1 tablespoon cornstarch
1 cup milk
2 tablespoons fat-free cholesterol-free egg product or 2 tablespoons beaten egg
1 1/2 teaspoons butter or margarine
1/2 teaspoon vanilla
2 tablespoons semisweet chocolate chips

Steps:

  • Mix sugar and cornstarch in 4-cup microwavable measuring cup. Stir in milk and egg product. Microwave uncovered on High 3 minutes 30 seconds to 4 minutes; stirring after 2 minutes, until mixture thickens and boils. Stir in butter and vanilla.
  • Stir chocolate chips into 1 cup of the pudding until melted. Layer vanilla and chocolate puddings alternately in parfait glasses or swirl in serving dishes.

2/3 cup sugar
1/4 cup cornstarch
1/4 teaspoon salt
1/3 cup unsweetened cocoa powder (if making chocolate pudding)
2 1/2 cups milk
4 large egg yolks
2 tablespoons unsalted butter, cut into pieces
1 teaspoon vanilla extract

Steps:

  • Place a fine-mesh sieve over a medium bowl; set aside. In a medium saucepan, off heat, whisk together sugar, cornstarch, and salt. If making chocolate pudding, add cocoa powder. Very gradually (a few tablespoons at a time) whisk in milk, taking care to dissolve cornstarch. Whisk in egg yolks.
  • Whisking constantly, cook over medium heat until the first large bubble forms and sputters. Reduce heat to low; still whisking, cook 1 minute. Remove from heat; immediately pour through sieve into bowl. Stir butter and vanilla into hot pudding.
  • Place plastic wrap directly on surface of pudding (to prevent skin from forming); chill at least 3 hours and up to 3 days. Before serving, whisk pudding until smooth; divide among four serving dishes.

1 pkg. (3.4 oz.) JELL-O Vanilla Flavor Instant Pudding
1 qt. (4 cups) cold milk, divided
1 pkg. (4 oz.) BAKER'S Semi-Sweet Chocolate
1 Tbsp. oil

Steps:

  • Beat each flavor pudding mix with 2 cups milk in separate medium bowl with whisk 2 min.
  • Add spoonfuls of chocolate pudding, then vanilla pudding alternately into 12 (5-oz.) paper or plastic cups. Swirl gently with skewer or toothpick; cover with foil. Insert wooden pop stick or plastic spoon into center of each cup. Freeze 4 hours or until firm.
  • Remove frozen pops from cups just before serving; discard cups. Melt chocolate as directed on package; pour into small measuring cup or custard cup. Stir in oil. Dip each pop halfway into chocolate sauce; place on waxed paper-covered tray. Let stand 2 min. or until chocolate coating is firm. Freeze leftovers.

1-1/2 packages (13 ounces each) Swiss cake rolls
2-3/4 cups 2% milk
2 packages (3.9 ounces each) instant chocolate fudge pudding mix
2 cups whipped topping

Steps:

  • Cut each cake roll into 6 slices; reserve any broken chocolate coating for topping. Line bottom and sides of a 9-in. springform pan with cake slices, covering completely., Whisk milk and pudding mixes 2 minutes (mixture will be thick); spread onto bottom layer of cake rolls. Cover with whipped topping. Sprinkle with reserved chocolate pieces. Refrigerate, covered, at least 2 hours before serving.

2 cup(s) whole milk
2 - egg yolks
5 tablespoon(s) sugar
2 tablespoon(s) cornstarch
- pinch of salt
2 ounce(s) bittersweet chocolate, finely chopped
1/2 teaspoon(s) vanilla extract

Steps:

  • In medium pan, whisk together milk and egg yolks. In small bowl, stir together sugar, cornstarch and salt. Whisk sugar mixture into milk mixture. Bring to a simmer over medium heat, stirring constantly with a flexible spatula or wooden spoon, 4 to 6 minutes. When mixture starts to bubble around edges, cook it gently, stirring constantly for 1 minute. Immediately divide the pudding between two heatproof bowls. Stir chocolate into one bowl until it is melted and smooth. Stir the vanilla into the other portion. Let pudding cool to room temperature for about 15 minutes. Spoon the two flavors alternately into ice pop molds, beginning with the chocolate. You can rap the molds firmly on the counter a few times to settle any air pockets. Insert sticks. Freeze until firm, at least y6 hour or up to 1 week. To unmold pops, run hot water over outsides of molds for a few seconds, then gently pull sticks. Makes 6 to 8 pops. For variation, for plain vanilla pudding pops omit the chocolate and increase vanilla to 1 t. skip the step of dividing the mixture in half. For chocolate pudding pops, increase the chocolate to 4 oz. and omit the vanilla.

1 box French vanilla cake mix (white or yellow cake mix)
1 package vanilla instant pudding mix
1/3 cup instant powdered milk
3 large eggs
1/3 cup vegetable oil
1 cup buttermilk
1/2 cup white chocolate chips
6 ounces cream cheese, softened room temperature
4 tablespoons butter, softened room temperature
1/3 cup white sugar
2 large eggs
1/4 cup dried apricot, finely shredded
1/4 cup candied ginger, thinly sliced
1/4 cup salted cashews, thinly sliced
1/4 cup golden raisin
1/4 cup flaked coconut, sweet and toasted
2 tablespoons flour, plus
3 teaspoons flour
2 teaspoons vanilla extract, pure
3 cups Cool Whip

Steps:

  • Preheat oven to 350 degrees
  • Butter and flour a 13 x 9 x 2 inch pan
  • Cake Mix
  • In a large bowl add the cake mix, pudding mix and powdered milk
  • Add the eggs, one at a time mixing well
  • Next add the vegetable oil and the buttermilk
  • Mix on low then medium speed for 3 minutes then add the white chocolate chips and set aside
  • Swirl Filling
  • Beat the cream cheese and butter on high for 2 minutes with blender
  • Next lower speed and add the sugar, then the eggs, one at a time, mixing well
  • On low speed, add 2 tbsps plus 2 tsps of flour and vanilla extract
  • Scrape down the sides of the bowl and set aside
  • In a small bowl toss the apricots, cashews, raisins, candied ginger and toasted coconut with 1 tsp of flour
  • Add the fruit and flour to the cream cheese mixture
  • Pour half of the vanilla cake batter into the prepared pan, top with the fruit and cream cheese mixture
  • Now pour the remaining vanilla cake batter ontop of the fruit and cream cheese mixture
  • Take a knife and gently swirl thru all 3 cake layers to create a marbilized effect
  • Bake in a 350 degree oven for 40 - 50 minutes - or until a toothpick comes out almost clean
  • Cool completely and frost top of cake with cool whip
  • Refrigerate for 1 hour and enjoy
  • This cake is also wonderful sprinkled with icing sugar, or served with vanilla bean ice cream, or glazed with chocolate or carmel
