DD's favorite pasta salad. It's pretty unique, but we have to have it whenever the extended family gets together because everyone loves it.

1 lb linguine, cooked
1 (18 ounce) jar Wishbone Italian dressing
1/2 jar Salad Supreme dry seasoning (If you can't find this in the spice section at the store, you can make your own. See recipe 24917 Sa)
1 bunch green onion, chopped
1 cucumber, chopped
1 tomatoes, chopped

Steps:

  • Toss Veggies with linguini and dressing.
  • Variation: Toss in any variety of vegetables.

16 ounces linguine
2 tomatoes, diced
1 cucumber, seeded and diced
1 cup sliced fresh mushrooms
1/4 cup diced onion
8 ounces Italian salad dressing
4 tablespoons fresh basil

Steps:

  • Break linguini into thirds and cook al dente by package directions. Drain and rinse with cold water.
  • Combine cooked pasta, tomatoes, onion, mushrooms,cucumber, and salad dressing. Toss well.
  • Chill for several hours to blend flavors. Stir occasionally.
  • Top with fresh chopped basil when ready to serve.

My Aunt Lorraine brought this salad to one of our Easter dinners several years ago. It was a huge hit and I made sure that she gave me a copy of the recipe. However, she wasn't very specific with the size of salad dressing bottles. Cook time = refrigerate time.

16 ounces linguine, cooked and drained
1 (15 ounce) can diced tomatoes, drained
1 large onion, chopped
1 large cucumber, chopped
1 bottle Italian dressing
1/2 bottle poppy seed dressing
1 red bell peppers or 1 yellow bell pepper, chopped

Steps:

  • Mix everything together in a big mixing bowl.
  • Refrigerate for at least 4 hours before serving.
  • ~NOTE~Best when refrigerated overnight!

A very quick and delicious pasta dish with a light, creamy blend of Parmesan cheese and ground nutmeg. Serve with a tossed green salad and some garlic bread.

½ pound linguine pasta
1 thick slice bacon
¼ cup butter
½ cup cream
½ cup grated Parmesan cheese
½ teaspoon ground white pepper
¼ teaspoon ground nutmeg

Steps:

  • Bring a large pot of water to a boil. Add pasta and cook for about 7 to 8 minutes or until al dente; drain. Remove from pot, cover and set aside.
  • Meanwhile, in a small skillet cook bacon over medium heat until crispy. Break up into small pieces and set aside.
  • In the pasta pot, melt butter over medium-low heat and add cream; heat thoroughly, but do not allow to boil. Combine cooked pasta with butter/cream mixture. Add Parmesan cheese and bacon; toss well. Allow sauce to thicken for a few minutes; add ground white pepper and nutmeg. Serve immediately.

the grand children always want my mother in law to make this salad when they visit. It is an update on an OLD recipe that calls for a cooked dressing --she has gone modern and uses the microwave and add cool whip instead of making her own whipped cream.She makes about a triple batch in a big tupperware bowl and keeps the leftovers in the fridge -- be sure to stir leftovers and eat with in about a day. Spaghetti rings are a little hard to find where I shop, You could probably substitute something like alphabet shapes or even fine spaghetti cut in tiny pieces but the rings are the best.

2 cups cooked spaghetti, rings (1 1/3 cup uncooked)
5 cups diced apples (unpeeled)
1 (15 ounce) can crushed pineapple
1/2 cup lemon juice
1 cup powdered sugar
4 beaten eggs
8 ounces Cool Whip
1 (16 ounce) bag mini marshmallows
1 (6 ounce) jar maraschino cherries (optional)

Steps:

  • Mix cooked spaghetti rings, apples and pineapple together in a big bowl, set aside.
  • Mix lemon juice, powdered sugar, and eggs in a microwave safe bowl
  • cook on high for 5 minutes --- stirring every minute.
  • cool the dressing about 15 minutes, pour over fruit and pasta and chill 24 hours.
  • just before serving mix in cool whip and marshmallows and cherries.

1 lb dry linguine
3/4 cup mayonnaise
3/4 cup light sour cream
1 tablespoon rice wine vinegar
1 teaspoon Dijon mustard
2 tablespoons horseradish (or more if you wish)
1/2 teaspoon dill weed (optional)
1 dash Tabasco sauce
salt & freshly ground black pepper (to taste)
1 cup thinly sliced fresh mushrooms
2 cups small cauliflower florets
2 cups cooked baby shrimp (defrosted if frozen)
2 green onions, thinly sliced
2 hard-boiled eggs, peeled and quartered lengthwise

Steps:

  • Put on a large pot of salted water to boil; when boiling, break linguini into thirds and drop into water.
  • Cook until pasta is al dente; drain, rinse with cold water, then leave in colander to drain well.
  • Meanwhile, prepare dressing: In a mixing bowl, whisk together mayonnaise, sour cream, vinegar, mustard, horseradish, dill weed (if using) and Tabasco sauce; taste and add salt and/or pepper if you wish.
  • In a large serving bowl, combine drained linguini with mushrooms, cauliflower florets, shrimp and green onions; add dressing (depending on how creamy you like your salad, you may not use it all) and combine well.
  • Arrange hard-boiled egg quarters around edge of bowl, cover, and chill until serving.

1 small head savoy cabbage
1 green bell pepper
1/2 small head purple cabbage
1 large vidalia or other sweet onion
1/2 cup sugar
1/2 cup Splenda
1/2 cup canola oil
1/2 cup cider vinegar
2 tsp. celery seed
1 tsp. kosher salt

Steps:

  • Chop cabbage, bell pepper and onion into medium chunks. Place veggies in blender and add enough water to cover. Process in blender until finely grated. (Note: if all veggies won't fit into blender at one time, process in batches.) Drain grated veggie mixture in colander and place in large bowl. To make dressing, combine sugar, Splenda, oil, vinegar, celery seed and salt in saucepan and bring to rolling boil. Remove from heat and pour over veggies. Mix well. May be eaten warm or cold and will stay fresh in refrigerator for up to three weeks.
