Vegetarian Apple Stir-Fry image

It seems strange at first but try it. My family was so used to eating steak every night that they were scared to try it, but they love it. It's a nice healthy change.

2 granny smith apples, cored and diced
1 cup sliced carrot
1 cup snow peas
1/3 cup dry roasted salted peanut
2 tablespoons canola oil
1 tablespoon basil
2 cups cooked brown rice (steamed)
soy sauce (optional)

Steps:

  • Start steaming your brown rice ahead of time.
  • Heat canola oil in frying pan on medium heat.
  • Add carrots peanuts and basil stirring frequently for 5 minutes.
  • Add snow peas and cook for another 5 minutes stirring frequently.
  • Add apples and stir.
  • Top rice with mixture.
  • Add soy sauce if you prefer (I don't but my boyfriend does).

This easy and very simple stir fry is different but delicious. I serve it to my vegetarian son, but everyone else enjoys it too.

3 cups cooked brown rice
1 tablespoon peanut oil
4 garlic cloves, minced
1/2 tablespoon finely cut gingerroot
1 cup unsweetened pineapple, cubed
1/4 cup peanuts
1/4 cup raisins
2 cups frozen edamame, thawed (shelled soybeans)
1 teaspoon dark sesame oil
1 tablespoon low sodium soy sauce
1/2 tablespoon red pepper flakes

Steps:

  • In a large skillet or wok, at medium high heat, add oil, then garlic and ginger; stir for 1 minute. Add pineapple, peanuts and raisins and stir for another minute. Add soybeans, stir for 1 minute.
  • Raise heat to high, add rice and red pepper, and stir about 2 minutes. Add sesame oil and soy sauce, and stir for another 2 minutes.
  • Shut off heat and stir for another minute or so.
  • Serve.

  • Add the broccoli, snow peas, and bell peppers. Season lightly with salt and pepper. Stir fry for 5-7 minutes, until vegetables are crisp-tender.
  • Push the vegetables to the sides, making a well in the center. Add the butter to the well and let it melt. Add the minced garlic. Saute without moving for about a minute, until fragrant, then stir into the rest of the vegetables.
