FRESH SPRING ROLLS WITH PEANUT SAUCE



Fresh Spring Rolls with Peanut Sauce image

These Vietnamese spring rolls are fresh, not fried! They're the perfect party appetizer or light meal. The peanut sauce sends them over the top. Recipe yields 8 spring rolls.

2 ounces rice vermicelli or maifun brown rice noodles*
1 teaspoon toasted sesame oil
1/4 teaspoon fine sea salt
1 cup torn butter lettuce, ribs removed
1 cup very thinly sliced red cabbage
2 medium carrots, peeled and cut into matchsticks or sliced into strips with a julienne peeler
2 Persian (mini) cucumbers or 1 small cucumber, thinly sliced or sliced into strips with a julienne peeler
2 medium jalapeños, ribs and seeds removed, thinly sliced
1/4 cup thinly sliced green onions
1/4 cup roughly chopped fresh cilantro
1/4 cup roughly chopped fresh mint
8 sheets rice paper (spring roll wrappers)
1/3 cup creamy peanut butter
2 tablespoons rice vinegar
2 tablespoons reduced-sodium tamari or soy sauce
2 tablespoons honey or maple syrup
1 tablespoons toasted sesame oil
2 cloves garlic, pressed or minced
2 to 3 tablespoons water, as needed

Steps:

  • To make the spring rolls: Bring a pot of water to boil and cook the noodles just until al dente, according to package directions. Drain, rinse them under cool water, and return them to the pot. Off the heat, toss the noodles with the sesame oil and salt, and set aside.
  • Fill a shallow pan (a pie pan or 9″ round cake pan works great) with an inch of water. Fold a lint-free tea towel in half and place it next to the dish. Make sure your prepared fillings are within reach. Combine the green onion, cilantro and mint in a small bowl, and stir.
  • Place one rice paper in the water and let it rest for about 20 seconds, give or take. You'll learn to go by feel here-wait until the sheet is pliable but not super floppy. Carefully lay it flat on the towel.
  • Leaving about 1 inch of open rice paper around the edges, cover the lower third of the paper with a few pieces of butter lettuce, followed by a small handful of rice noodles, some cabbage, and a few strips of carrot, cucumber and jalapeño. Sprinkle generously with the herb mix.
  • Fold the lower edge up over the fillings, rolling upward just until the filling is compactly enclosed. Fold over the short sides like you would to make a burrito. Lastly, roll it up. Repeat with the remaining ingredients.
  • To make the peanut sauce: In a small bowl, whisk together the peanut butter, rice vinegar, tamari, honey, sesame oil, and garlic. Whisk in 2 to 3 tablespoons water, as needed to make a super creamy but dip-able sauce.
  • Serve the spring rolls with peanut sauce on the side. You can serve them whole, or sliced in half on the diagonal with a sharp chef's knife.

2 cups Shredded Carrot
3 cups Shredded Coleslaw (OR 1 head of cabbage chopped into thin pieces)
1/2 cup Bean Sprouts
2 cloves garlic (minced)
1/2 tsp Ginger (grated)
2 tbsp cilantro (chopped)
1 bunch scallions (chopped)
2 tbsp rice vinegar
2 1/2 tsp Sesame Oil
1 1/2 tsp soy sauce
2-3 tsp Hoisin
1 cup Shiitake Mushrooms (sliced thin)
1 pack Egg Roll Wraps
Rice Vermicelli Noodles (optional)
1 egg (wash) (if baking)
Vegetable oil (if frying)
Small Bowl of Water
2 tbsp soy sauce
2 tsp Honey
3 tbsp rice vinegar
2 tbsp Sriracha Hot Chili Sauce
1 tbsp Red Chili Garlic Sauce
2 tsp Sesame Oil
1 tbsp ketchup
1-2 tbsp brown sugar

Steps:

