a time. The mixture will turn to clay at first, then loosen into a silky sauce. Taste for salt - it will probably need it - and add enough to your taste. Whisk in 4 tablespoons of the pulverized gingersnaps. They will not dissolve completely at first, but keep stirring and they will disappear. Taste the sauce. Add another tablespoon of gingersnaps if you want, or add a tablespoon of sugar. The sauce should taste sour, warm (a pumpkin pie sort of spicy warm) and a little zippy and sweet.
  • To serve, slice the roast into 1/4 inch thick slices: Venison can be dry - it has zero fat - so one trick I do is to coat each slice in melted butter before I serve it. You'll need about 1/2 stick melted to do this trick. Serve with lots of sauce, some braised onions, and either mashed potatoes, egg noodles, or spaetzle. A hearty red wine would be an ideal match here, as would a dark, malty beer. This sour beef dish was often cooked by my German grandmother. It is perfect for any Oktoberfest celebration and is sure to get many rave reviews. My wife was not so hot on the idea of sour beef until she tried it in Germanland in Epcot Center. Serve with potato dumplings, potato pancakes or boiled potatoes (or boiled cauliflower).

3 ½ pounds beef round steak
1 tablespoon salt
ground black pepper to taste
16 fluid ounces vinegar
1 ½ cups sliced carrots
1 cup sliced onion
12 peppercorns
5 whole cloves
3 bay leaves
1 sprig fresh parsley, chopped
2 tablespoons all-purpose flour
¼ cup butter
8 gingersnap cookies, crushed, or more to taste
1 tablespoon white sugar

Steps:

  • Wipe beef with a damp cloth and season with salt and pepper. Place seasoned beef in a large glass bowl.
  • Combine vinegar, carrots, onion, peppercorns, cloves, bay leaves, and parsley in a bowl; pour over beef. Cover dish tightly with a lid or plastic wrap.
  • Refrigerate beef, turning daily, for 3 to 7 days.
  • Drain meat, reserving liquid and vegetables. Rub flour over all sides of beef.
  • Heat butter in a large Dutch oven over medium-high heat; brown beef on all sides, 5 to 10 minutes. Add onions, carrots, and 2 cups reserved liquid. Cover Dutch oven, lower heat to medium-low, and simmer until meat is tender, about 2 hours. Transfer beef to a serving platter.
  • Stir gingersnap crumbs and sugar into the liquid in Dutch oven; cook and stir until sauce is thickened, about 5 minutes. Pour sauce over meat.

1 cup cider vinegar
1 cup red wine vinegar
1 medium onion, chopped
1 large carrot, chopped
1 tablespoon plus 1 teaspoon kosher salt, additional for seasoning meat
1/2 teaspoon freshly ground black pepper
2 bay leaves
6 whole cloves
12 juniper berries
1 teaspoon mustard seeds
1 (3 1/2 to 4-pound) bottom round
1 tablespoon vegetable oil
1/3 cup sugar
18 dark old-fashioned gingersnaps (about 5 ounces), crushed
1/2 cup seedless raisins, optional

Steps:

  • In a large saucepan over high heat combine the water, cider vinegar, red wine vinegar, onion, carrot, salt, pepper, bay leaves, cloves, juniper, and mustard seeds. Cover and bring this to a boil, then lower the heat and simmer for 10 minutes. Set aside to cool.
  • Pat the bottom round dry and rub with vegetable oil and salt on all sides. Heat a large saute pan over high heat; add the meat and brown on all sides, approximately 2 to 3 minutes per side.
  • When the marinade has cooled to a point where you can stick your finger in it and not be burned, place the meat in a non-reactive vessel and pour over the marinade. Place into the refrigerator for 3 days. If the meat is not completely submerged in the liquid, turn it over once a day.
  • After 3 days of marinating, preheat the oven to 325 degrees F.
  • Add the sugar to the meat and marinade, cover and place on the middle rack of the oven and cook until tender, approximately 4 hours.
  • Remove the meat from the vessel and keep warm. Strain the liquid to remove the solids. Return the liquid to the pan and place over medium-high heat. Whisk in the gingersnaps and cook until thickened, stirring occasionally. Strain the sauce through a fine mesh sieve to remove any lumps. Add the raisins if desired. Slice the meat and serve with the sauce.

This recipe has been in our family forever. It originated in East-Prussia, instead of beef my ancestors used venison. The "sauer" in this braten is very mellow. If allowed to marinate long enough, the meat will be so tender you will not need a knife

3 lbs rump roast or 3 lbs beef eye round
1 large onion, quartered
2 bay leaves
1/2 teaspoon whole allspice
1 gallon buttermilk
2 tablespoons lard or 2 tablespoons vegetable oil
1 quart beef stock
1/4 cup water
1/4-1/2 cup cornstarch
1/2 cup sour cream

Steps:

  • Place roast into a large pan; pour buttermilk over roast to completely cover it.
  • Add onion, bay leafs, and whole allspice to buttermilk.
  • Cover marinating bowl with cheesecloth and let stand at room temperature for 18 to 24 hours, then place in refrigerator to marinate for an additional 3 to 4 days, turning the roast occasionally.
  • Remove roast from marinate, discard marinade, wash, and pat dry.
  • Heat oven to 350ºF.
  • Heat beef stock.
  • In large heavy Dutch oven heat oil on high and brown roast on all sides.
  • Add hot beef stock to browned roast and place in oven.
  • Bake for@ 2 1/2 hours.
  • Turn of oven.
  • Remove Dutch oven from oven, remove roast from Dutch oven, put roast on platter and return to warm oven, Place Dutch on high heat, mix water and cornstarch together and stir enough mixture into boiling drippings to achieve sauce consistency to your liking.
  • Remove Dutch oven from heat, remove roast from warm oven.
  • Stir sour cream into sauce.
  • Slice roast and ladle some sauce over roast.
  • Serve with Half and Half potato dumplings and sweet and sour red cabbage.

