A nice moist loaf and a great way to use some of the zucchini that is growing faster than I can use at this time of the year. If you don't have a convection oven bake for 45 minutes. I like to sprinkle a sugar/ cinnamon mixture on the top of each loaf.

Number Of Ingredients 11

3 eggs
1 cup applesauce
2 cups raw zucchini, shredded
1 3/4 cups sugar
1/4 teaspoon baking powder
2 teaspoons baking soda
2 teaspoons cinnamon
1 teaspoon salt
2 teaspoons vanilla
1 cup nuts, chopped
2 cups whole wheat flour

Steps:

  • Shred zucchini and put into a strainer and press or squeeze with hands to get excess liquid out.
  • Beat eggs, sugar, and apple sauce together.
  • Add flour, baking powder, soda, cinnamon, salt, vanilla, and nuts.
  • Mix together by hand.
  • Add zucchini (minus liquid).
  • Beat mixture.
  • Pour into 3 greased and floured loaf pans.
  • Bake 35 minutes at 350°F on Convection setting.

I have been using this recipe for some time now, it makes a dense, moist loaf, and I use it to sneak veggies into my 5 year old! This recipe makes 2 loaves. Hope you enjoy!

3 eggs
1 cup oil
2 cups sugar
3 cups shredded zucchini
2 teaspoons vanilla
3 cups flour
1 tablespoon cinnamon
1 teaspoon baking powder
1 teaspoon baking soda
1 teaspoon salt
1 cup raisins
1/2 cup chopped walnuts

Steps:

  • Pre-heat oven to 350 degrees, and grease 2 loaf pans.
  • Mix eggs, oil and sugar and beat until creamy.
  • Add the rest of the ingredients and mix well.
  • Bake for 60-70 minutes in two loaf pans.

2 cups finely shredded zucchini
1 teaspoon salt
1 cup corn oil
3/4 cup sugar
3 eggs, room temperature
1/2 cup honey
1/4 cup fresh lemon juice
2 tablespoons grated lemons, zest of
2 1/2 cups all-purpose flour
2 teaspoons baking soda
1/2 teaspoon baking powder
1 1/2 cups chopped almonds, toasted
2 tablespoons honey

Steps:

  • Mix zucchini and salt in colander.
  • Weight with plate and let drain 1 hour.
  • Squeeze out excess moisture.
  • Preheat oven to 350F.
  • Grease 13 X 9 inch pyrex baking dish.
  • Mix oil, sugar, eggs, ½ cup honey (if you measure out the oil before measuring out the honey, it will be easier to get the honey out of the measuring cup since it will have a film of oil in it), lemon juice and zest in large bowl until well-blended.
  • Mix in zucchini.
  • Sift flour, baking soda and baking powder; stir into zucchini mixture.
  • Do not overblend.
  • Fold in nuts.
  • Pour into prepared dish.
  • Bake until springy to touch, about 30-35 minutes.
  • Spread 2 tblsps honey over top.
  • Cool in pan and serve at room temperature.

Steps:

  • in a large mixing bowl, beat eggs.
  • add sugar, oil and vanilla.beat well.
  • stir in zucchini and fruit coctail.
  • combine dry ingredients, stir into zucchini mixture.
  • stir in nuts.
  • pour into two greased and floured 8x4" loaf pans.
  • bake at 325* for 60-70 minutes or until bread tests done.
  • cool 10 minutes before removing from pans to wire rack.

1/2 cup butter, softened
1 cup sugar
2 large eggs
1 teaspoon vanilla extract
1-1/2 cups all-purpose flour
3 tablespoons baking cocoa
1/2 teaspoon salt
1/2 teaspoon baking soda
1/2 teaspoon ground cinnamon
1 cup grated unpeeled zucchini
1/2 cup semisweet chocolate chips

Steps:

  • In a large bowl, cream the butter and sugar until light and fluffy. Beat in eggs and vanilla. Combine the flour, cocoa, salt, baking soda and cinnamon; gradually add to creamed mixture just until moistened. Fold in zucchini and chocolate chips., Spoon into a greased 8x4-in. loaf pan. Bake at 350° for 60-70 minutes or until a toothpick inserted in the center comes out clean. Cool for 10 minutes before removing from pan to a wire rack.