  • If baking, preheat oven to 375 degrees F.
  • Mix shredded carrots, shredded cabbage, bean sprouts, minced garlic, grated ginger, cilantro and scallions in a large bowl.
  • Add rice vinegar, sesame oil, soy sauce, hoisin, salt & pepper. Toss until evenly coated.
  • Cut shiitake mushrooms into thin slices and set aside.
  • Boil water and cook rice vermicelli noodles (if using), about 3 minutes & drain. Rinse with cold water and set aside.
  • Place egg roll wrap on a cutting board with a corner facing you.
  • At the bottom corner, lay a few strands of vermicelli, 1-3 sliced shiitake mushrooms & about 1 - 1 1/2 tablespoons of your spring roll mixture.
  • Using your fingers, take a few drops of water from your bowl and lightly rub the top corner and perimeter of the wrap. This is to help the edges stick together when you roll.
  • Fold the two outer corners into the center to create the beginnings of a small pocket. This should leave your wrap at the width of your contents.
  • Take the bottom corner of the wrap and fold it over the mixture. Gently roll until you reach the top, doing your best to keep the contents in place as you make your way up. Repeat with all of your wraps.
  • If frying, fill a pan with about 1/2 inch vegetable oil and heat at medium-high. Once hot, test the temperature by carefully dropping 1 spring roll into the pan and cooking on all sides until golden brown. If you are satisfied with the temperature, repeat with the remaining rolls, 4-5 at a time. Drain on paper towel to remove excess oil.
  • If baking, brush each roll with an egg wash and place on a PREPARED baking sheet, so that when you flip them they do not stick and tear the wrap. Bake for 15 minutes on each side, for a total of at least 30 minutes.
  • Whisk soy sauce, vinegar, honey, Sriracha, red chili sauce, sesame oil, ketchup and sugar in a small bowl until sugar has dissolved.

8 ounces baby bella mushrooms
2 to 2.5 ounces bean thread noodles
2 tablespoons coconut oil
1/4 teaspoon kosher salt
5 scallions, chopped (about 1/3 cup)
4 cloves garlic, grated
1 tablespoon grated fresh ginger
3 cups finely shredded cabbage
1 cup shredded carrot
3 tablespoons low-sodium soy sauce
1 tablespoon rice vinegar
2 teaspoons toasted sesame oil
1 teaspoon sambal oelek
Sixteen 6 1/2-by-6 1/2-inch egg roll wrappers
Nonstick cooking spray, for the egg rolls

Steps:

  • Preheat the oven to 425 degrees F and line a rimmed baking sheet with parchment paper.
  • Set up a food processor fitted with the blade attachment. Add the mushrooms, slightly breaking them up with your hands as you add them. Place the lid on and pulse until the mushrooms are finely chopped, 10 to 12 times.
  • Add the bean thread noodles to a large bowl and cover with boiling water. Set aside.
  • Add the coconut oil to a large sauté pan and heat over medium-high heat until the oil is shimmering. Add the mushrooms and salt. Cook, stirring occasionally, until all of the liquid from the mushrooms has released and evaporated, about 3 minutes. Add the scallions, garlic and ginger. Stir to incorporate and cook until fragrant, about 1 minute. Add the cabbage and carrots and cook, stirring occasionally, until the vegetables have softened, about 4 minutes. Turn the heat down to low and add the soy sauce, vinegar, sesame oil and sambal oelek. Stir to combine.
  • Drain the noodles, then use kitchen scissors to cut the noodles into smaller pieces. Add the noodles to the pan with the vegetables and stir to combine. Turn the heat off and let the mixture cool to room temperature.
  • Arrange one egg roll wrapper on a clean work surface (keep the remaining egg roll wrappers covered with a damp paper towel) with the corners pointing horizontally and vertically. Spoon 1/4 cup filling in the bottom third of the wrapper. Use a pastry brush to brush water along the edges of the wrapper. Pick up the corner of the wrapper closest to you and wrap it up and over the filling. Fold the two sides in, similarly to a burrito, then continue rolling from the bottom to create a roll. Place the finished egg roll on the prepared baking sheet. Continue the process with the remaining filling and egg roll wrappers. (You should end up with 16 egg rolls.) Spray the egg rolls with nonstick cooking spray.
  • Transfer the egg rolls to the oven and bake for 10 minutes. Remove the egg rolls from the oven and flip them. Continue baking until both sides of the egg rolls are golden brown and crisp, an additional 5 minutes.
  • Allow to cool for 5 minutes before serving.

