HONEY BREAD
This recipe is from an old Time-Life African cookbook. Try it warm, spread with butter and honey. It should be easy to adapt to a bread machine, if you have one that can make a 2-pound loaf.

Steps:
- Put water in a small bowl and sprinkle the yeast over it; let stand 2-3 minutes and stir to dissolve.
- Combine the egg, honey, coriander, cinnamon, cloves and salt in a large bowl and mix well with a whisk or spoon.
- Add the yeast, milk and 4 tablespoons of the melted butter and beat until well blended.
- Stir in the flour gradually, adding only enough to form a soft dough that can be gathered into a soft ball.
- Knead the dough on a lightly floured surface; if the dough is sticky, lightly butter your hands rather than add more flour.
- Knead until smooth and elastic, then shape the dough into a ball and place in a large, lightly buttered bowl, cover with a towel or non-stick foil and place in a warm spot until the dough has doubled in size (if you poke it with your finger, it should not"bounce back").
- Spread the remaining melted butter on the sides and bottom of a 3-quart round baking dish at least 3" deep.
- Punch down the dough and knead it for 2-3 minutes.
- Shape the dough into a round and place in the dish, pressing the dough down so it covers the bottom of the container.
- Return the dough to the warm spot and let it rise until it reaches the top of the pan.
- Preheat the oven to 350º.
- Bake the bread in the middle of the oven 50-60 minutes, or until the top is crusty and golden brown.
- Turn out of the pan and cool on a rack.

- Preheat oven to 375 degrees Fahrenheit. Combine all ingredients, knead for about seven minutes or until dough is no longer wet but smooth. Let bread rise until doubled in size, punch down and shape into loaves. Let bread double in size again. Bake until crusty and brown on top.
CELTIC DRUID'S HONEY MEAD - MEADE - METHEGLIN
Mead, made from fermented honey, was the earliest of all alcoholic beverages; the BEAKER people who inhabited England from 2000BC were known to have drunk it or something like it. Long before the Romans arrived in Britain, Celtic Druid Bards described the island, as dicovered in ancient Roman texts, as "The Isle of Honey". It was orginally a drink for warriors and Druidic princes & priests, as well as noblemen. A chieftains' bodyguard would fight his battles in return for drinking his mead. There are many types of mead; this method is for "Metheglin", which means it is a "Spiced Mead". The ancient Druids would not have had spices or lemons available, but nevertheless, this is based on a very ancient Celtic recipe. This is an easy and delicious form of mead, but although it is ready to drink after 4-6 months, it is far superior if left for many years. The mead in my photographs was made in 2002 and bottled in 2003! Please ensure if you do not make wines or liqueurs regularly, that you thoroughly sterilise EVERYTHING that you use; I use "Campden Tablets".

- EQUIPEMENT:.
- Very large Pan - to hold 12 pints; Thermometer; 8 pint Fermentation Jar; Airlock; Bottles.
- Bruise the ginger by folding it in to a clean cloth and hitting it with a hammer to release its flavour.
- Tie the bruised ginger, cloves, cinnamon stick and the lemon peel in a muslin cloth and put it into a 12-pint pan.
- Add the water and lemon juice and bring it to the boil.
- Allow to cool to 50C/122°F.
- Meanwhile, stand the honey in a warm place and allow to come to the same temperature.
- Add the honey to the lemon and ginger water and mix.
- Allow to cool to 21C/70F and then remove the muslin bag with the ginger and lemon peel in it.
- Crumble the yeast into the honey water and mix lightly.
- Pour the liquid into an 8-pint fermentation jar, it should reach about three quarters full, and fit the airlock.
- Leave until all fermentation has finished, racking if necessary.
- Leave for another 1-2 weeks before bottling and storing.
- The mead can be drunk after 4-6 months, but is best if kept for several years!

_**Miód Pitny na Ciepł**_ Mead-fermented honey-is a Polish drink that goes back to the Middle Ages. In Polish sagas and epics, warriors drink mead before battles. Even now it has an indefinable, and probably undeserved, reputation as a healthier form of alcohol. In Poland you can buy bottled mead, the making of which grows more sophisticated every year. At a dinner organized in Warsaw not long ago by Slow Food Polska-the Polish branch of the international Slow Food movement-Anne was served several extraordinary organic meads, each made by a slightly different method. The company that produces them, Pasieka Jaros, has been researching and experimenting with ancient methods of mead production for more than thirty years. This recipe is something slightly different: It's a hot form of Honey and Ginger SpicedVodka, which you can make at home. Serve this as a winter cocktail-or after a day spent cross-country skiing-and drink it in front of a roaring fire.

- In a medium saucepan, bring the honey and water to a boil, skimming any foam from the surface. Add the cloves, cinnamon sticks, vanilla bean pod, and orange rind, return to a boil, and remove from the heat. Let sit for 1 or 2 minutes, then bring to a boil again. Remove from the heat, cover, and set aside for at least 30 minutes to steep. Strain through a fine-mesh strainer or a regular strainer lined with a coffee filter or cheesecloth, and again bring to a boil. Pour in the vodka. Stir well and serve piping hot.

- Place ingredients in bread pan in order specified by your manual.
- Use the white bread and light crust setting.
- Press start.
- Your dough should be slightly tacky to the touch and soft when you press down on it, like playdoe when you first open it. If too dry add warm milk 1 teaspoon at a time. If too wet add white flour 1 Tablespoon at a time.
