1 garlic clove, (minced)
5 cups shredded cabbage ((about 2 1/2 pounds; red, green or a mix))
1 cup shredded carrots ((about 2-3 medium carrots))
1 medium red bell pepper, (sliced into thin strips)
1/2 cup chopped scallions ((about 2 scallions))
1/4 cup chopped fresh cilantro
1 teaspoon toasted sesame seeds

Steps:

  • To make the dressing, stir the rice vinegar, soy sauce, maple syrup, sesame oil, sriracha, ginger and garlic together in a small bowl.
  • Place the cabbage, carrots, bell pepper, scallions and cilantro into a large mixing bowl.
  • Add the dressing to the mixing bowl, and everything well to coat the veggies.
  • Taste test and adjust any seasonings to your liking.
  • Sprinkle with sesame seeds. Serve immediately or cover and chill.

2 tablespoons sesame seeds
1 1/2 tablespoons rice or white wine vinegar
1/2 teaspoon sesame oil
2 tablespoons honey
1 tsp Soy Sauce
1/4 teaspoon black pepper
1/3 cup mayonnaise
4 cups shredded cabbage
2 carrots, medium
2 scallions sliced

Steps:

  • Cut the cabbage very thinly. You could use a food processor as well for this, but I like cutting it myself. To do this, cut it into large chunks or slices so it is more manageable. Then slice very thin and transfer to a large mixing bowl.
  • Shred the carrots using the large side of a grater. Or use your food processor. Thinly slice the scallions. Place both in the same bowl with the cabbage.
  • Place sesame seeds in a pre-heated pan on low heat and stir constantly for a minute until slightly fragrant
  • In a small bowl, mix together vinegar, sesame oil, Soy sauce, mayonnaise, honey, pepper
  • In a large bowl, mix together cabbage, carrots, and scallions. Toss with dressing to coat evenly. Top with toasted sesame seeds

½ teaspoon each: finely minced ginger and garlic
1 lb thinly shaved cabbage (I like half purple and half green cabbage)
2 carrots (sliced into thin strips (a mandolin works great for this))
1 red pepper (thinly sliced)
½ cup roasted salted cashews
3 mandarin oranges (peeled and segmented)
¼ cup cilantro (chopped)

  • Place all the ingredients in a 2 cup glass jar and give it a good shake. It's ready to go when it's creamy. Note: if your tahini is very thick, mix it with the orange juice first then add the rest of the ingredients and shake.

I always like to have a few salads at my BBQ to balance out the heavier stuff. Cole slaw is one of the classics, and I love it, but I like to make it my own by mixing in a few Asian flavors. I use the pre-shredded coleslaw mix that comes in bags at the supermarket or for red and green shredded cabbage packaged separately. And then I dress it up with some other fresh ingredients to make an outstanding and different kind of slaw.

1 bunch (6 large) scallions, trimmed and thinly sliced
2 (16-ounce) bags coleslaw mix or 1 (16-ounce) bag each of shredded green and shredded red cabbage
1 small red onion, thinly sliced
1/4 cup soy sauce
1/4 cup lemon juice
1/4 cup vegetable oil
2 tablespoons grated fresh ginger (from about a 1-inch piece)
2 tablespoons white vinegar
2 tablespoons dark brown sugar
2 teaspoons Asian sesame oil
2 teaspoons sesame seeds, optional
1 teaspoon salt
20 grinds black pepper

Steps:

  • Rough up the scallion slices a little with your fingers so all the little layers of the scallion whites separate. Toss the coleslaw mix or both kinds of cabbage, the red onion and scallions together in a large bowl until everything is thoroughly mixed. You can make the slaw up to this point up to a day in advance as long as you keep it refrigerated. Before serving, simply bring the slaw back to room temperature, make the dressing and toss.
  • Stir the remaining ingredients together in a small bowl until blended, then pour over the vegetables. Serve within 1 hour of dressing or the cabbage will get wilty and sad.
