LUMBERJACK BAKED BEANS
Steps:
- In small bowl, whisk together brown sugar, apple cider vinegar, dry mustard, ginger and salt.
- Preheat oven to 350F.
- In large skillet over medium-high heat, cook bacon, turning often, until bacon is crispy.
- Using tongs, transfer bacon to plate lined with paper towels to remove excess grease. Crumble bacon when cool enough to handle.
- Discard bacon grease from skillet, leaving 2 teaspoons of grease to lightly coat bottom of skillet.
- Add onions to hot skillet and cook over medium heat, stirring often, until onions are softened and just golden.
- Add brown sugar mixture to onions, stirring to combine. Simmer mixture for 8 to 10 minutes to make sauce.
- In 3-quart casserole dish, combine beans, bacon and brown sugar sauce, stirring to combine.
- Place lid or aluminum foil over top of dish to cover tightly.
- Bake for 1 hour. Remove dish from oven and stir beans.
- Bake uncovered for an additional 30 minutes. Stir and serve hot.

My mother made these when I was growing up. They are, by far, the best baked beans ever! This is another one of those recipes that I have to give out whenever I serve it. This is perfect at any BBQ!

- Cook up the bacon bits in a hot pan until they are crispy.
- Place crispy bacon to the side and save the bacon grease.
- Add chopped onions to the same pan you cooked the bacon.
- Pour sauce over onions and simmer for 8 - 10 minutes.
- Create mixture of beans in a baking dish.
- Add bacon to the dish.
- Pour sauce over the beans and bacon.
- Mix thoroughly.
- Bake for 1 hour covered. Remove dish from oven, stir, and cook uncovered for another 30 minutes.
BAKED BEAN MEDLEY
This is another recipe that I got from a mother from my son's preschool. I've tried this and it is really easy to make and honestly tastes like home-made "baked all day" stuff! I did tweak it just a bit for our taste -- like by adding molasses...But anyway, it's very filling and the kids love it when I make this with a side of cornbread. Very good!

- Brown ground chuck with the onion until done. Drain fat.
- Drain 1 can pork 'n beans, kidney beans and lima beans. Add all beans into the meat mixture and pour into a 2 quart baking dish.

- Drain and rinse beans in a collander, set aside.
- In a Dutch oven heat the olive oil over low heat. Add the onion and garlic and saute for 5 or 6 minutes until the veggies begin to soften. Add the diced tomatoes, pizza sauce, pizza toppings, and vegetable stock and simmer on medium heat for 10 minutes so the tomatoes cook through.

How to make Lumberjack Baked Beans

- In a large skillet fry up your bacon, until it is crispy and browned along the edges. Remove it from the pan onto a plate lined with paper towels. Discard ALMOST all of the bacon grease. Leave about 1-2 teaspoons in the pan.
- Toss your onions into the hot pan. Cook until they are golden and wilted.
- While your onions cook stir together the brown sugar, apple cider vinegar, dry mustard, ginger and salt.
- Pour the sauce over the wilted onions.
- Let the concoction simmer for about 10 minutes.
- Drain and rinse your butter, pinto and kidney beans.
- Open up your can of baked beans. Pour the whole can, sauce and all into a 3 quart casserole dish.
- Add the other beans to the dish. Crumble up your bacon and sprinkle it on top.
- Pour your saucy-onion-mixture-of-wonder into the dish.
- Give everything a nice stir.
- Cover your dish and bake at 350 degrees for 1 hour. Remove the dish from the oven, give the beans a stir and put the old girl right back in, uncovered this time. Cook for 30 more minutes. Or, cook them in your Crock Pot on low for 3-4 hours.
