ROASTED GARLIC WHITE PIZZA WITH GARLIC SAUCE

Steps:
- Gently heat milk in a small saucepan, just until barely simmering. Remove and keep covered.
- In a separate saucepan, melt butter. When foam subsides, add flour and stir until smooth. Cook for 1 to 2 minutes, stirring. Do not allow flour to color. Gradually add the warm milk, whisking to combine. Add the salt and cayenne and increase the heat to medium. Cook the mixture, whisking continuously, until the sauce comes to a boil and is thickened. Remove from heat and add 10 of the roasted garlic cloves. Pour the hot mixture into a blender, cover tightly, and process until smooth. Transfer to a small bowl and cool slightly, placing a piece of plastic wrap directly on the surface.
- Place a pizza stone in the oven and preheat to 500 degrees F.
- Sprinkle about 2 tablespoons of the yellow cornmeal on a baker's peel or baking sheet. Place the rolled out pizza dough circle on the prepared baker's peel or baking sheet.
- Spread the cooled sauce over pizza dough, leaving a 3/4-inch border. Place sliced mozzarella on top of the sauce. Sprinkle the remaining roasted garlic cloves (whole) over the cheese and top with the grated fontina. Bake the pizza for 8 to 10 minutes, or until the crust is golden and cheese is melted and bubbly and golden brown in spots. Remove from the oven and sprinkle chopped herbs over the top. Serve immediately.
- Preheat the oven to 350 degrees F.
- Place the garlic on a foil-lined baking sheet and rub 1 teaspoon of oil into the top of each head. Sprinkle lightly with salt and pepper and place, cut side down, on the baking sheet. Bake until the cloves are soft and golden, about 1 hour. Remove from the oven and let sit until cool enough to handle. Carefully remove each clove of garlic from the head. Squeeze each head of garlic to expel any cloves that you cannot remove individually. Set aside until needed.
- In a large bowl, combine the water, yeast, honey, and 1 tablespoon oil, stirring to combine. Let sit until the mixture is foamy, about 5 minutes.
- Add 1 1/2 cups of the flour and the salt, mixing by hand until it is all incorporated and the mixture is smooth. Continue adding the flour, 1/4 cup at a time, working the dough after each addition, until the dough is smooth but still slightly sticky. Turn the dough out onto a lightly floured surface and knead until smooth but still slightly tacky, 3 to 5 minutes.
- Oil a large mixing bowl with remaining olive oil. Place the dough in the bowl, turning to coat with the oil. Cover with plastic wrap and set in a warm place, free from drafts until doubled in size, about 1 1/2 hours.
- Punch dough down and turn out onto a lightly floured surface and roll into a 15-inch circle.

- Position an oven rack on the second-lowest level in the oven and place a baking stone on the rack; position another rack in the upper third of the oven; preheat oven to 500°.
- Coat a 12-inch pizza screen or perforated pizza pan with cooking spray.
- Lay the dough on the prepared screen or pan and gently stretch dough into a 12-inch round.
- Top the pizza: brush the dough with 1 tablespoon olive oil; spread the ricotta evenly over the dough, leaving a ¼-inch border.
- Sprinkle the garlic over the top; sprinkle the mozzarella over the top.
- Crush the oregano between your fingers and sprinkle evenly over the cheese and crust.
- Drizzle the remaining 1 tablespoon olive oil over the top.
- Place the pizza in the oven on the upper rack; bake about 8 minutes, until the crust is crisp and golden brown.
- Using a pizza peel, lift the pizza off the screen/pan and place the crust directly on the baking stone; remove the screen/pan from the oven.
- Continue baking the pizza until the bottom of the crust is golden, about 3 minutes.
- Using the peel, remove the pizza from the oven and transfer to a cutting board.
- Slice pizza into wedges and serve immediately.
AMAZING NY STYLE WHITE GARLIC PIZZA
We lived in NY state for a few years and fell in love with White Garlic Pizza. When we moved back to the Midwest, purveyors of pizza, never heard of it. This one fills the bill. If your family likes garlic, be prepared to make this one over and over. This recipe came from "All Cooks" but had errors that needed to be corrected.

- Preheat oven to 425.
- Brown sausage.
- Add onion to pan and saute until soft and slightly brown.
- Drain fat.
- Spread Alfredo sauce evenly on pizza crust.
- Top with sausage/onion mixture and Italian cheese blend.
- Bake on center oven rack for 12 - 16 minute or until cheese is brown and bubbly.
- Remove from oven and cool for 5 minutes to allow toppings to set.

MUSHROOM AND GARLIC PIZZA

I do think that the buttery flavor of the Pillsbury crust really compliments the combo of swiss, mushrooms, and garlic. I don't think that a standard pizza crust would blend as well with these topping, but that is just my opinion. LOL

- Preheat the oven to 400°F Spread the pizza dough out to cover a large baking sheet, then brush with 2 tablespoons of the olive oil and sprinkle with the garlic. Bake for 8 minutes.
- Meanwhile, thinly slice the shitake and white mushrooms. In a large skillet, heat the remaining tablespoon of olive oil over high heat and sauté the mushrooms until golden, 8 to 10 minutes. Season to taste with salt.
- Sprinkle the baked dough with the Swiss cheese, then the mushrooms and the mozzarella. Sprinkle a little more salt over the topping and return the pizza to the oven. Bake until the cheese is golden and bubbly, about 15 minutes.
- Cut into squares and serve.
