1/3 cup honey
1/4 cup natural peanut butter
2 tablespoons unsalted butter
1 cup crisp rice cereal
1 cup old-fashioned rolled oats
1/4 cup dried fruit

Steps:

  • In a small saucepan over medium, heat honey, peanut butter, and butter. Stir until loosened and smooth, 1 to 2 minutes. Remove from heat; stir in cereal, oats, and dried fruit.
  • Drop mixture by the tablespoon into mini paper cupcake or candy liners. Place on a rimmed baking sheet, and refrigerate until set, about 15 minutes.

Vegetable cooking spray
1 egg white
1/2 cup chunky peanut butter
1/3 cup brown sugar
1/4 cup honey
1/2 cup (1-stick) unsalted butter, melted
2 cups old fashioned oats
1/4 cup slivered almonds, toasted, *see Cook's Note
1/3 cup miniature chocolate chips

Steps:

  • Position an oven rack in the middle of the oven. Preheat the oven to 350 degrees F.
  • Spray a 7 by 10 3/4-inch nonstick baking pan with vegetable cooking spray. Lay a 6 by 18-inch piece of parchment paper in the pan, allowing the excess paper to hang over the sides. Spray the parchment paper lightly with cooking spray.
  • In a medium bowl, using a hand beater, beat the egg white until frothy. Stir in the peanut butter, brown sugar, and honey. Add the melted butter, oats and almonds. Stir to combine, then add the chocolate chips.
  • Using a rubber spatula, spread mixture into the prepared baking pan, pressing lightly to form an even layer. Bake until the edge of the mixture begins to brown, about 15 minutes. Remove from the oven and let cool for at least 1 hour. Cut into 1 1/2-inch squares and serve.
  • *Cook's Note: To toast almonds, arrange in a single layer on a baking sheet. Bake in a preheated 350 degree F oven until lightly browned, about 8 to 10 minutes.

¼ cup brown sugar
1 cup granola
1 cup quick cooking oats
1 cup puffed rice cereal
½ cup chocolate chips
½ cup chopped dried mixed fruit

Steps:

  • Melt peanut butter and honey together in a saucepan over medium heat. Dissolve brown sugar into the peanut butter mixture; bring to a simmer for 2 minutes.
  • Mix granola, oats, rice cereal, chocolate chips, and fruit together in a large bowl; pour peanut butter mixture over the granola mixture and fold to coat.
  • Grease a cake pan. Pour the granola mixture into the prepared pan and press into a flat layer. Cool at room temperature until set, about 15 minutes before cutting into bars.

1 ½ cups oats
¼ cup raisins
¾ teaspoon ground cinnamon
3 ounces peanut butter, slightly melted
1 egg white, beaten
1 ½ teaspoons honey

Steps:

  • Preheat oven to 325 degrees F (165 degrees C). Line a baking sheet with waxed paper.
  • Mix oats, raisins, and cinnamon together in a bowl. Mix peanut butter with the oats mixture using your hands until ingredients are coated in peanut butter; add egg white and honey and continue mixing with hands until evenly mixed. Spread the mixture onto the baking sheet.
  • Bake in preheated oven for 10 minutes, stir, and continue baking until beginning to brown, 5 to 10 minutes more.
  • Let granola cool until it begins to harden, at least 30 minutes.

1 cup honey
3 cups old fashioned oats
1/2 cup ground flax seeds
1/2 cup natural bran
3/4 cup Kashi Golean cereal
1 teaspoon cinnamon
2/3 cup dried cherries
1 teaspoon vanilla

Steps:

  • Toast oats in a dry pan over medium heat for 10 minutes.
  • Mix all ingredients.
  • Pat down in bowl (for easier scooping), and then use an ice cream scoop to make even sized balls. With greased hands, lightly roll into firmer balls.
  • Refrigerate to reduce stickiness and enjoy!

Healthy snacks that kids (and grown ups) will love! I originally got the recipe from Whole Foods, then changed it up a bit. This is dairy-free and vegetarian. NOTE: I have many a time made these without toasting the oats and coconut and it works out just fine that way as well :)

2 cups rolled oats (sometimes I use 1.5 cups rolled oats and 0.5 cups steel cut oats)
1/2 cup unsweetened dried shredded coconut
1/2 cup crunchy peanut butter (if using JIF, Skippy or any brand with sugar, omit the sugar below)
1/2 cup honey
2 tablespoons packed brown sugar (lately I have been just using 2 T of Splenda instead of this)
1/4 cup chopped mixed nuts (I like to use almond slivers and chopped walnuts mixed or pistachio's)
1/8 cup raisins (I use golden ones)
1/8 cup dried cranberries (May sub with dried blueberries or dried cherries)

Steps:

  • Preheat the oven to 350 degrees. Spread oats and coconut on a cookie sheet. Place in the oven and toast for about 12 minutes, stirring twice, until lightly browned.
  • Meanwhile, combine the peanut butter, honey and brown sugar in a saucepan over medium heat, stirring continuously, until ingredients are thoroughly blended and sugar has completely melted (about 2 minutes).
  • Add the toasted oats and coconut to the peanut butter mixture, followed by the nuts, raisins and cranberries. Stir to combine. Set aside to cool for about 10 minutes.
  • Working with dampened hands, shape into bite sized balls and refrigerate for an hour. I usually let mine sit out for about 15 minutes prior to serving.

Steps:

  • Melt the margarine, peanut butter, and honey until smooth.
  • Add vanilla, salt, and protein powder.
  • When mixture is well combined, add the rolled oats and raisins, if desired.
  • Spread onto cookie sheet or 13X9 pan and bake at 375 degrees for 10 minutes. Allow it to cool in the pan.
  • Break it into pieces and store in an airtight container.
