I usually keep frozen burritos stocked in my freezer just for this recipe. It's so quick and easy, and tastes delicious. Can be served with tortilla chips and a salad. Or double the sauce, and serve over rice.

6 frozen bean and cheese burritos
1 (10.5 ounce) can condensed cream of chicken or cream of mushroom soup
½ cup sour cream
1 (4 ounce) can diced green chile peppers, drained
1 cup shredded Cheddar cheese
1 medium tomato, chopped
1 avocados - peeled, pitted and sliced
1 (2.25 ounce) can sliced black olives, drained
½ cup salsa

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C).
  • Place the burritos in a row across the bottom of a 9x13 inch baking dish. In a medium bowl, stir together the cream of chicken soup, sour cream and chile peppers. Spread evenly over the top of the burritos. Sprinkle with shredded cheese.
  • Bake for 25 to 30 minutes in the preheated oven, until cheese is slightly browned and burritos are heated through. Serve with tomato, avocado, olives and salsa.

1 medium onion, diced
2 pounds ground beef
1/2 teaspoon ground cumin
1/4 teaspoon chili powder
1/4 teaspoon ground oregano
1/4 teaspoon salt
Three 7-ounce cans Mexican tomato sauce (I use El Patobrand) or enchilada sauce
One 28-ounce can refried beans
3/4 cup grated Cheddar, plus extra for sprinkling
12 burrito-size flour tortillas
1/2 cup fresh cilantro leaves

Steps:

  • Preheat the oven to 170 to 180 degrees F.
  • In a large skillet over medium heat, cook the onions until softened. Then add the ground beef and cook until the beef is cooked through. Add the cumin, chili powder, oregano and salt and stir to combine. Pour 2 cans of the Mexican tomato sauce into the meat and simmer over low heat for 5 minutes. Add a little water if the mixture gets too dry.
  • Meanwhile, heat the refried beans in a saucepan over medium-low heat. Add the cheese, and stir it in till its melted. Remove from the heat.
  • Heat the tortillas in the microwave for 1 minute, and then spread a small amount of beans on each tortilla. Add a small amount of the meat. Fold over the ends of the tortilla, and then roll them up. Repeat with the rest of the tortillas. Then place them in a large baking dish, cover with foil and keep warm in the oven.
  • When ready to serve, drizzle the remaining can of tomato sauce over all of the burritos and sprinkle with more grated Cheddar. Return to the oven for a couple of minutes just to melt the cheese.
  • Sprinkle the tops with the cilantro leaves and serve immediately to the fork-bangers in your life. They'll kiss you and hug you. Repeatedly.

1 cup cooked long grain rice

Steps:

  • Preheat oven to 375°. In a large bowl, combine beans, salsa, rice and 1 cup cheese. Spoon about 1/3 cup off-center on each tortilla. Fold the sides and ends over filling and roll up. , Arrange burritos in a greased 13x9-in. baking dish. Sprinkle with remaining 1 cup cheese. Cover and bake until heated through, 20-25 minutes. If desired, topped with lettuce.

2 tablespoons olive oil
2 medium onions, chopped
4 garlic cloves, chopped
1 jalapeno chile, chopped (ribs and seeds removed, for less heat)
1/2 teaspoon ground cumin
Coarse salt and ground pepper
3 tablespoons tomato paste
3 cans (15 ounces each) pinto beans, drained and rinsed
1 bag frozen corn kernels (10 ounces)
6 scallions, thinly sliced
8 burrito-size flour tortillas, 10 inches each
2 cups (8 ounces) shredded Monterey Jack cheese
Salsa and sour cream, optional

Steps:

  • Cook rice according to package instructions; set aside.
  • Meanwhile, heat oil in a large saucepan over medium. Add onions, garlic, jalapeno, and cumin; season with salt and pepper. Cook, stirring occasionally, until golden, 10 to 12 minutes. Add tomato paste, and cook, stirring, 1 minute.
  • Add beans and 1 1/2 cups water; bring to a boil, reduce heat to medium, and simmer, stirring occasionally, until thickened, 10 to 12 minutes. Add corn; cook to heat through, 2 to 3 minutes. Remove from heat; stir in scallions.

