Steps:

  • Preheat oven to 450 degrees. Trim tough ends from asparagus.
  • On a rimmed baking sheet, toss asparagus with olive oil; season with coarse salt and ground pepper. Spread in an even layer. Sprinkle with Parmesan cheese.

3 tablespoons olive oil
Kosher salt and freshly ground black pepper
1 cup freshly grated Parmesan cheese (about 1 1/2 ounces)
1 teaspoon finely grated lemon zest
Juice of 1/4 lemon

Steps:

  • Preheat the oven to 450 degrees F. Line a baking sheet with a wire rack.
  • Put the asparagus, olive oil, 1/2 teaspoon kosher salt and 1/4 teaspoon pepper in a medium bowl. Toss to coat evenly. Spread the asparagus in a single layer on the prepared baking sheet. Roast for 10 to 12 minutes, until lightly browned and tender, but still bright green.
  • Meanwhile, spread the Parmesan evenly in the bottom of a medium nonstick skillet over medium heat. Cook undisturbed until the cheese melts, sticks together and turns golden brown, about 2 minutes, then flip with a rubber spatula and cook until golden on the second side, about 2 minutes more. Transfer the frico to a wire rack-lined baking sheet to cool completely, about 2 minutes. Break the frico into small crumbles and put in a small bowl. Add the lemon zest and 1/2 teaspoon black pepper and toss to combine.
  • Transfer the roasted asparagus to a serving platter and squeeze the fresh lemon juice over the top. Top with the crumbled frico mixture.

1 pound asparagus
1 pound carrots
Salt
2 teaspoons unsalted butter, cut into small pieces, plus additional for the baking dish
1/2 cup freshly grated Parmigiano-Reggiano cheese

Steps:

  • Soak the asparagus in cool water for 10 minutes. Trim the stems by snapping off the base at the point where the color changes from green to white. Trim and peel the carrots. Cut them into quarters lengthwise. In a large skillet, bring about 1 inch of water to a boil. Add the asparagus and salt and simmer for 3 to 5 minutes, or until the asparagus stalks are just tender. Remove the asparagus with a slotted spoon. Cool under running water and pat dry. In the same skillet, cook the carrots in the same manner. Cool under running water and pat dry. Butter a large shallow baking dish. Arrange the asparagus and carrots in the dish in overlapping layers. If not baking immediately, cover with plastic wrap and refrigerate for up to 5 or 6 hours. When ready to serve, preheat the oven to 400 degrees. Dot the vegetables with 2 tablespoons butter and sprinkle with the cheese. Bake until the vegetables are heated through and the cheese is melted, about 15 minutes. Serve immediately.

  • Preheat the oven to 400 degrees F.

1 bunch large or jumbo asparagus (can substitute with Brussels sprouts)
Extra-virgin olive oil, for cooking
Kosher salt and freshly ground black pepper
1/2 ciabatta loaf, cubed (about 1 quart cubes)
2 cloves garlic, grated
2 tablespoons grated Parmesan, plus more for garnish

Steps:

  • Preheat the oven to 500 degrees F.
  • Trim the woody ends from the asparagus. Using a vegetable peeler, shave the asparagus lengthwise into strips (if using Brussel sprouts, use a knife or mandoline to shave the sprouts).
  • In a large bowl, gently toss the shaved asparagus with 2 tablespoons olive oil and a few pinches of salt and pepper. Pour the asparagus mixture into a 12-inch cast-iron skillet and loosely arrange a "nest." Roast until slightly browned and softened, about 3 minutes.
  • Meanwhile, heat 1/4 cup olive oil in a large saute pan over medium-high heat. Once the oil is hot, add the cubed bread and toss to coat in the olive oil. Allow the bread to toast evenly, tossing often, 3 to 5 minutes. Remove the pan from the heat and stir in the garlic to perfume the oil and bread. Remove the bread from the pan to a cutting board and roughly chop the bread pieces. Toss with the grated Parmesan and black pepper, to taste.
  • Top the asparagus with the breadcrumbs. Garnish with more grated Parmesan.

40g (or vegetarian alternative), grated parmesan , plus extra shavings to serve
3 tbsp finely chopped basil
zest ½ lemon
375g pack ready-rolled puff pastry , quartered (then cut to the length of the asparagus)
350g asparagus spear
1 tbsp olive oil
good handful pretty salad leaves , such as rocket, basil, frisée and little red chard, tossed in vinaigrette

Steps:

  • Heat oven to 200C/fan 180C/gas 6. Mix the mascarpone with the Parmesan, basil and lemon zest, then season.
  • Lift the pastry onto 2 trays, then score around the edges of each piece to make a thin border. Spread the cheese mixture within the borders.
  • Toss the asparagus in the oil, then arrange the bundles on top of the pastry (these can be stacked a bit for height). Bake the pastries for 20-25 mins until golden, then serve warm topped with the dressed salad leaves and a few shavings of Parmesan.

1 tablespoon olive oil
½ teaspoon garlic salt
¼ cup grated Parmesan cheese, or more to taste

Steps:

  • Preheat oven to 375 degrees F (190 degrees C). Line a baking sheet with aluminum foil.
