1/2 cup old fashioned rolled oats
1/2 cup almond milk (or water, or low-fat milk)
Pinch salt
1 tablespoon brown sugar (optional)
1/2 cup sliced fruit (peaches, nectarines, plums, blueberries)
1/4 cup Greek yogurt
1 tablespoon honey

Steps:

  • 1 Combine rolled oats, almond milk, salt and brown sugar in a Mason jar; shake to blend. Cover and refrigerate overnight. 2 Top oats with 1/4 cup fruit, Greek yogurt, remaining fruit and honey.

  • Refrigerate oatmeal, 8 hours to overnight.

1 cup plain low-fat yogurt
1 cup mixed diced dried fruit, such as dates, prunes, figs and apples
1/2 cup chopped toasted hazelnuts or almonds
2 tablespoon honey
4 1/2 teaspoons fresh lemon juice
Additional honey (optional)
Additional yogurt (optional)

Steps:

  • Combine oats, 1/2 cup yogurt, fried fruits, nuts, honey and lemon juice in medium bowl; stir to blend. Refrigerate at least 1 hour and up to 6 hours.
  • Stir remaining 1/2 cup yogurt into mixture. Serve, passing additional yogurt and honey, if desired.
