48 oz crushed tomatoes
48 oz great northern beans
16 oz bushs grilling beans (bourbon style)
12 oz beef broth, reduced sodium
1 large sweet yellow onion
3 medium cloves garlic
1/2 c brown sugar
4 c leftover pork roast, cubed
3 Tbsp cajun seasoning
1 tsp white pepper
2 tsp thyme, dried

Steps:

  • 1. In a large (6qt) crock pot put tomatoes, beans, broth, brown sugar and seasonings. Dice onion and garlic and add to pot. Cube left over pork roast and stir in.
  • 2. Let cook on high for 3-4 hours. Serve with cornbread.

1 (31 ounce) can pork and beans
6 tablespoons catsup
4 tablespoons Worcestershire sauce
1/4 cup dark brown sugar
1/2 cup barbecue sauce
1 dash Tabasco sauce (to taste)

Steps:

  • Pre-heat oven to 350.
  • Brown ground beef in a large skillet and pour off the grease.
  • Stir in the onion and bell pepper and saute.
  • Transfer beef mixture to a 2-quart casserole and add remaining ingredients and mix well.
  • Dish can be refrigerated at this point and baked when ready to serve.

3 tablespoons bacon grease
¼ cup chopped salt pork
1 ½ cups chopped yellow onion
¾ cup chopped celery
¾ cup chopped green bell pepper
½ teaspoon freshly ground black pepper
1 pinch chipotle chile powder
½ pound smoked sausage, split in half and cut into 1-inch pieces
3 bay leaves
2 tablespoons chopped fresh parsley
2 teaspoons chopped fresh thyme
3 tablespoons chopped garlic
water as needed

Steps:

  • Place the pinto beans into a large container and cover with several inches of cool water. Soak beans 15 minutes; drain and rinse.
  • Heat bacon grease in a large pot over medium-high heat. Cook and stir salt pork in hot grease for 1 minute. Add onion, celery, bell pepper, black pepper, and chipotle powder to salt pork; cook and stir until the vegetables are soft, about 4 minutes.
  • Stir smoked sausage, bay leaves, parsley, and thyme into salt pork mixture; cook and stir until sausage is browned, about 4 minutes. Add garlic and cook until fragrant, about 1 minute more.
  • Stir beans into sausage mixture and add enough water to cover the beans. Bring to a boil, remove from heat, and transfer beans mixture to a slow cooker.
  • Cook on High for 1 hour. Reduce to Low and cook until beans are tender, adding water as necessary, about 6 hours more.
  • Mash about 1/4 the beans against the side of the slow cooker crock with the back of a heavy spoon. Continue cooking on Low until beans are tender and creamy, 15 to 20 minutes more. Remove bay leaves.

This is a spicy mild to medium hot recipe, to make a very mildly hot recipe, use only 1/4 teaspoon each of the three peppers.

3 (15 ounce) cans pork and beans, . (I prefer Van Camp's brand, drained, with pork cubes removed)
1/2 cup bacon bits or 3/4 lb smoked ham
1 cup catsup
1/2 cup brown sugar
1 cup onion, diced
3/4 cup green bell pepper, diced
1/4 cup celery, diced
1/2 teaspoon black pepper
1/2 teaspoon cayenne pepper
1/2 teaspoon white pepper
1/2 teaspoon salt (or salt substitute)

Steps:

  • Fry the bacon in a large frying pan until crisp. Let cool, then crumble the bacon, then mix all the ingredients together well except for the beans, then add beans and mix gently, so as not to mash up the beans. Precooked, crumbled bacon bits can be substituted for the freshly cooked bacon.
  • An alternative to bacon is to use smoked ham. Slice ham into 1/8 inch cubes and place in a mixing bowl. Sprinkle the ham with a mixture of one-quarter cup brown sugar and one-quarter cup white sugar, mix until the ham is well coated, then brown ham in a frying pan until the sugars caramelize and begin to turn brown/black. Then mix all ingredients except the beans together, then add beans and mix gently, so as to not mash up the beans.
  • Pour bean mixture into a 10 x 10 inch baking dish, cover with tin foil and bake at 300 degrees for 30 minutes or longer, until bubbling well around the edges of the baking dish, then remove tin foil, and broil at 400 degrees 5 to 10 minutes, until top browns/blackens slightly. This browning/blackening adds a very good caramelized flavor to the dish, and does not taste burned at all.
  • This makes a mild to medium spicy recipe, to make a very mild recipe, use only 1/4 teaspoon each of the three peppers.

4 bone in, pork loin chops, 1/2" thick
1 onion, yellow, medium
16 oz frozen, baby lima beans, thawed
1-2 Tbsp olive oil
salt and pepper
3 c hot water
1 Tbsp all purpose flour, dissolved in 1/4 c. cool water
4 servings, cooked rice

Steps:

  • 1. Cut a slight slit on the curved sides of the pork chops, for them not to curl up while browning them.Season the pork chops on both sides with salt and pepper. Add olive oil, just to cover the bottom of a large skillet. Heat oil on high, fit the four pork chops flat in the skillet. Brown the chops on both sides, as much as you can, on high heat, but not burnt. Transfer the chops from the skillet and place them in the bottom of the crock-pot.
  • 2. Add the chopped onions to the skillet and sauté until softened, about a minute. Add 2 cups of hot water to the skillet and the baby lima beans. Stir to scrap up all the tasty bits, from the browned pork chops. Transfer ingredients from the skillet to the crock-pot, on top of the pork chops. DO NOT stir. Cover and DO NOT uncover, unless to add more hot water to cover the top of the beans.
  • 3. Cook on high for 2 hours. Check the beans by taste, to see if they are tender and the pork chops at the bottom should be tender, also. Don't let the water get below your beans.
  • 4. Measure one tablespoon of flour, add the 1/4 cup of cool water. Stir to dissolve, without lumps. Add slowly to the crock-pot and stir gently, to thicken for a sauce texture. Taste sauce for seasoning and add some Tony Cachere's seasoning or whatever seasoning to your taste (celery salt).
  • 5. Serve over, a serving of cooked rice.

1 lb dry beans(sm red, kidney, or pinto)
2 large yellow onions
2-3 Tbsp chopped garlic
3 large celery stalks
1 c 1 lg bell pepper - green, red - combo
1 Tbsp worcestershire sauce
2 tsp bottled hot sauce - or to taste
4 qt water - 16 cups
1 Tbsp thyme, dried
1 Tbsp oregano
1 tsp cayenne pepper
1 tsp onion powder
1 tsp garlic powder
3 Tbsp parsley, dried
1 small bay leaf
2 tsp salt
1/2 tsp black pepper
12-16 oz smoked sausage
1-3 optional - 1 whole smoked ham hock, or 3-4 pieces smoked ham ends

Steps:

  • 1. To shorten cooking time, you can soak your beans 6-10 hours ahead. Drain and rinse then proceed.
  • 2. Place beans in a soup/stock pot and add water. Place over high heat and begin to prep other ingredients.
  • 3. Chop celery, onion, garlic, and peppers, adding to pot. Add all remaining ingredients except smoked sausage.
  • 4. During the cooking process, add water as needed to ensure a fairly loose boil. Cook at a low boil for 1 1/2 hours, and check the beans for tenderness. Add smoked sausage and continue cooking till beans are completely tender.
  • 5. At this point the pot can be thickened or left more soup like. To thicken, remove some of the beans from the pot, mash them with a potato masher and return to the pot. In addition, you can increase the heat and reduce by boiling rapidly for several minutes. Adjust seasoning if needed and serve over hot white rice.
