Time 20m

Number Of Ingredients 12

750g / 1.5lb chicken thighs OR chicken breast (, skinless and boneless)
1/2 tsp salt
Black pepper
1/2 cup sun dried tomatoes (, strips, drained of oil (Note 1))
2 tbsp oil from sun dried tomatoes jar ((Note 1))
2 garlic cloves (, minced)
1/2 cup (125 ml) white wine ((sub chicken broth))
3/4 cup (185 ml) chicken broth/stock (, low sodium)
3/4 cup (185 ml) thickened / heavy cream
1/3 cup (30g) parmesan, very finely shredded ((Note 2))
2 tsp Dijon mustard ((Note 3))
1 cup basil leaves (, packed (optional))

Steps:

  • Breast: Cut chicken in half horiztonally to form 2 thin steaks.
  • Sprinkle chicken with salt and pepper. Heat oil from sun dried tomat jar in a large skillet over high heat.
  • Add the chicken and cook until golden brown on both sides - 6 minutes total for thigh or 4 minutes for breast. Remove onto a plate, keep warm.
  • Add the garlic and cook for 15 seconds until light golden.
  • Add wine. Bring to simmer and scrape the bottom of the skillet to mix all the brown bits into the wine.
  • Let the wine simmer for 1 minute or so until the smell of alcohol is gone which means it has evaporated.
  • Mix in mustard, then add the chicken broth, cream, parmesan and sun dried tomatoes.
  • Bring to simmer, then reduce heat to medium and simmer for 2 to 3 minutes until thickened. Stir regularly to dissolve parmesan cheese.
  • Taste sauce and add more salt and pepper if needed.
  • Stir through basil leaves, then return chicken into pan. Spoon sauce over and simmer 1 minute.
  • Serve immediately! Great served over mashed potato, Creamy Mashed Cauliflower or pasta. Or serve with bread on the side to mop up sauce!

Categories     Pasta

Time 20m

Number Of Ingredients 13

1/2 lb. (8 oz.) spaghetti noodles
2 tablespoons olive oil
1 lb. white shrimp, peeled and deveined
1/2 teaspoon salt
1/4 teaspoon ground black pepper
2 tablespoons butter
1 tablespoon garlic, minced
1/4 cup sun-dried tomatoes
1 teaspoon all-purpose flour
1 cup heavy cream
1/4 cup Parmesan cheese, grated
3 cups baby spinach
2 tablespoons fresh basil, finely sliced

Steps:

  • Bring a large pot of salted water to a boil over medium-high heat. Add spaghetti noodles and cook until al dente (fully cooked but still firm) according to package directions, about 10 minutes. Drain well in a colander and set aside. Toss in some olive oil to keep the pasta from sticking together.
  • Meanwhile, heat oil in a large skillet over medium high heat for 2 minutes until the hot oil is sizzling hot. Add shrimp and season with salt and pepper. Sauté for 5 minutes until the shrimp becomes nicely browned on both sides. Set aside on a plate.
  • In the same skillet, add butter, garlic, and sun-dried tomatoes. Sauté until fragrant, about 1 minute. Stir in flour and mix until well combined.
  • Add heavy cream and Parmesan cheese. Stir well and bring the sauce to a simmer. Reduce the heat to medium and keep stirring until thickened to a desired consistency.
  • Stir in spinach and cook until softened, about 1 minute. Return the cooked shrimp to the skillet and toss well to coat.
  • Add in cooked spaghetti and toss well to combine. Sprinkle fresh basil and extra Parmesan cheese on top and drizzle with olive oil if desired.

GRITS WITH SUN-DRIED TOMATO PESTO AND GOAT CHEESE

Grits with Sun-Dried Tomato Pesto and Goat Cheese image

Comforting main or side-dish made rich with tomato pesto and goat cheese and baked in individual casseroles. The original recipe called for twice the butter and whipping cream rather than fat free half and half, so if you can afford the calories, go for it. Oil-packed sun-dried tomatoes (1/2 cup diced) may be substituted for the pesto. Recipe makes 2 main-dish servings or 4 side-dishes.

CREAMY SUN-DRIED TOMATO CHICKEN BREASTS

Creamy Sun-Dried Tomato Chicken Breasts image

Skinless, boneless Chicken Breasts with Creamy Sun-Dried Tomato Sauce cooked in a skillet. Easy, one-pan recipe. Chicken breasts are tender, moist and never dry thanks to a rich, silky creamy sauce. Make the sauce by roasting garlic and sun-dried tomatoes in the skillet, adding the cream, shredded Mozzarella cheese, and just the right amount of spices (basil and crushed red pepper)! One of the best ways to cook chicken breasts!

