CALIFORNIA VEGGIE SANDWICH



California Veggie Sandwich image

We like sandwiches that send juices running down to our elbows, which is why we insist on dressing the lettuce. If you want to use store-bought giardiniera, skip the first step.

For the pickled vegetables:
2 cups apple cider vinegar
1/2 cup (packed) light brown sugar
1/4 cup kosher salt
4 cups any combination shredded carrots, sliced cucumbers, sliced red onions, and/or sliced mild fresh chiles
For the dressing and assembly:
1/4 cup buttermilk
1/4 cup plain whole-milk Greek yogurt
1 tablespoon fresh lemon juice
6 tablespoons olive oil, divided
Kosher salt, freshly ground pepper
2 ripe avocados, halved
6 ounces fresh goat cheese
6 cups mixed lettuce leaves, ribs removed if thick
8 slices multigrain bread, toasted
1/2 English hothouse cucumber, thinly sliced on a diagonal
2 cups sprouts
Special Equipment
2 heatproof 1-qt. glass jars

Steps:

  • Make the pickled vegetables:
  • Bring vinegar, brown sugar, salt, and 2 cups water to a boil in a large saucepan. Meanwhile, pack vegetables into jars. Pour brine over vegetables. Cover and chill until cool.
  • Make the dressing and assemble:
  • Whisk buttermilk, yogurt, lemon juice, and 3 Tbsp. oil in a large bowl until smooth; season dressing with salt and pepper.
  • Scoop avocados into a small bowl; add 1 Tbsp. oil and lightly mash. Season with salt and pepper. Mash goat cheese with remaining 2 Tbsp. oil in another small bowl until softened and spreadable; season with salt and pepper.
  • Add lettuce to dressing and toss to coat; season with salt and pepper. Spread avocado mixture over 4 slices of bread. Arrange lettuce over and top with cucumber, sprouts, and some drained pickles. Spread remaining 4 slices of bread with goat cheese and close sandwiches.
  • Do Ahead
  • Pickles can be made 2 weeks ahead. Keep chilled.

A longtime favorite sandwich of mine, since first trying the California Sandwich many moons ago at a little "healthfood" deli stand in Pacific Beach, California. This is my version. Use recipe #173076 for ease of preparation. Also good with thinly sliced tomatoes, in place of the cucumbers. I hope you enjoy!

8 slices whole wheat bread or 8 slices sourdough bread
8 slices deli smoked turkey (or leftover turkey breast slices)
4 slices provolone cheese
4 slices crisp cooked bacon (optional)
1 avocado, sliced into thin strips (optional)
16 slices cucumbers, very thinly sliced (or thin tomato slices)
1/2 cup alfalfa sprout (or lettuce)
mayonnaise
whipped cream cheese

Steps:

  • Toast bread lightly.
  • Spread 4 slices toasted bread with mayo, and the other 4 slices with cream cheese.
  • Assemble the sandwiches:.
  • For each sandwich use one slice mayo toasted bread and one slice cream cheese toasted bread. Per sandwich use 2 smoked turkey slices, 1 provolone cheese slice, 1 bacon, avocado strips, 4 thin cucumber or tomato slices, and sprouts or lettuce.
  • Enjoy!

CALIFORNIA CLUB SANDWICH



California Club Sandwich image

A signature trademark of the California club sandwich is the use of avocado, either sliced or as guacamole. This recipe was adapted from www.food.com, and although not stated in the ingredients, you can also add slices of either Cheddar or Swiss cheese like Gruyère to make the sandwich richer and more filling.

3 slices white bread
3 tbsp mayonnaise
2 romaine lettuce leaves
4 slices plum tomatoes
1/2 avocado, sliced
4 slices crisp bacon
4 oz (120g) chicken breasts, sliced
freshly ground black pepper, to taste
salt, to taste

Steps:

  • To prepare the bread, toast it whichever way you like, in the oven, in a toaster, or under a broiler. Both sides must be toasted.
  • Spread one side of each bread slice with mayonnaise. Top two of the bread slices in the following order. Lettuce, two tomato slices, seasoning of salt and pepper (to taste), two slices of bacon, chicken slices, avocado slices, and again a seasoning of salt and pepper to taste.
  • Place one layered bread slice chicken side up onto the second layered bread slice and then cover everything with the remaining bread slice mayonnaise side down.
  • Secure the sandwich layers by inserting through the top four toothpicks in a diamond-like pattern. Make sure that you've pierced the sandwich all the way to the bottom.
  • With a serrated knife, cut the sandwich into four triangular pieces.

