Easy White Bean, Artichoke, and Sun-Dried Tomato Dip image

Easy White Bean, Artichoke, and Sun-Dried Tomato Dip comes together in just 10 minutes. Serve with grilled bread, pita, and/or crudités for easy entertaining.

1 (15-oz.) can cannellini beans, drained and rinsed
1 cup canned artichoke hearts in water (not brine), drained
3 Tbsp. tahini ((such as Soom Foods brand))
1 Tbsp. fresh lemon juice
1 garlic clove (optional)
1/2 tsp. kosher salt
3 to 4 Tbsp. extra-virgin olive oil
1/4 cup oil-packed sun-dried tomatoes, drained and finely chopped
freshly ground black pepper

Steps:

  • Combine beans, artichokes, tahini, lemon juice, garlic, and salt in a blender or food processor. With blade running, stream in olive oil, and continue blending until mixture is smooth. Remove lid and stir in sun-dried tomatoes and some cracked black pepper (if desired).
  • Pour mixture into a bowl. If desired, garnish with additional chopped sun-dried tomatoes plus a drizzle of the sun-dried tomato oil, fresh mint, pine nuts, and lemon zest. Serve with grilled bread, pita, or crudités.

  • In a large bowl, beat the cream cheese, sun-dried tomatoes, artichoke hearts, green onions, garlic salt and pepper until well combined.
  • Serve with baguettes, crackers or vegetables. Store covered in the refrigerator for 3-4 days.

Update: My recipe was just published in the Taste of Home Holidays & Celebrations 2011 Cookbook. Tangy & creamy, this artichoke dip boasts the colorful addition of sun-dried tomatoes. Serve with plain or multi-grain baked tortilla chips. Developed for Ready Set Cook #11 - January 2008 Update 2/27/2013: Thanks to Racrgal for a really productive conversation regarding making this recipe in advance. That led me to run a series of tests. *I made four versions and found that it can be made a day in advance and refrigerated before baking, or made months in advance; frozen and then thawed before baking. Both oil-packed and dry-packed sun-dried tomatoes were tested to make sure the oil did not cause bleeding during thawing.

2 (8 ounce) packages cream cheese
1/2 cup mayonnaise
2 shallots, finely chopped
1 tablespoon garlic, minced
1 (6 1/2 ounce) jar artichoke hearts, roughly chopped
1 (10 ounce) package frozen spinach, thawed & drained
3/4 cup asiago cheese, grated
1 cup sun-dried tomato, chopped (can use dry or oil-packed tomatoes)

Steps:

  • Preheat oven to 350 degrees.
  • Grease a 2 quart baking dish with cooking spray.
  • In large bowl combine cream cheese, mayonnaise, shallots & garlic.
  • Stir in artichoke hearts, spinach, tomatoes & cheese. *At this point you can wrap the baking dish in saran wrap and refrigerate overnight, or wrap in 2 layers of aluminum foil and freeze for 2 months (maybe even more). When ready to serve, remove from fridge or freezer and thaw (if needed) on counter before baking as directed.
  • Bake uncovered for 25-30 minutes, or until the cheese that sticks out the top of the mixture begins to brown slightly.
  • Serve with fresh vegetables or baked tortilla chips for dipping.

This delicious Artichoke Dip is one of my favorite easy appetizers, made with simple ingredients in less than 30 minutes! We love it served warm, with crackers or bread chunks for dipping.

8 ounce can artichoke hearts ((not marinated), drained and chopped)
1/2 cup sour cream
1/2 cup mayonnaise
8 ounces cream cheese (, softened)
1 1/4 cups freshly grated parmesan cheese
1 clove garlic (, minced)
dried dill weed (, to taste (fresh or dried))

Steps:

  • Preheat oven to 350 degrees F.
  • To a mixing bowl add sour cream, mayo, cream cheese, garlic and 1 cup of parmesan cheese. Combine until smooth.
  • Stir in chopped artichoke hearts and a little bit of dill weed, to taste.
  • Place in a greased baking dish (most pan sizes around 8x8 in or a little smaller will work. You could even use a pie pan).
  • Sprinkle remaining 1/4 cup of parmesan cheese on top. Sprinkle with a little extra dill weed, if desired.
  • Bake in preheated oven for about 20 minutes or until hot and bubbly. Serve warm with crackers, bread, or veggies.

