TEQUILA LIME MARINADE
This marinade has a little kick to it. It's best if used to marinate overnight. I slow cook chicken in a crock pot in marinate for 8 hours and then add to red chili. I won a chili cook off using this recipe.

Steps:
- Mix all the ingredients together.
- Let the mixture sit, preferably overnight, but at least for 2 to 3 hours.
- Shake the mixture well, then reserve 1/2 cup to use as a baste.
- Marinate white meats such as chicken or pork for up to 2 hours. Fish and shellfish should marinate for 45 minutes. Shake the food often while it marinates.
- When grilling marinated food, use reserved marinade as a baste during the second half of cooking.
- Discard used marinade when you start cooking.
COSTA RICAN LIME MARINADE
This is from reciperewards.com and is good for a lot of different meats. I decided to put the minimun eight hours for marinading in the prep time, because there is no cooking involved, just the putting together of the ingredients for the marinade.

- Mix all ingredients in shallow non-metal dish or resealable plastic bag. Add up to 3 pounds chicken, pork or beef, turning to coat with marinade.
- Cover dish or seal bag and refrigerate, turning meat occasionally, at least 8 hours but no longer than 24 hours.
- Remove meat from marinade; discard marinade. Grill meat as desired.
- Yield: 8 servings.

TEQUILA-LIME CHICKEN
Grilled chicken breasts with a light, fresh marinade. These are great right off the grill or the breasts can be sliced for chicken fajitas.

- Place chicken breasts in a plastic bag or a bowl.
- Combine all remaining ingredients in a food processor and process for about 30 seconds until well mixed.
- Reserve one cup of the marinade for basting.
- Pour remaining marinade over the chicken breasts. Marinade in the refrigerator for about an hour.
- Grill the chicken breasts for about 20 minutes over a low-medium grill. Turn frequently and baste liberally with the reserved marinade.
- Serve with your favorite side dishes such as Spanish rice, corn and peppers, and guacamole.

- Slice chicken breasts for fajitas and serve with sauteed onions and peppers.
HONEY TEQUILA LIME CHICKEN
This is a quick marinade that's best on chicken but delicious on fish too. You can bake, BBQ or grill.

Steps:
- Mix all ingredients, except cilantro and meat in medium sauce pan.
- Simmer over medium heat about 15 minutes or until onions are soft but not clear.
- Cool completely. (Instead of adding water above, I add ice cubes at this stage.).
- Place chicken in a baking pan and pour mixture over the chickent.
- Marinade at least 1 hour, preferably over night. If the sauce doesn't completely cover the meat, turn it over half way through.
- If baking, pour out half the liquid and cover with finely chopped cilantro.
- Bake at 350 for 45 minutes or until meat is cooked through (depending on type of meat and size of pieces).
- If grilling, then grill and add the cilantro after cooking.
TEQUILA MARINADE
This came from Bon Appetit and is just superb!!! I can't stress how wonderful this marinade is!!! It originally calls to be a beef marinade, but I think would be good with pork or chicken, too.