Steps:

  • Place the beef roast in a deep ceramic or glass bowl. Add onions, peppercorns, cloves, and bay leaf. Pour white vinegar and cider vinegar over the meat; chill, covered, for 4 days. Turn meat twice each day.
  • Remove the meat from the marinade, dry it well with paper towels, and strain the marinade into a bowl. Reserve onions and 1 cup marinade.
  • In a Dutch oven brown the meat on all sides in hot vegetable oil.
  • Sprinkle meat with salt. Pour boiling water around the meat. sprinkle in crushed gingersna ps, and simmer covered for 1 1/2 hours. Turn often.
  • Add 1 cup of reserved marinade and cook meat 2 hours or more, until tender.
  • Remove the meat and keep it warm. Strain the cooking juices into a large saucepan.
  • In a small bowl mix sour cream with flour. Stir it into the cooking juices and cook, stirring, until sauce is thickened and smooth.
  • Slice meat in 1/4 inch slices; add to hot gravy.
  • Arrange meat on a heated plater and pour extra sauce over it.

This classic German recipe can be made with venison, lamb, mutton, or pork instead of beef. Sauerbraten is one of the best known German dishes and has many regional variations. This recipe is from the Rhineland region of Germany.

1/2 cup water
3 bay leaves
4 cloves
2 stalks celery, chopped
2 carrots, chopped

1 1/2 lbs beef shoulder
1 cup buttermilk
1/2 cup onion, chopped
1/2 cup olive oil
1/2 cup red wine
1/4 cup flour
1/4 cup butter
2 tablespoons gravy flavoring (Kitchen Bouquet)

1/8 teaspoon white pepper
brown sugar, to taste (until sweet and sour)
2 tablespoons raisins

Steps:

  • Place the vinegar, water, bay leaves, cloves, celery, carrots, quartered onion, salt and pepper in large container (earthenware, glass, plastic, or enamel). Add meat and buttermilk and refrigerate for 4 days.
  • Take meat out of marinade, and pat the meat dry with a towel. Reserve marinating liquid.
  • In large saute pan, add chopped onion to the olive oil and brown meat on all sides. After browning, deglaze pan with red wine and add marinade and beef shoulder. Cook until tender, about 1 hour.
  • Remove the meat from the pan, let rest for 10 to 15 minutes then slice.
  • Strain marinade and set aside.
  • Add the butter to the pan over low heat and when melted add the flour. Whisk until it comes together and bubbles. Slowly add the strained marinade stirring constantly until sauce has thickened. Add gravy flavoring and salt and white pepper.
  • Add brown sugar, to taste, until it is sweet and sour. Stir in the raisins.
  • Pour sauce over sliced sauerbraten, and serve with red cabbage, potato dumplings, Spatzle, boiled potatoes, or pasta, if desired.

12 whole cloves
2 bay leaves
3 teaspoons salt
3 teaspoons brown sugar
1 boneless beef chuck roast or rump roast (4 pounds)
1/4 cup all-purpose flour
2 tablespoons canola oil
1 large onion, cut into wedges
5 medium carrots, cut into 1-1/2-inch pieces
2 celery ribs, cut into 1-1/2-inch pieces

Steps:

  • In a large bowl, combine the water, vinegar, cloves, bay leaves, salt and brown sugar. Remove 2 cups to a small bowl; cover and refrigerate. Pour remaining marinade into a 2-gal. resealable plastic bag. Add roast; seal bag and turn to coat. Refrigerate for 1-2 days, turning twice each day., Discard marinade and spices. This is not the same recipe as the traditional German sauerbraten. I'm not even sure if it has the right name, but it's what my mother called it, and who's to argue with Mom? She often made this while we were growing up. The meat we used in the Netherlands then was generally a little tougher, and she often used recipes for braising it to make it tender. This recipe adapts well to a crockpot or pressure cooker, too (changed cooking time, of course).

2 cups cider vinegar
2 cups water
⅓ cup brown sugar
½ teaspoon ground cloves
½ teaspoon ground allspice
1 tablespoon salt
½ teaspoon ground black pepper
6 black peppercorns
1 bay leaf
2 onions, diced
3 carrots, chopped
2 stalks celery, chopped
4 ½ pounds rump roast
2 tablespoons vegetable oil
1 cup sour cream

Steps:

  • In large saucepan over medium heat, combine cider vinegar, water, brown sugar, cloves, allspice, salt, pepper, peppercorns, bay leaf, onion, carrot and celery. Heat, stirring occasionally, until bubbles appear at edges, but do not boil.
  • Poke deep holes in roast and place in non-metal bowl. Pour vinegar mixture over roast. Cover and refrigerate for five days, turning once daily.
  • Remove roast from liquid; pat dry with paper towels. Remove bay leaf and peppercorns from liquid and discard. Strain liquid from vegetables, reserving both.
  • Heat oil in Dutch oven over medium-high heat. Sear all sides of roast quickly, 1 to 2 minutes each side. Reduce heat to low, pour reserved vegetables and 1 cup of vinegar liquid into pan. Cover and simmer 1 1/2 hours, adding more vinegar liquid if necessary.
  • Remove roast from pan, and let cool slightly. Slice roast and return slices to liquid in pan, cover and simmer 30 minutes more. Remove slices to serving platter. Stir sour cream into heated liquid and heat through, but do not allow to boil. Pour sauce over meat and serve immediately.
