2 tablespoons water
1 teaspoon reduced-sodium soy sauce
1 teaspoon olive oil
1/8 teaspoon salt
Dash pepper
1 teaspoon sesame seeds, toasted

Steps:

  • Place the asparagus in a steamer basket; place in a saucepan over 1 in. of water. Bring to a boil; cover and steam for 4-5 minutes or until crisp-tender. Transfer to a serving dish. Combine the water, soy sauce, oil, salt and pepper; drizzle over asparagus. Sprinkle with sesame seeds.

1 lb asparagus
2 tablespoons teriyaki sauce or 2 tablespoons hoisin sauce
1/2 teaspoon bottled chopped ginger or 1/4 teaspoon grated fresh ginger
1/4 teaspoon hot chili-garlic sauce
2 teaspoons toasted sesame seeds

Steps:

  • Snap tough ends from asparagus and discard.
  • Boil water over high heat in a large frying pan.
  • Add Asparagus to boiling water (or alternatively, you can steam the asparagus, which I prefer to do as it stays crunchy).
  • Boil for 3 minutes, drain immediately and set aside.
  • While asparagus cooks or steams, stir teriyaki with ginger and chili-garlic sauce in a small bowl.
  • Return pan with asparagus to burner and reduce heat to medium.
  • Add teriyaki mixture.
  • Stir often until asparagus is tender-crisp and evenly coated with sauce, 1 to 3 minutes.
  • Sprinkle with sesame seeds.

1 pound asparagus
2 tablespoons dark sesame oil
1 tablespoon soy sauce
1 clove garlic, minced
2 tablespoons sesame seeds
Salt and black pepper

Steps:

  • In a shallow pan, soak skewers in cold water for 1 hour, then drain and set aside.
  • Preheat grill to high. Snap off the woody bases of the asparagus and discard. Skewer 4 or 5 asparagus spears together, using the toothpicks or 2 bamboo skewers, forming a raft shape.
  • In a small bowl, combine the sesame oil, soy sauce, and garlic and stir with a fork to mix. Brush this mixture on the asparagus rafts on both sides. Season the asparagus with a little salt and lots of pepper.
  • When ready to cook, place the asparagus rafts on the hot grate and grill until nicely browned on both sides, 2 to 4 minutes. Sprinkle with the sesame seeds as they grill. You can serve the asparagus as rafts or unskewered.

2 tablespoons hoisin sauce
1 1/2 teaspoons rice wine

  • Bring a pot of water to boil, add salt and asparagus and cook for 1 minute.
  • Remove and rinse asparagus in cold water, drain well on paper towels.
  • In a small bowl whisk together hoisin, rice wine and sesame oil.

Steps:

  • In a food processor, combine everything except the asparagus and mix thoroughly. Set aside.
  • Cut the asparagus into 2 inch pieces, on the diagonal.
  • Fill a large skillet half full of water; cover and bring to a boil. Add the asparagus and simmer just until crisp-tender, approximately 4 to 5 minutes. Drain well, but do not rinse.
  • Transfer to serving bowl. Pour the sauce over the hot asparagus and toss to coat.
  • Serve warm or at room temperature.

2 teaspoons cornstarch

1 tablespoon medium-dry Sherry or Scotch

1/2 teaspoon salt
1 teaspoon Asian sesame oil
1 tablespoon vegetable oil
2 tablespoons minced peeled fresh ginger root
1 1/2 tablespoons minced garlic
2 tablespoons sesame seeds, toasted lightly
Accompaniment: Cooked rice, if desired

Steps:

  • In a steamer set over boiling water, steam asparagus, covered, until just crisp-tender, about 1 to 2 minutes. Transfer asparagus to a colander and rinse under cold water to stop cooking. Drain asparagus well.
  • In a 1-cup measure, stir together cornstarch and water until dissolved and stir in soy sauce, Sherry or Scotch, sugar, salt and sesame oil.
  • Heat a wok or large heavy skillet over high heat until hot and add vegetable oil. Heat vegetable oil until hot but not smoking and stir-fry ginger root and garlic 30 seconds. Add asparagus and stir-fry 30 seconds. Stir cornstarch mixture and add to asparagus. Bring liquid to a boil, stirring, and stir-fry mixture until asparagus is well coated. Steps:

  • Preheat oven to 450°F. Oil large rimmed baking sheet. Whisk mayonnaise, 1 teaspoon rice vinegar, 1 teaspoon soy sauce, and 1 teaspoon grated ginger in pie dish. Mix panko and sesame seeds in another pie dish. Toss asparagus in mayonnaise mixture to coat, then roll in panko mixture. Transfer to prepared baking sheet. Drizzle with 2 teaspoons sesame oil.
