BASIC BAGEL (FOR THE BREAD MACHINE)
Is there anything as simple or as versatile as a bagel? This recipe turns dough into sweet, moist chewy bagels that will last for days!

Steps:
- Remove dough from the machine after the first knead- approximately 20- 30 minutes.
- Place dough on floured surface.
- Divide into 8 parts.
- Form balls, gently press thumb through center of ball and slowly stretch into bagel shape.
- While bagels rise, bring 3 quarts water and 1 TBS sugar to a rapid boil in a large sauce pan.
- Drop test dough (see first success hint).
- Using slotted spoon, drop 2-3 bagels into rapidly boiling water.
- Boil on each side for 1 1/2 minutes.
- Remove and cool on rack 1 minute, brush with egg wash and sprinkle with sesame or poppy seeds, if desired.
- Bake at 400°F on a baking sheet sprinkled with cornmeal, until golden brown- approximately 15 minutes.
- Bagel Success Hints: When forming bagels, set aside two 1/4" balls of dough.
- When bagels have doubled in size, drop the test dough into boiling water.
- Dough should pop to the top right away.
- When this happens, it is time to boil the bagels.
- A quick spray of non-stick vegetable coating on the top of the bagel may be substituted for the egg wash.
- To make bagel sticks, cut bagel before rising and lay out in a straight line.
- Roll sticks in a combination of sesame and poppy seeds with a pinch of garlic powder.
- Let sticks rise, boil, and bake as described in Basic Bagel process steps above.
- To make bagel chips, slice leftover bagels horizontally into thin slices.
- Brush with butter or margarine on one side.
- Lay (butter side up) on ungreased cookie sheet and bake at 325°F for 12-15 minutes or until golden brown and crisp.
CINNAMON RAISIN BAGELS (BREAD MACHINE)
Hot from the oven or toasted these bagels are great! for a flavor change, soak the raisins in your favorite sweet liquor instead of water.

- Measure first 5 ingredients into bread machine in the order recommended by the manufacturer.
- Select dough setting.
- When cycle is completed, remove the dough from the machine.
- Place dough on a floured surface.

- Boil on each side for 1 to 2 minutes.
- Remove and cool on wire rack 1 minute.
- Brush with egg wash and sprinkle with sesame or poppy seeds, if desired.
- Bake at 400 degrees on a baking sheet sprinkled with cornmeal until golden.

CHEESY BREAD MACHINE BAGELS
I developed this recipe from an asiago cheese bagel recipe. Any shredded cheese will work, I like cheddar, but a more flavor neutral white pizza cheese blend makes them work a little better for us. My son even likes to put peanut butter on them because the cheese flavor is not overpowering. You may need to add a little extra water if the ball of dough is too stiff, depending on the type of cheese you use. This recipe can easily be halved, and you could make this with out a bread machine by mixing and kneading by hand. You may add 1 more tsp. yeast for fluffier bagels. This recipe is so simple. My whole family loves them, and hardly wait until they are cool enough to eat.

- Combine water, cheese, sugar, salt, flour, and yeast in the bread machine. I let the cheese kind of melt into the water for a minute before adding the remaining ingredients. Use the dough setting on your bread machine. If you machine doesn't have a dough setting stop it after the second kneading.
- Remove the dough after it has finished rising in the bread machine and divide into 12 equal pieces.
- Roll each piece into a ball.
- Using fingers, poke a hole in the middle and form into a bagel shape.
- Pre-heat oven to 375 degrees.
- Let rise under a wet tea towel or paper towels for 30 more minutes.
- While bagels are rising, start boiling a large pot of water with 3 TBS of sugar.
- After bagels have risen boil each side for 30 seconds, place on dry paper towels to dry before transferring to cornmeal dusted pan. (I divide them between 2 jellyroll pans).
- Use a pastry brush to brush the egg whites on top of the bagels.
- You can sprinkle extra cheese on top of bagels for a caramelized cheese crunch.
- Bake for 20-25 minutes. Turning the pans halfway for even baking.
- Cool for 5 minutes on wire rack and enjoy!
HOMEMADE BAGELS

- Combine the water, yeast, and 3 tablespoons of the sugar in the bowl of an upright mixer fitted with a dough hook. Stir and let stand until foamy, about 5 minutes. Gradually add 4 cups of the flour and the salt, and mix until the mixture comes together.
- Add 1 to 1 1/2 cups additional flour 1/2 cup at a time to make a stiff dough, either stirring with the wooden spoon or working with your hands. Turn out onto a lightly floured surface and knead until smooth and no longer sticky, about 5 minutes, adding just as much flour as needed. (Dough should be heavier and stiffer than regular yeast bread dough.)
- Grease a large bowl with 1 teaspoon of the oil. Place the dough in the bowl, turning to coat. Cover and let rise in a warm, draft-free spot until almost doubled, about 1 hour.
- Grease a baking sheet with the remaining teaspoon of oil.
- Remove the dough from the bowl and punch it down. Divide into 12 equal pieces, about 2 to 3 ounces each, measuring about 4 inches across. Form each piece of dough into a ball. Roll each ball into a 4 to 6-inch log. Join the ends and place fingers through the hole and roll the ends together. Repeat with the remaining dough. Place on the prepared baking sheet, cover with a clean cloth, and let rest until risen but not doubled in a draft-free spot, 20 to 30 minutes.
- Preheat the oven to 400 degrees F.
- Sprinkle the cornmeal on another baking sheet.
- In a large, heavy pot, bring 12 cups of water and the remaining tablespoon of sugar to a boil. In batches, add the bagels to the water and boil, turning, for 30 seconds to 1 minute. Dip the bagel tops in desired toppings. Flip bagels onto the prepared sheet pan. Bake for 5 minutes, turn over and cook for another 30 to 35 minutes.
- Remove from the oven and let cool on a wire rack.
BREAD MACHINE BAGELS

BEAUTIFUL BAGELS - (USING BREAD MACHINE TO MAKE THE DOUGH)
These are what I would desribe as "best ever bagels". They are crisp on the outside and soft and chewy on the inside. I've had this recipe for years - and was passed on to me by another bagel lover. They are especially nice eaten whilst they are still warm, spread with Philadelphia Cream Cheese, thin slices of smoked salmon, a good squeeze of lemon juice and some freshly ground black pepper! They are also very nice for breakfast,toasted and spread with Philadelphia Cream Cheese,and raspberry jam!

- Place all the above ingredients into bread machine, and select'dough' cycle.
- Stop the bread machine 40 minutes after the mixing starts (1 hour and 10 minutes from beginning of dough cycle).
- Tip bagel dough out onto a lightly floured surface and gently knead by hand for about 1 minute.
- Cut dough into 8 pieces.
- Roll and'gently massage' each piece into a snake.
- Dampen and overlap the ends pressing firmly to form a ring.
- Place each ring on an individual piece of baking paper already lightly sprayed with oil.
- Cover all rings with a sheet of baking paper and allow to rest.
- Meanwhile, bring a large pan of water to the boil.
- Carefully lowering each bagel one by one (about 4 at a time) into the pan of boiling water, slide the paper from each bagel ring away.
- Gently turn bagels allowing about 40 seconds on each side.
- Lift each bagel out and drain on absorbent paper towels.
- Place drained bagels on baking baking tray already lined with baking paper.
- Brush each bagel with lightly beaten egg mixed with 1 tablespoon water and 1/2 teaspoon of salt and sprinkle with lots of poppy seeds or toasted sesame seeds.
- Bake in hot oven (220'C, Gas mark 7) for about 15 minutes- or until a nice deep golden brown colour.
- Remove bagels from oven and place on wire rack.