2 teaspoons extra-virgin olive oil
1 shallot, minced (1/2 cup)
1/2 teaspoon dried oregano
1/4 teaspoon red-pepper flakes
8 ounces cream cheese, cut into 1-inch pieces, room temperature
8 ounces Colby Jack, shredded (about 2 1/2 cups)
1 1/2 ounces Parmigiano-Reggiano, finely grated (about 1/3 cup)
1 tablespoon Worcestershire sauce
1 jar (12 ounces) marinated artichoke hearts, drained and coarsely chopped
12 sun-dried tomatoes, drained if oil-packed, coarsely chopped (1/3 cup)
Kosher salt (we use Diamond Crystal) and freshly ground pepper
Crackers and crudités, for serving

Steps:

  • Preheat oven to 375°F. Heat oil in a small heavy-bottomed skillet, such as cast iron, over medium. Add shallot and cook, stirring occasionally, until softened but not developing any color, 3 to 4 minutes. Add oregano and red-pepper flakes; cook until fragrant, about 30 seconds.
  • Add cream cheese and cook, stirring, until melted. Remove from heat. Stir in other cheeses, Worcestershire, artichokes, tomatoes, 1/2 teaspoon salt, and 1/4 teaspoon pepper.
  • Transfer skillet to oven and bake until hot and bubbly, about 25 minutes. Serve warm with crackers and crudités.

14 ounces plum tomatoes (or 400 g, whirled until smooth)
1/2 teaspoon salt and pepper (combined)
1 teaspoon dried basil
1 lb cream cheese (or 2 c., whipped until light)
1 tablespoon lemon juice
1/4 teaspoon salt and pepper
1/4 cup mozzarella cheese (shredded)
1/4 cup asiago cheese, crumbled (optional)
1/4 cup crab, shredded (canned)
1/4 cup mayonnaise
1 cup artichoke (canned, drained)
1/2 teaspoon garlic, crushed
1/4 teaspoon salt and pepper
1/4 cup chopped tomato, for garnish
1/2 teaspoon parsley, for garnish
salted tortilla chips (triangle)

Steps:

  • Combine tomato sauce ingredients (first three ingredients) just to mix and set aside. Combine cream cheese and next 6 ingredients in food processor and whirl a couple of times. Quickly saute artichokes with salt, pepper and garlic, set aside. Just before serving combine cream cheese and tomato sauce (3 parts cheese to 1 part sauce) mixing well; microwave sauce for 45 sec. just to warm, fold in artichokes and garnish with tomatoes and parsley. Serve with lightly salted tortilla chip triangles.

Yes ... another Artichoke Dip - but this has a twist which I love. A few bits of jalapeno to give it a "kick" and a mix of fresh tomatoes andsundried give it a whole new taste which I love. It is still an easy quick dip to put together and still has many of the classic flavors. I still enjoy the classic dip, but now and then it is nice to have something a bit different. Just serve with your favorite crackers, baguette slices, bagel chips or even bread sticks. Whatever you enjoy best.

1 (15 ounce) can artichoke hearts, drained and chopped, not the marinated, just packed in water

1 jalapeno, fine chopped (I leave some of the rib in because I like a bit more heat, but feel free to remove all seeds and rib)

pepper
chopped black olives

Steps:

  • Dip -- In a medium size bowl add all the ingredients, except the fresh tomatoes and mix well until combined. Then slowly add in the fresh tomatoes and fold in gently.
  • Pour in a pie plate or small 8" casserole dish sprayed with Pam and baked at 350 for approximately 30 minutes on the middle shelf uncovered - until bubbly and golden brown on top.
  • Serve -- Garnish with chopped black olives, or another nice garnish is diced scallions. Serve with crackers, bagel chips, bread sticks, or baguettes, etc. Use your favorite combinations. This is also good with cauliflower, cucumber slices, or squash as well. ENJOY!

  • If your sun dried tomatoes are not already sliced into small pieces, julienne them.

  • Remove any hard pieces from the artichoke hearts & dice them.
  • Add all ingredients in a large bowl and mix well.
  • Place mixture into a large glass or ceramic dish and bake at 350 F for 20 minutes or until bubbling on the sides. Then broil on high until the top is lightly browned.
  • You may serve this as a dip on rye toast points while it is hot or allow to cool and refrigerate until cold and spread it on plain crackers.
