Chilled Lobster Salad with Sweet Summer Corn and Tomatoes, the perfect light summer salad made with sweet summer corn, grape tomatoes, garden herbs and chilled steamed lobster.

2 medium ears of corn
12 oz cooked (chilled lobster meat (yield from 2 - 1-1/2 lb lobsters))
1 cup grape tomatoes (sliced in half)
1 tbsp chopped chives
juice of 1 large lemon
4 tsp olive oil
salt and fresh cracked pepper to taste
8 Boston lettuce leaves (rinsed and dried)

Steps:

  • Cook corn in boiling water for about 4-5 minutes; set aside to cool.
  • Cut kernels of the husk and place in a large bowl.
  • Chop chilled lobster meat from tails and claws into large bite sized chunks; add to the bowl.
  • Add tomatoes, chives, lemon juice, olive oil, and salt and fresh cracked pepper to taste; toss to combine.
  • Place lettuce leaves on two plates.
  • Top each plate with lobster salad and enjoy!

1 1/2 pound whole cooked lobster*
1/4 cup celery (, thinly sliced)
3 tablespoons mayonnaise
1 tablespoon fresh lemon juice
1/2 teaspoon Kosher salt
1/4 teaspoon black pepper
1 tablespoon chives (, chopped)

Steps:

  • In a medium mixing bowl, combine celery, mayonnaise, lemon juice, Kosher salt, black pepper and chives.
  • When smooth, toss with chopped lobster meat.
  • Cover and chill for at last 1 hour before serving.
  • Serve over leafy greens, avocado halves or tomato halves.

1/3 cup mayonnaise
1 teaspoon lemon zest
1 lemon, juiced
Salt and freshly ground black pepper
1 stalk finely chopped celery
1 finely chopped shallot
1 tablespoon finely chopped fresh tarragon leaves
1 tablespoon finely chopped chives
3 lobster tails cooked (about 1 pound lobster meat), chopped
Lemon slices, for garnish
Dry rub, for garnish (recommended: Neelys)

Steps:

  • Combine mayonnaise, lemon zest, lemon juice, salt and pepper, celery, shallot, tarragon and chives in a bowl.
  • Add lobster meat to mayonnaise sauce and combine.
  • Rub the rim of 4 martini glasses with a lemon. Dip the rim in some dry rub. Divide the lobster salad between the 4 glasses. Garnish with dry rub and lemon slices.

6 ounces orecchiette or 6 ounces shell pasta
2 cups cooked lobster meat, cut into bite-sized chunks
1 cup diced celery
1/2 cup thinly sliced green onion, including tender green tops
2 tablespoons chopped fresh tarragon (or 2 t. dried tarragon, crumbled)
3/4 cup mayonnaise
salt
fresh ground black pepper
1 tablespoon tarragon vinegar

Steps:

  • Cook the pasta per package directions for al dente.
  • Drain in a colander and rinse briefly under cold running water; shake colander gently to drain; set aside.
  • To make the dressing: in a small bowl, whisk the mayonnaise, salt, and pepper together; whisk in the vinegar; set aside.
  • Place the drained pasta in a large bowl; add in the lobster, celery, green onions, and tarragon; toss gently to mix.
  • Pour the dressing over the mixture; toss gently but thoroughly to mix.
  • Cover and refrigerate at least 2 hours and up to 8 hours.
  • If you refrigerate the salad for 8 hours or more, you may want to add a small amount of mayonnaise as the pasta will absorb the dressing over a long period of time.