Provided by Julia

Categories     Main Course

Time 40m

Number Of Ingredients 12

4 garlic cloves (, minced)
6 oz sun-dried tomatoes (, in oil, from a jar)
salt
2 tablespoons olive oil (, either from the jar of sun-dried tomatoes, or just use olive oil)
1/4 teaspoon paprika
2 chicken breasts (, halved horizontally (about 2 lb))
1 cup heavy cream
1 cup milk
1 cup mozzarella cheese (shredded)
salt and pepper (to taste)
1 teaspoon basil (if using dry basil, if using fresh basil you can add more)
1/4 teaspoon crushed red pepper flakes (at least, add more to taste)

Steps:

  • Note: if using sun-dried tomatoes in oil (in a jar), make sure to drain sun-dried tomatoes from oil, before using them. Reserve 2 tablespoons of this drained oil for sauteing as described below:
  • In a large pan, on medium heat, saute garlic and sun-dried tomatoes (drained from oil) in 2 tablespoons of oil (reserved from the sun-dried tomatoes jar - see note above) for 1 minute until garlic is fragrant.
  • Remove sun-dried tomatoes and garlic from the pan, leaving the olive oil in the pan.
  • Add chicken breasts, halved horizontally, salted and lightly covered in paprika (for color).
  • Cook the chicken on medium heat for about 5 minutes on each side.
  • Cover the pan with the lid, remove from heat, and let the chicken sit, cooking in its own juices, with heat off, until completely cooked through and no longer pink in the center.
  • Remove the chicken from the skillet. Chicken could have released juices - in my case it was 1/2 cup of juices. Remove the juices from the skillet, to avoid greasiness.
  • To the same skillet (from which you removed the chicken and the juices), add back sun-dried tomatoes and garlic.
  • Add 1 cup of heavy cream, bring to boil.
  • Add 1 cup of mozzarella cheese, immediately reduce to simmer, constantly stirring to melt the cheese.
  • Add 1 cup of milk gradually, whisking until nice and smooth, while on simmer.
  • Add basil and crushed red pepper - mix to combine.
  • Add cooked chicken breasts. Season with salt. Reheat until warm.

CREAMY TUSCAN CHICKEN

Creamy Tuscan Chicken image

Creamy Tuscan chicken with fresh garlic, spinach, and sun-dried tomatoes is a meal worthy of entertaining or special occasions, yet can be on your table in 30 minutes.

Provided by Monica | Nourish + Fete

Categories     Dinner

Time 30m

Number Of Ingredients 13

1-2 tablespoons extra-virgin olive oil
1/4 cup all-purpose flour
4 boneless skinless chicken breasts (thinly-sliced (about 1-1.5 pounds) (see note 1))
2-3 teaspoons kosher salt
a few turns of freshly-ground black pepper
4 cloves garlic (minced (see note 2))
1/2 cup chicken broth
3/4 cup heavy cream
1 teaspoon Italian seasoning
1/2 cup Parmesan cheese (grated)
1-2 cups fresh spinach (roughly chopped)
1/2 cup sun-dried tomatoes (roughly chopped (see note 3) )
pasta (for serving)

Steps:

  • In a large skillet, warm olive oil over medium-high heat. Place flour in a small bowl or plate. Lightly sprinkle each side of the chicken breasts with kosher salt and black pepper, then dredge each side lightly through the flour. Shake off any excess, then place chicken breasts in the warm pan. Cook for 3-4 minutes on each side, just until browned and no longer pink in the center. Remove chicken to a plate and set aside.
  • If the skillet is dry, add a tiny bit more olive oil, followed by the garlic. Cook for about 1 minute, just until fragrant. Add chicken broth, and scrape any browned bits from the bottom of the skillet.
  • Add cream, Italian seasoning, and Parmesan cheese. Cook over medium heat for 5-7 minutes, stirring frequently, until the sauce visibly thickens.
  • Stir in spinach and sun-dried tomatoes, and simmer for 1-2 minutes, until spinach wilts.
  • Add chicken back to the skillet, spoon a bit of sauce over each piece, and serve with pasta or other sides as desired.

CHICKEN THIGHS WITH SUN-DRIED TOMATO AND BASIL SAUCE

Chicken thighs with sun-dried tomato and basil sauce image

Chicken thighs cooked in a luscious, gluten-free creamy sun-dried tomato and basil sauce. Served with rice, it is the perfect fuss-free dinner.

Provided by Alida Ryder

Categories     Chicken     Dinner     Gluten free

Time 55m

Number Of Ingredients 10

8 chicken thighs
1 onion (thinly sliced)
3 garlic cloves (crushed)
½ cup sun-dried tomatoes (in olive oil, sliced)
1 cup basil leaves
1 cup chicken stock
1 cup cream
2 teaspoons corn flour mixed with 1 tablespoon milk
juice of ½ lemon
salt & pepper to taste

Steps:

  • Heat a large, deep pan over medium-high heat and add a splash of oil.
  • Brown the chicken thighs on both sides until they turn a deep golden brown and are cooked 3/4 way through.
  • Remove the chicken from the pan and set aside.
  • Add a bit more oil to the pan if necessary then saute the onion until soft and glossy.
  • Remove the stalks from the basil leaves and chop finely. Reserve the leaves for later.
  • Add the basil stalks and garlic to the onions and saute for 30 seconds before adding the sun-dried tomatoes. Saute for another minute then pour in the chicken stock and cream.
  • Allow to come to a simmer then place the chicken back in the pan and cover.
  • Allow to simmer for 10-20 minutes, checking regularly to make sure the liquid hasn't cooked away (top up with more stock if necessary), until the chicken is cooked through.
  • At this stage, the sauce will probably have reduced but if you want more sauce (to serve with rice, for example), add another cup of stock (and more cream if you wish) then add the cornflour and milk mixture. Allow to simmer for 10 minutes until thickened.
  • Slice the basil leaves and add them to the chicken along with the lemon juice, salt and pepper before serving.

2 tsp Arrowroot powder ((or 1/4 tsp xanthan gum))
2 cloves Garlic ((minced))
1/2 cup Heavy cream ((or coconut cream for dairy-free))
1/2 cup Sun-dried tomatoes ((julienned, drained if packed in oil))