SPICY SPRING ROLLS

2 tablespoons chopped garlic

1 tablespoon hot bean paste or red chili paste
1 tablespoon vegetable oil
1 cup fresh bean sprouts
1 cup grated carrot
1 cup finely sliced savoy cabbage
1 red pepper, julienned
5 shiitake mushrooms, julienned
3 tablespoons mirin (Japanese rice wine)
1 tablespoon hoisin sauce
1/4 cup soy sauce
12 spring roll wrappers
1 cup peeled, grated cucumber
3 tablespoons chopped cilantro
Oil, for frying

Steps:

  • In a very hot wok, briefly saute the ginger, garlic, green onion and chili paste in the oil. Add the bean sprouts, carrots, savoy cabbage, red pepper and mushrooms and cook at high heat until the vegetables begin to soften. Add the mirin, hoisin sauce and soy sauce. Remove from heat and let cool in a bowl at room temperature. Place the spring roll wrappers under a damp cloth to keep them moist. Place wrappers one at a time on a hard surface with one corner pointing towards you. Spoon cooled ingredients into the center. Add a tablespoon of grated cucumber and a sprinkle of cilantro.
  • Fold the side corners into the center. Fold the bottom into the center, making sure the three corners are touching each other. To finish, roll the wrapper away from you and up over the final corner. Store rolls under a damp cloth until ready to fry. Heat enough oil to cover the rolls, and fry seam side down until golden brown. Drain on paper towels and serve with your favorite dipping sauce.

SHRIMP SPRING ROLLS

These crunchy, delicate spring rolls can be fried and frozen for up to 2 weeks. Just let them come to room temperature, then reheat in a 400 degree F oven. The sweet-and-spicy sauce can be used for other fried goodies, like shrimp or chicken tenders. Look for spring roll pastry wrappers, which are slightly different from eggroll and wonton wrappers, in the freezer section of Asian specialty markets.

1/3 cup sugar
1 1/2 teaspoons ketchup
1 1/2 teaspoons rice wine vinegar
1 1/2 teaspoons Sriracha
3/4 teaspoon cornstarch
1 tablespoons vegetable oil
2 teaspoons grated ginger
2 cloves garlic, minced
1 cup finely chopped green cabbage
1/2 carrot, shredded (about 1/2 cup packed)
6 ounces small shrimp, finely chopped
3 scallions, thinly sliced on the diagonal
2 tablespoons mirin
1 tablespoons soy sauce
Kosher salt and freshly ground black pepper
1/2 teaspoon toasted sesame oil
1/2 cup mung bean sprouts
9 large sheets spring roll pastry wrappers, cut into quarters (See Cook's Note)
1 large egg, beaten
Peanut or canola oil, for frying

Steps:

  • For the sauce: Whisk together 1/3 cup water, the sugar, ketchup, vinegar, Sriracha and cornstarch in a small saucepan over medium-high heat, and bring to a boil. Remove from the heat when the sauce begins to thicken, 30 to 45 seconds. Let cool.
  • For the spring rolls: Meanwhile, heat a large skillet or wok over medium-high heat. Add the oil, ginger and garlic, and cook, stirring constantly, until aromatic, about 30 seconds. Add the cabbage and carrots, and cook, stirring, until wilted, about 1 minute. Add the shrimp, scallions, mirin, soy sauce, 1/4 teaspoons salt and a few cracks of black pepper, and cook, stirring, until the shrimp turn pink, about 2 minutes. Remove from the heat, and stir in the sesame oil. Let the mixture cool for 15 minutes. Fold in the bean sprouts. When completely cool, roughly chop the mixture and set aside.
  • Put 1 spring roll wrapper on a work surface with a point facing you (it should be a diamond shape). Put about 1 tablespoon of the shrimp mixture in the center of the wrapper, and spread to make a 1-inch log. Fold the bottom of the wrapper over the filling, rolling tightly to keep the spring rolls firm. Fold the sides of the wrapper over the filling. Brush the top edge of the wrapper with egg. Roll up tightly, pressing to seal the edge. Put finished rolls, seam-side down, on a plate or baking sheet until ready to fry. Repeat with the remaining wrappers and filling.
  • Fill a large heavy-bottomed pot or Dutch oven with 3 inches of oil, and attach a deep-fry thermometer to the side. Heat the pot over medium-high heat to 375 degrees F. Fry the spring rolls in batches, 4 or 5 at a time, until lightly golden, about 2 minutes. Remove with a slotted spoon to a paper towel-lined plate to absorb excess oil. Serve with the dipping sauce.

