- Flatten chicken to 1/2-in. thickness. In a large bowl, combine vinaigrette and garlic. Add chicken; turn to coat. Cover; refrigerate 30 minutes. Drain and discard marinade. Sprinkle chicken with salt and pepper., On a lightly greased grill rack, grill chicken, covered, over medium heat or broil 4 in. from heat 5 minutes. Turn; top with marinara, basil, tomatoes, artichokes, onions and cheese. Cover and cook until chicken is no longer pink and cheese is melted, 5-6 minutes.

MARGARITA CHICKEN
Steps:
- Rinse the chicken breasts and pat dry; set aside.
- In a small bowl, combine the remaining ingredients. Place the chicken and marinade in large resealable plastic bag. Squeeze out the air and seal. Let marinate in the refrigerator for 1 to 2 hours.
- Set up the grill for direct cooking over medium heat and oil grate when ready to start cooking. Remove the chicken from the refrigerator and let sit at room temperature for 30 minutes.
- Place chicken on hot oiled grill and cook 5 to 6 minutes per side, or until done.
- INDOOR: Preheat oven to 350 degrees F. Prepare chicken breasts as directed. Roast chicken breasts in preheated oven for 35 to 40 minutes.

- Pound chicken breasts to even thickness. This is important!
- Combine all ingredients in a blender except chicken.
- Pour marinade over chicken and let sit in the fridge for at least 1 hour, up to 24 hours.
- Preheat grill to medium-high heat.
- Grill chicken breasts for 7-8 minutes per side, turning once. Since the thick parts have been flattened, the whole breast should develop a nice, caramelized texture without drying out.
- Remove from grill and let rest for 5-10 minutes. Slice for fajitas, or serve whole with lime wedges and cilantro.
MARGARITA CHICKEN SKEWERS
Steps:
- Place the chicken, margarita mix, tequila, cilantro and chicken seasoning in a large resealable plastic bag; squeeze out the air and seal. Massage the bag to combine the ingredients. Refrigerate for 30 minutes to 1 hour. Meanwhile, soak 12 wooden skewers in water.
- Preheat a grill to medium. Remove the chicken from the marinade; thread each piece onto a skewer. Oil the grill grate; grill the chicken skewers for 1 to 2 minutes per side, or until the meat is cooked through. Serve on a platter with arugula and lime.
MARGARITA CHICKEN WINGS

- Place the chicken wings in a resealable plastic bag. In a small bowl, whisk together the tequila, lime zest and juice, orange zest and juice, agave, crushed peppers and 1/2 teaspoon salt. Pour over the wings and seal the bag. Toss the wings in the marinade to coat. Place in the refrigerator and allow to marinate for 2 hours.
- Preheat the oven to 450 degrees F.
- Spray a baking sheet with nonstick cooking spray. Lay the wings out on the tray so they do not touch each other. Bake, flipping the wings halfway through, until cooked through and beginning to brown, about 25 minutes.
- Meanwhile place the marinade in a small saucepan over medium-high heat and simmer until reduced to 1/2 cup, 8 to 10 minutes.
- Heat a grill pan over medium-high heat. Grill the wings, turning often and brushing occasionally with the reduced liquid to coat, until golden and crispy, about 4 minutes.
RED ROCKER MARGARITA CHICKEN
Steps:
- In a medium mixing bowl add jalapenos, cilantro, tequila, garlic, red chili flakes, cumin, oregano, lime juice, and 1 teaspoon salt. Add the chicken breasts and red bell peppers to resealable gallon bag and pour in marinade. Let marinate in refrigerator for 4 to 8 hours.
- Heat grill to high. Remove chicken from marinade, and add chicken to the grill.
- In a small mixing bowl add flour, remaining 1 teaspoon salt and the granulated garlic.
- Heat the canola oil to 350 degrees F.
- Remove bell peppers from marinade and dredge in flour and fry until crispy. When done drain on paper towels.
- Cook chicken thoroughly on both sides, remove from heat and cover. Let sit for 5 minutes Remove chicken from the bone and thinly slice or shred.
- Lightly toast rolls. Spread mayonnaise evenly among the rolls and then stack evenly with the cabbage, onion, chicken breast, fried peppers, and top with cheese.

- Chop cilantro. Zest/grate lime peel (no white; 1 teaspoon); squeeze limes for juice (3 tablespoons). Combine in medium bowl: mayonnaise, oil, cumin, pepper sauce, cilantro, lime juice, and lime zest. Reserve 1/2 cup marinade for later use. MARGARITA FAJITAS CHICKEN
This recipe was inspired by a meal I had at a local restaurant. The marinade is also great if you want to leave the chicken breasts whole and grill out in the summer. Of course, a good margarita or sangria are my beverages of choice with this dish.

- In a medium bowl, combine liquid ingredients.
- Add chicken strips and refrigerate for at least 4 hours.
- (Overnight works best, if possible) Heat the olive oil in a cast iron skillet (it works best for blackening the chicken).
- When thoroughly heated, add the chicken and cook until just starting to turn golden.
- Add the pepper and onion rings and cook until chicken starts to blacken and onions start to caramelize.
- Heat the tortillas in a tortilla warmer.
- If you don't have a tortilla warmer, I've found that putting the tortillas in a glass pie dish with a damp cloth covering them in a microwave for+/- 2 minutes works for me.
- Place 1 or 2 strips of chicken with some of the grilled onions and peppers in a tortilla.
- Top as desired with remaining ingredients.
- It's kinda fun to let people create their own.

- Place cilantro, pepper, garlic powder, and onion salt in the bowl of a blender. Pour in margarita mix, lime juice, orange juice, tequila, triple sec, and honey. Puree on high speed until smooth, then reduce speed to medium-low, and slowly add the olive oil; blend until creamy. - Combine chicken, tequila and lime juice in small shallow dish. Cover and marinate at least 30 minutes and up to 2 hours, turning occasionally.
- Prepare barbecue (medium-high heat) or preheat broiler. Drain chicken; reserve marinade. Season chicken with salt and pepper. Grill or broil until just cooked through, occasionally basting chicken with some reserved marinade, about 4 minutes per side. Boil remaining marinade in small saucepan 1 minute.
- Cut each chicken breast crosswise into thin slices. Arrange slices on platter. Garnish with lime wedges. Serve, passing marinade separately as sauce.
