SPOOKY HALLOWEEN EYEBALLS
These taste like Peanut Butter cups. They are fun to make and kids really get a kick out them. A bit time consuming, but the end-product is worth it.

Steps:
- Beat the peanut butter and butter with an electric mixer in a large bowl until smooth. Beat in the sugar and vanilla. Cover and refrigerate for 30 minutes. Roll chilled dough into small, eyeball-sized balls and place on 2 baking sheets lined with wax paper. Refrigerate for another 30 minutes.
- Melt the white chocolate and shortening in a microwave-safe glass or ceramic bowl in 30-second intervals, stirring after each melting, for 1 to 3 minutes (depending on your microwave). Do not overheat or chocolate will scorch. Dip each eyeball into the white chocolate and transfer to the waxed paper until the chocolate has set. You can chill them in the refrigerator.
- Stir a few drops of blue food coloring into the remaining melted white chocolate. Make a round "iris" on the top of the cooled eyeball and press a mini chocolate chip in the center for a "pupil." For an extra spooky bloodshot eyeballs take a toothpick dipped in red food coloring and make squiggly lines on the eye.

- Using a paring knife, scrape off most of the red skin from the radish, leaving just enough red to give the radish a veined appearance. Rinse radishes.
- Using a very small melon baller, cut a small hole in the stem end of each radish. Insert an olive half, cut side out, into each hole; serve.

- Cut olives in half, set aside.
- With a peeler, or citrus zester, scrape radish skins off making sure to leave some of the red skin in tact.

- Supplies. All you need to make these are: large, round red radishes. blueberries. a pairing knife. short bamboo skewers* *These are a great way to help keep the eyeballs 'floating' in cocktails or to add them to Halloween themed flower arrangements.
- Making Bloodshot Eyeballs. Choose the roundest, most eye sized radishes of the bunch. Then use a pairing knife to remove the end of the greens and the tip.
- Carve Out the Iris Cavity. Using the pairing knife, carve out a blueberry sized 'iris' cavity in each radish eye where the greens were connected.
- Install the Iris. Put a blueberry into each iris cavity and press it into place. The blueberry will stay put as long as it isn't turned upside-down or shaken.
- Eyeballs on Sticks. If you're planning on adding these to a cocktail or some other vertical arrangement, where you want to control their placement, press them onto bamboo skewers.
