1 cup butter
2 cups white sugar, divided
3 cups cake flour
4 egg yolks, room temperature
4 egg whites, room temperature
2 teaspoons baking powder
1 cup milk, room temperature
1 teaspoon vanilla extract

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Grease and flour three 9-inch round pans.
  • Beat butter and 1 cup of sugar with an electric mixer in a large bowl until light and fluffy. The mixture should be noticeably lighter in color.
  • In a separate bowl, beat egg yolks well, then add to butter mixture.
  • Sift together flour and baking powder. Add alternately with the milk to the butter-sugar mixture. Beat well. Add vanilla.
  • Beat egg whites until stiff but not dry. Add 1 cup sugar to the egg whites. Fold into cake batter.
  • Divide evenly into three prepared 9 inch round pans. Bake at 350 degrees F (175 degrees C) for 25 minutes.

2 1/4 cups flour
1 1/2 cups sugar
3 1/2 t baking powder
pinch salt
1/2 cup butter, softened
1 t vanilla
1 cup milk, divided
4 eg whites, unbeaten
Frosting:2 egg whites
1 1/2 cups sugar
1/4 t cream of tartar
1/3 cup water
1 t vanilla
1/2 cup small raisins
1/2 cup chopped dates
Fairly scant on dressing if would like may be doubled

Steps:

  • Preheat oven to 350. Grease and flour two 8 or 9 inch cake pans and set aside. In a large bowl, sift together flour, sugar, baking powder and salt. Add the butter, 2/3 cup of the milk and the vanilla. Beat for about 2 minutes. Add remaining milk and the egg whites. Beat for another 2 minutes. Pour into the pans and bake for 25-30 minutes. Let cool in the pans for 10 minutes and then turn out on a rack to cool completely before frosting. Frosting: Using either a double boiler or a metal bowl placed over a pot of boiling water, combine the egg whites, sugar, cream of tartar and water. Place over boiling water and beat with a mixer until stiff peaks form, usually 7-9 minutes. Scrape the bowl occasionally. Fold in the vanilla. Two tips: Make sure the water is boiling before you start beating and make sure everything is very clean and dry. Using about 1/3 of the frosting, fold in the raisins and dates. Use this as a filling between the 2 layers. Frost the tops and sides of the cake with the remaining frosting.

1 1/2 cups sugar
2 cups all-purpose flour
2 teaspoons baking powder
1/4 teaspoon salt
6 large egg whites (3/4 cup)
3/4 cup milk
2 teaspoons vanilla extract

Steps:

  • The fine moist crumb of this cake complements any type of filling and frosting -- the perfect celebratory cake.
  • Set a rack at the middle level of the oven and preheat to 350 degrees. In a large mixing bowl, beat butter and sugar for about 5 minutes, until light and fluffy. Stir together flour, baking powder and salt. Set aside. Combine egg whites, milk and vanilla extract. Add 1/3 of the flour mixture to butter mixture then add half the milk mixture. Continue to alternate beginning and ending with flour mixture. Scrape bowl and beater often. Pour batter into prepared pan(s) and smooth top with a metal spatula. Bake cake(s) about 25 to 30 minutes, or until a toothpick inserted in the center emerges clean. Cool in pan on a rack for 5 minutes, then turn out onto a rack, remove paper and let cool completely.
  • Variation:
  • CLASSIC YELLOW CAKE Substitute 3 large eggs and 1 egg yolk for all of the egg whites above.
  • 2 (9-inch) diameter by 1 1/2-inch deep layer pans or 1 (13 by 9 by 2-inch) pan, buttered and bottoms lined with parchment or waxed paper.

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Grease and flour one 9 x 13 inch pan.
  • Cream together shortening and sugar. Beat in eggs and vanilla.
  • In a separate bowl, combine flour, baking powder, and salt. Add to creamed mixture alternately with milk. Mix well. Pour batter into prepared pan.
  • Bake for 45 minutes, or until cake tests done. Cool.

3 cups cake flour
1 3/4 cups sugar
1 1/4 cups water
1/2 cup shortening
3 tablespoons water
3 tablespoons oil
2 teaspoons baking powder
2 1/2 teaspoons baking powder
1 teaspoon salt
1 1/2 teaspoons vanilla extract

Steps:

  • Preheat oven to 350 degrees. Grease and flour two cake pans (I usually use 9" round). Mix together 3 T. water, 3 T. oil, 2 teaspoons baking powder. In a large bowl, combine all ingredients. Using an electric mixer, beat until well mixed, approximately 4 minutes. Pour batter into cake pans. Bake 40 to 45 minutes, or until toothpick inserted in center comes out clean. Cool in pans 10 minutes before removing to wire racks.
  • Frost when completely cooled.
  • Note: Baking powder is intentionally listed twice in this recipe. The combination of 3 T. water, 3 T. oil, 2 teaspoons baking powder; mixed together is the substitution for 2 eggs.

I got this recipe off of the package that contained 2 mini angel food cake pans (4 1/2 X 2" ). I made 1/2 of the recipe for one cake and it turned out perfectly and would serve 2-3 for one cake. I served it with fresh strawberries, ice cream and whipped topping and it was a hit.

1/2 cup flour
2/3 cup sugar, divided
4 egg whites, at room temperature
1 pinch salt
1/4 teaspoon cream of tartar
1/2 teaspoon vanilla extract

Steps:

  • Preheat oven to 375 degrees F. Sift flour with 1/3 cup sugar 3 times.
  • In a large bowl, beat egg whites and salt with electric mixer until foamy; add cream of tartar and beat until soft peaks form. Gradually beat in the remaining 1/3 cup of sugar and beat until stiff peaks form; fold in vanilla. In two additions, gently fold in flour mixture until just combined. Divide batter between the two pans; place on sheet pan.
  • Bake 20 to 22 minutes or until browned and toothpick inserted comes out clean. Invert pans on cooling grid to cool. Loosen cakes from pans with spatuals; remove from pans.

2 ¾ cups sifted cake flour
4 teaspoons baking powder
¾ teaspoon salt
4 egg whites
1 ½ cups white sugar
¾ cup butter
1 cup milk
1 teaspoon vanilla extract
1 teaspoon almond extract

Steps:

  • Measure sifted cake flour, baking powder, and salt; sift together three times.
  • In a mixing bowl, beat egg whites until foamy. Add 1/2 cup sugar gradually, and continue beating only until meringue will hold up in soft peaks.
  • Beat butter until smooth. Gradually add remaining 1 cup sugar, and cream together until light and fluffy. Add sifted ingredients alternately with milk a small amount at a time, beating after each addition until smooth. Mix in flavorings. Add meringue, and mix thoroughly into batter. Spread batter in a 15 x 10 x 1 inch pan which has been lined on the bottom with parchment paper.
  • Bake at 350 degrees F (175 degrees C) for 30 to 35 minutes. Cool cake in pan 10 minutes, then remove from pan and transfer to a wire rack to finish cooling. This cake may also be baked in two 9 inch round pans for 30 to 35 minutes, or in three 8 inch round pans for 25 to 30 minutes.
