- Place the peanuts into a blender.
- Melt the white chocolate in the microwave in 30 second intervals, stirring after each interval, until fully melted. Add to the blender along with the vanilla.

WHITE CHOCOLATE AND PEANUT BUTTER SWEET AND SALTINE
Steps:
- Preheat the oven to 425 degrees F. Line 1 large or 2 small jelly roll pans with aluminum foil, then spray with nonstick spray and arrange the saltines salt-side down in a single layer.
- Melt the butter and brown sugar together in a medium saucepan and boil until it turns a caramel color, a few minutes. Remove from the heat and pour over the crackers, covering them evenly. Put the peanut butter in a microwave-safe bowl and microwave just until slightly loosened, about 20 seconds. Drizzle evenly over the caramel and spread with a small offset spatula. Bake, watching carefully, until just bubbly, 3 to 5 minutes.
- Put the melting wafers in a microwave-safe bowl and melt according to package directions. Spoon dollops over the peanut butter caramel and smooth evenly with an offset spatula. Transfer the pan to the fridge or freezer until completely cold, then break up into pieces. Store in an airtight container at room temperature.

- Heat oven to 350ºF.
- Line 13x9-inch pan with foil, with ends of foil extending over sides; spray with cooking spray. Beat first 4 ingredients with mixer until blended. (Dough will be thick.) Press half onto bottom of prepared pan. Bake 10 min.
- Sprinkle half each of the chopped chocolate and nuts over crust. Microwave peanut butter in small microwaveable bowl on HIGH 1 min., stirring after 30 sec.; spread over nuts on crust.
- Roll remaining dough into 13x9-inch rectangle between 2 sheets of waxed paper. Peel back top layer of waxed paper; flip dough over dessert. Remove remaining waxed paper. Sprinkle with remaining chocolate and nuts; press gently into dough to secure.
- Bake 15 min. or until lightly browned. Cool completely. Refrigerate several hours or until firm. Use foil handles to remove dessert from pan before cutting into bars.

PEANUT BUTTER AND WHITE CHOCOLATE CREAM PIE

- Using fork, mix powdered sugar, peanut butter and 1 teaspoon vanilla extract in medium bowl until mixture resembles coarse dry crumbs. Place cereal in small bowl. Mix 1/2 cup peanut butter mixture into cereal; set aside.
- Whisk 1/4 cup milk, yolks, sugar, flour and cornstarch in bowl to blend. Pour remaining 2 1/4 cups milk into heavy medium saucepan; bring to simmer. Gradually whisk hot milk into yolk mixture. Return mixture to saucepan. Whisk constantly over medium heat until custard boils and thickens, about 2 minutes. Remove from heat. Add white chocolate and remaining 1 1/2 teaspoons vanilla; whisk until chocolate melts. Cool completely.
- Sprinkle 1/2 cup plain (no cereal) peanut butter mixture over bottom of pie shell. Spoon half of custard filling over. Top with bananas, then remaining plain peanut butter mixture. Spoon remaining custard filling over, mounding in center. Refrigerate pie until cold, about 3 hours. (Can be made 6 hours ahead. Keep chilled.) Top with whipped cream and sprinkle with peanut butter-cereal mixture. Cut into wedges and serve.
WHITE CHOCOLATE CHIP PEANUT BUTTER COOKIES
This delicious cookie has a very similar taste to white chocolate REESE'S Peanut Butter Cups. They don't last long in my house. These were inspired by my husband that loves white chocolate. I made him plane peanut butter cookies and he wondered how they would be like with white chocolate in them. NOTE: this recipe does NOT contain flour!!!

- Line 9x9x2-inch baking pan with foil, leaving overhang. Spray foil with nonstick spray. Combine white chocolate and peanut butter in medium metal bowl. Set bowl over saucepan of barely simmering water (do not allow bottom of bowl to touch water). Stir until chocolate melts and mixture is blended. Spread mixture evenly in prepared pan; freeze until almost firm, about 15 minutes.
- Meanwhile, place chocolate chips and cream in another medium metal bowl. Set over same saucepan of simmering water (do not allow bottom of bowl to touch water). Stir until chocolate is melted and mixture is smooth. Spread chocolate mixture evenly over peanut butter mixture. Refrigerate until very firm, at least 3 hours. (Can be prepared 2 days ahead. Cover and keep refrigerated.)
- Using foil as aid, lift candy out of pan. Cut into 1-inch squares; serve cold.
WHITE CHOCOLATE PEANUT BUTTER POPCORN
I found this recipe when I was looking through a book on Girl Scout activity ideas. I have not tried it, but would like to when we have our next Troop SWAP. Did you know popcorn kernels can pop up to 3 feet in the air?

- Prepare a clean paper shopping bag or oversized mixing bowl. Heat a large heavy pan over medium heat and film the bottom with vegetable oil. Add the popcorn, shake to distribute, then put a lid on the pan. Leave a small crack for steam to escape. When the popcorn starts popping, shake vigorously to make sure the kernels pop evenly. When the popping slows, take the pan off the heat.
- Pour the popcorn into the paper bag or bowl to cool, being careful to leave any unpopped kernels in the pan. Lightly salt the popcorn to taste.
- Mix the honey and sugar in a small saucepan and bring to a boil. Let it simmer for a couple minutes, then remove from the heat and add the peanut butter. Stir vigorously until all the peanut butter is melted, and then mix in the vanilla.
- Immediately pour the peanut butter caramel over the popcorn and stir with a long-handled wooden spoon until it's all coated. Pour onto a greased cookie sheet. Drizzle with white chocolate.

- Combine peanut butter, butter, and milk, then mix in the confectioner's sugar until you have a batter consistency. Set aside.
- Sprinkle your sprinkles in the silicone molds, spreading them out a bit so they are not all at the bottom.
- Melt chocolate wafers in a microwave-safe bowl on defrost or 1/2 power setting for 30 seconds. Remove, stir, and if not completely melted, continue in microwave for 15-second intervals until completely melted.
- Pour half of the mixture evenly into the molds, and with a spoon, "paint" some of the chocolate up the sides.
- Place about a tablespoon of the peanut butter in the center of each of the eggs, then cover with the remaining melted chocolate. You may need to remelt the chocolate in the microwave for 15 seconds depending on how long this step takes you.
- Place the mold in the freezer to allow the chocolate to harden, about an hour.

- Line cookie sheet with aluminum foil.
- Using mixer, beat peanut butter and butter until smooth and creamy.
- Add powdered sugar 1/2 cup at a time until smooth.
- Roll mixture into 1 inch balls with damp hands.
- Place balls onto aluminum foil and place in freezer for 30 minutes until firm.
- Melt white chocolate chips and oil in double broiler.
- Remove from heat.
