2 tablespoons minced garlic (6 cloves)
2 tablespoons minced fresh parsley

Steps:

  • Preheat the oven to 400 degrees F.
  • Cut the potatoes in half or quarters and place in a bowl with the olive oil, salt, pepper, and garlic; toss until the potatoes are well coated. Transfer the potatoes to a sheet pan and spread out into 1 layer. Roast in the oven for 45 minutes to 1 hour or until browned and crisp. Flip twice with a spatula during cooking in order to ensure even browning.
  • Remove the potatoes from the oven, toss with parsley, season to taste, and serve hot.

½ teaspoon dried marjoram

3 sprigs fresh rosemary
3 cloves garlic, whole, peeled, bruised
2 bay leaves
2 tablespoons salt
2 tablespoons olive oil
1 pinch cayenne pepper
1 pinch kosher salt

Steps:

  • Place potatoes in a large pot with water. Bruise the rosemary with the dull side of a knife blade and place in the pot. Add garlic, bay leaves, and salt. Bring to a boil; simmer for 5 minutes. Drain; let potatoes air dry.
  • Preheat oven to 375 degrees F (190 degrees C).
  • When potatoes are thoroughly dry, transfer them back to the pot. Drizzle with olive oil, cayenne pepper, and a pinch of salt. Stir to coat. Transfer potatoes to a rimmed sheet pan. Bake until potatoes are golden brown and crusty, and the flesh is creamy and soft, about 35 to 45 minutes, depending on the size of the potatoes.

Roasted potatoes with no herbs but a lot of taste. I came up with this combining several other roasted potatoes recipes I had tried and didn't want all the fuss of using any other ingredients. Good when you just want to use what you have on hand. Fresh ground pepper, kosher salt and butter is a must! Use a large baking dish.

7 red potatoes
2 tablespoons olive oil
2 tablespoons melted butter
1 teaspoon kosher salt (a little more if you like)
fresh ground pepper (I use mixed peppercorns)

Steps:

  • Preheat oven to 400°F.
  • Melt butter over medium, set aside.
  • Wash, dry and quarter potatoes. Keep skins on.
  • Place potatoes in a baking dish and coat with olive oil making sure the potatoes are thoroughly coated.
  • Add kosher salt and toss with potatoes.
  • Add melted butter and toss with potatoes.
  • Liberally ground pepper over potatoes and toss.

5 1/2 pounds potatoes
2 tablespoons semolina
2 (11-ounce) jars goose fat

Steps:

  • Preheat the oven to the hottest possible temperature.
  • Peel the potatoes, and cut each into 3 by cutting off each end at a slant so that you are left with a wedge or triangle in the middle.
  • Place the potatoes into salted cold water in a saucepan, and bring them to a boil. Boil the potatoes for 4 minutes. Drain the excess water from the potatoes using a colander and then tip the potatoes back into the empty saucepan.
  • Sprinkle the semolina over the top of the potatoes. Hold a lid firmly on top of the pan and shake the potatoes around to coat them well and so that their edges disintegrate or fuzz and blur a little: this facilitates the crunch effect later.
  • Place the goose fat into a large roasting tin and heat in the oven until very hot. Then carefully place the semolina-coated potatoes into the hot fat and roast the potatoes in the oven for 45 minutes to an hour or until they are darkly golden and crisp, turning them over halfway through cooking. If the oven is hot enough they probably will not need more than about 25 minutes a side; and it's better to let them sit in the oven (you can always pour off most of the fat and leave them in the tin) until the very last minute.

6 -8 large white potatoes or 6 -8 large yukon gold potatoes
1 large sweet onion, diced to about 1/4 inch pieces (Walla Wallas are the best)
1/2 cup butter, one cube
2 cups cream or 2 cups half-and-half
1/2 teaspoon seasoning salt (or to taste)

Steps:

  • Boil potatoes WITH THE SKIN ON until barely fork tender, about 20 minutes.
  • Drain and cool.
  • While potatoes are cooling, saute onion in butter just until opaque. You don't want them browned. Set aside.
  • When cool enough to handle, peel potatoes and grate them into a 9 x 13 casserole.
  • Top potatoes with onions and butter, and sprinkle on seasoning salt to taste.
  • Pour cream over potatoes.
  • Bake in a preheated 350°F oven for about 45 minutes or until golden brown on top and cream has cooked into the potatoes.
