Artichoke hearts, fresh vegetables and Italian salad dressing combine to make this no-fuss favorite from Ann Marie Petri. "I always take this salad to get-togethers," says the Barron, Wisconsin cook. "A special event wouldn't be the same without it."

1 can (14 ounces) water-packed artichoke hearts, rinsed, drained and quartered
1 medium tomato, cut into wedges
1/2 cup chopped green pepper
1/3 cup chopped red onion
1/4 cup prepared Italian salad dressing

Steps:

  • In a large bowl, combine the artichokes, tomato, green pepper and onion. Drizzle with salad dressing; toss to coat. Cover and refrigerate for at least 1 hour.

Put ripe and juicy tomatoes centre-stage in this simple side dish, dressed with basil oil - perfect with grilled or barbecued meats

small pack basil , very finely chopped, plus a few small leaves to serve
4 tbsp extra virgin olive oil
600g tomatoes (a selection of sizes and colours looks good)
1 small red onion , finely sliced
175g chargrilled artichokes in oil, from a jar

Steps:

  • Make the dressing by combining the chopped basil with the olive oil in a small bowl. Season well.
  • Slice the larger tomatoes, leaving smaller ones whole or halved. Lay them on a platter, then top with the onion slices and artichokes. Scatter over the basil leaves, drizzle over the dressing and add a good grinding of black pepper.

1 lemon
2 pounds baby artichokes (about 18)
6 tablespoons olive oil
4 garlic cloves, thinly sliced
1 teaspoon dried herbes de Provence*
1/2 cup canned vegetable broth
1/3 cup dry white wine
8 ounces fresh crimini mushrooms, quartered
Oven-dried Tomatoes
Green-Olive Dressing
Lemon slices

Steps:

  • Fill large bowl with cold water. Cut lemon in half; squeeze juice into water in bowl, then add lemon halves. Cut off stem and top quarter from 1 artichoke. Bend back dark green outer leaves and snap off at artichoke base until only pale green and yellow leaves remain. Cut artichoke lengthwise in half. Using point of knife, remove any purple-tipped leaves from center of artichoke. Place artichoke halves in lemon water. Repeat with remaining artichokes.
  • Drain artichokes well. Heat 3 tablespoons oil in heavy large pot over medium heat. Add artichokes, sprinkle with salt and pepper and sauté 3 minutes. Add garlic and herbes de Provence and sauté until artichokes begin to brown slightly, about 6 minutes. Add broth and wine and bring to boil. Reduce heat; cover and simmer until artichokes are tender and most liquid is absorbed, about 10 minutes. Uncover and simmer until all liquid is absorbed, about 3 minutes. Transfer artichokes to platter; cover and keep warm.
  • Heat remaining 3 tablespoons oil in same pot over medium-high heat. Add mushrooms and sauté until tender and golden brown, about 8 minutes; season to taste with salt and pepper. Transfer mushrooms and Oven-dried Tomatoes to platter with artichokes. Spoon Green-Olive Dressing over. Garnish with lemon slices and serve.
  • *A dried herb mixture sold at specialty foods stores and in the spice section of some supermarkets. A mix of dried thyme, basil, savory, and fennel seeds can be substituted.

3 medium artichokes
1/2 cup red wine or 1/2 cup Italian vinaigrette dressing, divided
1/2 cup roma tomato, chopped
1/2 cup green bell pepper, chopped
1 garlic clove, chopped
1/2 teaspoon italian seasoning or 1/2 teaspoon dried basil
assorted lettuce (optional)
1/4 cup shredded parmesan cheese or 1/4 cup asiago cheese

Steps:

  • Wash artichokes; trim off stem and any small leaves.
  • Cut off one-quarter of the leaf tips.
  • Quarter artichokes; use a spoon to scrape out the fuzzy choke.
  • In a Dutch oven cook artichokes and 2 tablespoons of vinegar, covered, in boiling salted water for 10 minutes or tender and a leaf pulls off easily.
  • Drain; rinse in cold water and drain again.
  • Meanwhile, in a small bowl stir together remaining vinaigrette, tomato, bell pepper, garlic, and Italian seasoning.
  • Arrange artichoke quarters on a serving platter or individual plates lined with lettuce, if desired.
  • Spoon dressing mixture over artichokes.
  • Sprinkle with cheese.

2 6-ounce jars marinated artichoke hearts, drained
1/4 cup balsamic vinegar
2 tablespoons chopped fresh chives or green onion tops
1 tablespoon fresh lemon juice
1 tablespoon coarse-grained Dijon mustard
2 teaspoons honey
5 tablespoons mayonnaise
1/2 cup extra-virgin olive oil
12 cups torn romaine lettuce
1 small red onion, thinly sliced
2 cups cherry tomatoes, halved
Parmesan cheese, freshly grated

Steps:

  • Mince 1 jar artichoke hearts in processor. Mix in next 5 ingredients. Transfer mixture to large bowl. Add mayonnaise; whisk until smooth. Gradually whisk in oil. Cover; chill dressing for at least 30 minutes to allow flavors to develop. (Can be made 3 days ahead. Cover; keep chilled.)
  • Combine lettuce, onion and tomatoes in bowl. Toss with enough dressing to coat. Divide salad among plates. Top with remaining artichokes and Parmesan.

12 ounces linguine, freshly cooked

Steps:

  • Heat olive oil in heavy large saucepan over medium heat. Add onion and garlic and sauté until tender, about 5 minutes. Add tomatoes, reserved juices, basil and oregano and simmer until sauce thickens slightly, stirring occasionally, about 8 minutes. Add artichokes with marinade to sauce and cook 2 minutes. Add pasta and 1/2 cup Parmesan cheese to sauce. Toss until sauce coats pasta and mixture is heated through, about 2 minutes. Season pasta to taste with salt and pepper. Transfer pasta to large bowl. Serve, passing remaining 1 cup Parmesan separately.
