CREAMY CAULIFLOWER SOUP WITH BACON AND GORGONZOLA RECIPE

Steps:
- Steam the cauliflower until very tender.
- In the meantime, cook the bacon until crisp. (For microwave: place the bacon on a couple layers of paper towels, cover with another paper towel, microwave for 5-7 minutes until crisp). Finely mince cooked bacon.
- Heat the broth in the microwave.
- Drain the cauliflower and add to blender. Pour in the broth, blend on high until smooth. Season with salt to taste. If the soup is too thick, you can add a bit more broth.
- Ladle soup into bowls, garnish with bacon and gorgonzola.

- Melt the butter in a Dutch oven over medium-high heat. Add the onion and garlic; cook, stirring, until they start softening, about 4 minutes. Add the cauliflower, bay leaf, rosemary, 1 teaspoon salt and a few grinds of pepper. Cook, stirring, until the cauliflower starts browning, 5 minutes. Stir in the flour until absorbed, about 1 minute. Add the chicken broth and milk; bring to a boil. Reduce the heat; simmer until the cauliflower is tender, 30 minutes. Remove the bay leaf.
- Working in batches, transfer the soup to a blender and puree until smooth (or puree in the pot with an immersion blender). Return the soup to the pot over medium heat. Stir in the cheese until melted; add up to 1 cup water if the soup is too thick.
- Add the sherry; season with salt and pepper. Sprinkle with nutmeg and serve with cheese straws.

- Rinse cauliflower, divide into florets and trim. Peel potatoes, rinse and dice. Peel onion and dice.
- Heat oil in a pot and saute onion until soft. Add cauliflower and potato to the pot and saute briefly. Add broth. Cover and cook for 20-25 minutes until soft.
- Rinse broccoli, trim and cut into small florets. Boil broccoli in a pot of boiling salted water for 6-8 minutes. Puree cauliflower mixture with an immersion blender, heat, add milk and stir. Cut Gorgonzola into small pieces, stir and let cook for 5 minutes and season with mustard, salt, pepper and lemon juice. Drain broccoli and add to the pot. Serve in bowls garnished with chives.

CHEESY CAULIFLOWER SOUP

- In a large pot, fry the bacon pieces over medium-high heat until crisp. Drain the bacon on a paper towel and set aside. Pour off the grease and return the pot to the stove.
- Add the onions to the pot and cook over medium-high heat for 3 to 4 minutes. Add the cauliflower, sprinkle with the Cajun spice and 1/2 teaspoon black pepper and cook, stirring, until the cauliflower starts turning golden brown, another 3 to 4 minutes. Stir in the chicken broth, bring to a boil, reduce the heat to a simmer and cook for 15 minutes.
- Use an immersion blender to puree the mixture slightly, or all the way if you prefer. (Or use a regular blender; just don't fill too full.)
- In a separate saucepan or skillet, melt the butter. Sprinkle in the flour and whisk to form a paste. Pour in the milk, then continue cooking until it thickens. Remove from the heat and stir in the half-and-half.
- Pour the white sauce into the soup. Turn the heat to medium high and bring back to a boil for 3 to 5 minutes. Reduce the heat to low, stirring in the cheese and sour cream until the cheese is fully melted. Stir in the parsley.
- Taste and adjust the seasoning. Serve with a little extra cheese, a sprinkle of bacon and a sprinkle of parsley.
CAULIFLOWER, POTATO AND BLUE CHEESE SOUP
Another delicious recipe from Donna Hay magazine. We had oregano paste, rather than fresh, so we just added some paste to the soup rather than cooking the sprigs.

Steps:
- Heat the oil in a medium suacepan over medium heat. Add the oregano sprigs and cook for 1-2 mins or until crisp. Set aside.
- Add the onion and garlic and cook for 3-4 mins, or until golden.
- Add the cauliflower and potato and cook, stirring, for a further 2 minutes.
- Add the stock, increase heat to high and bring to the boil. Cook for 18-20 mins or until potato and califlower are tender.
- Add half the cheese, salt and pepper and, using a hand blender, process until smooth.
- Stir through the cream. Top with the oregano and remaining cheese to serve.

Steps:
- Preheat oven to 375º.
- Clean cauliflower and separate into florets.
- Bring large pot of water to a boil and cook florets for about 10 minutes or until just cooked but not soft. Rinse florets in colander under cold water to stop the cooking process. Pour evenly into shallow into baking dish and set aside.
- Over high heat in medium sauté pan add butter and onions. Cook for about 3-5 minutes to soften and color onions.
- Add milk and flour and whisk to blend. Cook until bubbling nicely, then add gorgonzola and blend in until smooth.
- Pour evenly over cauliflower in baking dish. Sprinkle with chopped walnuts, bread crumbs, salt and pepper.
- Place in oven for 15-20 minutes, or until bubbly and golden brown. Garnish with chopped parsley and serve.

- Heat the butter in a large saucepan. Tip in the onion and cook until softened, about 5 mins, stirring often. Add the cauliflower, potato, stock, milk and seasoning. Bring to the boil, then reduce the heat and leave to simmer for about 30 mins until the cauliflower is soft and the potato almost collapsing.
- Whizz in a food processor or crush with a potato masher until you get a creamy, thick soup. Top up with more milk to thin a little if serving in mugs. You can make ahead up to 2 days in advance, cool, cover and leave in the fridge until needed, or freeze for up to 1 month. When ready to serve, warm through, ladle into mugs or bowls, top with the cheese pieces, then stir through before eating.

- Peel and roughly chop the carrots.
- Slice the celery.
- Peel and roughly chop the onions.
- Peel and slice the garlic.
- Cut the cauliflower into 1.5cm slices.
- Put a large pan on medium heat and add 2tb olive oil.
- Add all your chopped and sliced ingredients and mix together with a wooden spoon.
- Cook for around 10 minutes with the lid askew, until the carrots have softened but are still holding their shape, and the onion is lightly golden.
- Grate the cheddar into a bowl and put to one side for later.
- Put the stock cubes into a jug or pan and pour in 1.8 litres of boiling water from the kettle.
- Stir until the stock cubes are dissolved, then add the vegetables.
- Give the soup a good stir and bring to the boil.
- Reduce the heat and simmer for 10 minutes with the lid on.
- Remove the pan from the heat.
- Season with salt and pepper and add the cheese and mustard.
- Using a hand blender or liquidizer, pulse the soup until silky smooth.
- Divide between your serving bowls and grate over some nutmeg, if you like.
- If you want to dress it up a bit, top it with some lightly fried crispy bacon.

- Preheat the oven at 170°C.
- Clean and cook the cauliflower florets in salted water with the lemon juice, until done.
- Mix the gorgonzola with the mascarpone.
- Melt 30 g butter in a pan, add flour. Mix and add the milk.
- Mix in the cheese as soon as the mixture starts to cook.
- Keep stirring over low heat with a wooden spoon, until thickened.
- Add salt, pepper and nutmeg to taste.
- Fry the garlic with the 10 g of butter and the olive oil, add the cauliflower and bake for 3-4 minute Pepper and salt to taste.
- Put the cauliflower in an ovenproof dish, put sauce on top and bake 15 minute in the oven until it starts to brown.
- Enjoy!