3 tablespoons olive oil
2 tablespoons soy sauce
1 tablespoon lime juice (or lemon)
1 tablespoon brown sugar
1 lb flank steak
1/2 teaspoon kosher salt, to taste
1/4 teaspoon fresh ground black pepper, to taste
1 -2 sweet onion, circular slices
1 cup arugula
6 tablespoons butter, softened (3/4 of a stick)
2 garlic cloves
1/3 cup parsley, flat leafed, finely chopped
4 slices bread, you're favorite, I use Texas toast or 4 slices sliced sourdough bread

Steps:

  • In a large bowl, whisk together olive oil, soy sauce, lime juice and brown sugar. Add steak and toss until coated. Marinate for at least 30 minutes or up to 2 hours.
  • Remove steak from marinade and pat dry with paper towels. Season lightly with salt (remembering there was soy sauce in the marinade) and pepper.
  • To grill: Preheat grill to medium-high. Place on grill and cook steak to your liking, about 6 minutes per side for medium-rare. (Cooking time will vary due to thickness of your steak.).
  • To broil: Preheat oven broiler to high. Place steak on a sheet pan and cook, turning once halfway, until cooked to your liking, about 6 minutes per side for medium-rare. (Cooking time will vary due to thickness of your steak.).
  • For the onions: Cut the onion into 4 (1-inch thick) slices. Remove the outer ring of skin from each slice. Drizzle the sliced onion with light colored oil and season both sides with steak seasoning or salt and pepper, to taste. Grill on hot grill or on a nonstick griddle for 5 to 7 minutes on each side until onion is tender and has begun to caramelize. (I use a small metal skewer to hold the onions together) easier to flip over.
  • For the Garlic bread: Combine the butter, chopped parsley and garlic in a food processor or with a mixer until smooth. Season with salt and pepper. Spread on both sides of bread and place in a pan over medium heat until toasted, flip and repeat.
  • For the seasoned Arugula: Place in a bowl, lightly squirt some olive oil and season with salt and pepper.
  • Garlic toast, arugula, steak and top the steak with the caramelized onions and the other piece of garlic toast -- enjoy!

Steps:

  • Preheat oven to 350°F. Spread bottom half of croissant with mustard; spread top half with dressing. Set top aside. Layer turkey and cheese on bottom half of croissant; place on baking sheet.
  • Bake 5 minutes or until cheese is melted; top with avocado.

1/3 cup mayonnaise
2 tablespoons thawed orange juice concentrate
1 teaspoon lime juice
1/2 teaspoon ground cumin
1/8 teaspoon hot sauce
4 (4 ounce) boneless skinless chicken breast halves
1/4 teaspoon salt
1/8 teaspoon black pepper
8 slices loaf sourdough bread, thick slices (diagonally cut and toasted)
4 small romaine lettuce leaves
2 plum tomatoes, each cut lengthwise into 4 slices
1 peeled avocado, cut into 8 wedges

Steps:

  • To prepare citrus mayonnaise, combine first 5 ingredients in a small bowl.
  • To prepare the sandwiches, sprinkle chicken with salt and pepper.
  • Heat a large non stick skillet over medium-high heat and add chicken. Coat skillet with cooking spray if desired.
  • Cook chicken 5 minutes on each side.
  • Reduce heat to low.
  • Cover and cook 5 more minutes until done. No pink is showing.
  • Remove chicken from skillet and cut diagonally across grain into thin slices.
  • Spread 1 tablespoon of citrus mayonnaise on each of 4 bread slices.
  • Top with 1 lettuce leaf, 1 chicken breast half (sliced), 2 tomato slices, 2 avocado wedges and remaining bread slices.
  • Add additional citrus mayonnaise to top bread slice if desired.