1/2 teaspoon dried oregano
1/2 teaspoon ground cumin
One 14-ounce can chili beans, (drained)
1 cup bottled chunky salsa
1/3 cup grated Parmesan cheese
Eight 8-inch flour tortillas
2 cups shredded Cheddar- Jack cheese
3 whole green onions, (chopped)
sour cream, salsa and avocado for serving ((optional))

Steps:

  • In a large nonstick skillet, cook the beef and onion over medium heat until the meat is no longer pink. Spoon out any fat. Add the garlic, oregano, cumin and beans. Continue to heat for about 5 minutes, then stir in 1 cup of the salsa and the Parmesan cheese.
  • Preheat the oven to 350 degrees F. Spray a 13x9-inch glass baking dish with nonstick spray.
  • Spoon about 1/2 cup of the beef/bean mixture onto the center of a tortilla. Roll up tightly and place the filled tortilla seam-side-down in the pan. 1 1/2 lbs ground beef or 1 1/2 lbs beef roast, shredded
salt and pepper
1 (15 ounce) can refried beans
1 (4 ounce) can green chilies, diced
10 flour tortillas
2 cups green chili sauce (canned green enchilada sauce works well if you don't wish to make green chili)
2 cups shredded cheese
2 cups shredded romaine lettuce
2 large tomatoes, diced
sour cream

Steps:

  • Brown the ground beef with the salt and pepper to taste (if using shredded meat that has already been cooked, skip this step.
  • Mix the meat, beans and green chilies together.
  • Cut the tortillas in half; lay them in a 9 x 13 rectangular pan, placing the cut edges square to the side of the pan, over lapping as needed.
  • Spread 1/3 of the meat and bean mixture on top of tortillas.
  • Pour 1/2 cup of the sauce over the meat.

1 pound ground beef
1- 15 ounce can chili beans ( I use Bush's Chili Beans because they are gluten free)
1 1/2 cups salsa
1 cup shredded cheddar cheese
12 corn tortillas ( If you are gluten free be sure they are 100% corn)

Steps:

  • In a skillet brown ground beef until done and no longer pink. Drain off any fat. Let meat mixture cool completely.
  • Stir in chili beans.
  • Line a 9x13 freezer safe pan with 6 tortillas. Cutting if needed to fit pan.
  • Layer meat mixture onto tortillas.
  • Sprinkle with half of the cheese.
  • Place remaining 6 tortillas on top of cheese. Cutting if needed to fit pan.
  • Spread salsa on top of tortillas.
  • Sprinkle with remaining cheese.
  • Cover with foil or freezer safe lid and freeze.
  • Defrost and bake at 350 degrees for 25-30 minutes or until heated through.
  • You can bake this from frozen, but it will take about 60 minutes to heat completely through. Do not put a cold/frozen glass dish in a hot oven.

For the filling
1 onion, chopped fine
4 garlic cloves, minced
3 tablespoons olive oil
two 1-pound cans black, pinto, or pink beans, rinsed and drained
1 cup tomato sauce
2 teaspoons ground cumin
4 fresh or pickled jalapeño chilies if desired, seeded and chopped (wear rubber gloves)
1/4 cup chopped fresh coriander if desired
twelve 7- to 8-inch flour tortillas warmed
1 1/2 cups grated Monterey Jack (about 6 ounces)
guacamole and tomato salsa as accompaniments

Steps:

  • Make the filling:
  • In a large heavy skillet cook the onion and the garlic in the oil over moderately low heat, stirring, until the onion is softened, add the beans, and mash about half of them coarse with the back of a wooden spoon. Add the tomato sauce, the cumin, the chilies, and salt and black pepper to taste, simmer the mixture, stirring, for 3 to 5 minutes, or until it is thickened slightly, and stir in the coriander.
  • Working with 1 warmed tortilla at a time and keeping the others covered, spread about 3 tablespoons of the filling down the center of each tortilla and roll the tortillas, enclosing the filling but keeping the ends open. Arrange the burritos, seam sides down, in one layer in a baking dish, sprinkle them with the Monterey Jack, and bake them, covered with foil, in the middle of a preheated 350°F. oven for 10 minutes. Serve the burritos with the guacamole and the salsa.