1 tablespoon finely chopped garlic
1 tablespoon finely chopped ginger
2 serrano chiles, stemmed and finely chopped
1/2 pound ground pork (may substitute ground turkey)
1 cup shredded Chinese cabbage
1 cup bamboo shoots, rinsed and julienned
4 tablespoons soy sauce
1 cup black mushrooms, soaked and julienned
2 tablespoons Shaoxing wine
2 tablespoons cornstarch mixed with 2 tablespoons water (slurry)
Salt and pepper
1 cup chopped scallions, both white and green parts
1 cup bean threads, soaked in warm water to cover until soft (10 to 15 minutes), drained well, and cut into 2-inch pieces
1 (1-pound) package egg roll wrappers
1 egg beaten with 1/4 cup water, for egg wash

1/3 cup rice wine vinegar
2 teaspoons soy sauce
2 tablespoons Shaoxing wine
2 cups fresh pineapple juice
1/4 cup brown sugar
1/4 cup white sugar
1 teaspoon red chile flakes
3/4 cups pineapple, cut into cubes
1/2 cup mango, cut into cubes
1/4 cup each red and green peppers, 1/2 inch dice
2 tablespoons cornstarch mixed with 2 tablespoons water (slurry)
1/3 cup dry mustard, mixed with 1/4 cup water
1/3 cup Dijon mustard
1 tablespoon sugar

Steps:

  • Heat a wok or skillet over high heat. Add the oil and swirl to coat the pan. When the oil is hot, add the garlic, ginger, and chiles and cook until soft, about 2 minutes. Do not allow the aromatics to burn. Add the pork and stir-fry until just cooked through, about 3 to 5 minutes. Add the cabbage, bamboo shoots, soy sauce, mushrooms, wine and cook until soft, about 3 minutes. Add the cornstarch slurry. Season, to taste, with salt and pepper. Transfer the filling mixture to a medium bowl and add the scallions and the bean threads to the cooled mixture. Sir to blend.
  • Dampen a kitchen towel. Place 5 wrappers on a work surface with 1 point each near you and cover the remainder with the cloth to prevent drying. Place about 1/4 cup of the filling on the wrappers, just above the near corners. Bring the corner nearest you up over the filling and roll halfway; brush the edges with the egg wash, then fold in the side corners and continue rolling to enclose the filling completely. Roll as tightly as possible. Cover with the cloth and allow the rolls to rest, seam side down; this allows the egg to set. Fill and roll the remaining wrappers, cover, and allow the rolls to rest at least 2 minutes.
  • Fill a fryer or heavy medium pot 1/3 full with the oil and heat to 350 degrees over high heat. Add the egg rolls 4 to 6 at a time and fry them until light golden, turning as needed, about 5 minutes.
  • Remove them with a slotted spoon and drain on paper towels. Fry again at 350 degrees (until golden) just before serving for extra crispiness.
  • To Serve: Place a spoonful of the Sweet and Sour Sauce in the middle of a serving plate. Slice the rolls on the diagonal and arrange 3 of them around the sauce. Drizzle the spicy mustard around the outside of the plate and serve.
  • In a saucepan over medium high heat, add the vinegar, soy sauce, wine, pineapple juice, and sugar. Bring to a boil and then reduce the heat to medium. Add the chile flakes, pineapple, mango, peppers, and cornstarch, and let simmer for 2 minutes. Serve hot.
  • In a small bowl, whisk together the mustards, and sugar until a smooth paste is formed.

2 teaspoons fresh ginger, grated
1 -2 teaspoon wasabi paste

2 cups broccoli, shredded or 2 cups broccoli slaw mix
5 1/4 ounces extra firm tofu, drained, chopped (about 1 cup)

2 tablespoons lime juice
1/2 teaspoon crushed red pepper flakes

Steps:

  • FOR SPRING ROLLS ~ Carefully dip each rice paper quickly in water & place between paper towels or clean cotton dish towels, then set aside for 10 minutes.
  • Meanwhile, in a small bowl combine ginger, wasabi paste & lime juice, then stir in mayonnaise dressing.
  • In a large bowl toss together shredded broccoli, tofu & coconut.
  • Add ginger mixture & toss to coat.
  • Line each rice paper with a lettuce leaf.
  • Spoon broccoli mixture over lettuce, then wrap rice paper around broccoli mixture.

1 cup sugar, divided
1/2 cup distilled white vinegar
1/2 teaspoon salt
1 tablespoon chinese-style chili-garlic sauce

Steps:

  • In a small saucepan, combine vinegar and a 1/2 cup of the sugar.
  • Bring to a low boil over med-high heat, stirring occasionally.
