There were nine children in our family and Mother had to stretch the budget, so she made these often for dessert. I loved them when I was a child, and they're still a special treat. In fact, I've never met anyone who doesn't like these cookies. They're so simple and quick to make.

1 cup shortening
1-3/4 cups sugar
2 large eggs
1/2 cup milk
1/2 teaspoon vanilla extract
3 cups self-rising flour

Steps:

  • In a bowl, cream together shortening and sugar. Beat in eggs. Add milk and vanilla; beat well. Stir in flour; mix well. , Drop by tablespoonfuls 2-1/2 in. apart onto greased baking sheets. Bake at 350° for 15-20 minutes.

1 stick unsalted butter (room temperature)
3/4 cup granulated sugar
1 large egg at room temperature
2 teaspoons pure vanilla extract
1 1/2 cup all-purpose flour
1/4 teaspoon salt
1/4 teaspoon baking soda

Steps:

  • In a medium sized bowl, whisk together the flour, salt and baking soda and set aside.
  • In the bowl of your mixer, add butter and sugar and mix together on high speed until fluffy and smooth (about 4-5 minutes).
  • Turn mixer to medium speed and add in one egg and vanilla extract and beat until well incorporated.
  • Lastly, turn mixer to slow speed and add in flour mixture in intervals of three beating after each addition to incorporate.
  • After dough is well mixed, turn off mixer and remove dough from mixer and add to a ziploc bag and place in your refrigerator for at least one hour to firm up dough.
  • Once dough is firm, remove from fridge and preheat your oven to 325 degrees.
  • Line your cookie sheet with parchment paper.
  • Taking a measuring tablespoon, scoop out cookie dough the size of the tablespoon and roll into a ball. Using your thumb, gently press the center to flatten a bit and place on the tray.
  • Do the same for the rest of the dough leaving at least an 1 1/2 inches between each dough ball.
  • Bake for 9-11 minutes until golden brown on the edges and remove from the oven.
  • Cool for 5-10 minutes and serve.

  • Gather the ingredients and preheat the oven to 350 F.

1 ¾ cups white sugar
2 eggs
3 cups all-purpose flour
½ teaspoon baking soda
½ teaspoon salt

Steps:

  • In a medium bowl, cream together the butter and sugar until smooth. Beat in the eggs one at a time, then stir in the vanilla. Combine the flour, baking soda, salt and nutmeg; stir into the creamed mixture. Knead dough for a few turnns on a floured board until smooth. Cover and refrigerate until firm.

Steps:

  • Beat the butter at medium speed with an electric mixer until creamy; gradually add the sugar, beating well. Add the eggs 1 at a time, beating until blended after each addition. Add the vanilla, beating until blended.
  • Combine the flour, baking soda and salt; gradually add the flour mixture to the butter mixture, beating at low speed until blended.
  • Divide the dough in half; wrap each portion in plastic wrap and refrigerate 1 hour.
  • Heat the oven to 350 degrees F. Line 2 baking sheets with parchment paper. Roll half of the dough out to 1/4-inch thickness on a floured surface. Cut out cookies with a 2 1/2-inch round cutter, and place 1 inch apart on the prepared baking sheets. My grandmother would always have a plastic tub of these cookies waiting for us when we would come to visit. This is a very old Southern recipe--my grandmother cooked for many years with a wood-burning stove, so the baking temperature is approximate. You may need to adjust the temperature up or down, depending upon your oven. Of all the wonderful things that she made, these were the best! They are great with milk or coffee, and they are a much-loved family favorite.

2 cups flour
2 1/2 cups sugar
2 eggs
1 cup buttermilk
3/4 cup shortening
1 teaspoon baking soda
1 teaspoon baking powder
1 teaspoon vanilla extract

Steps:

  • Mix shortening and sugar together with pastry blender or two forks.
  • Combine eggs, buttermilk, and vanilla. Stir wet ingredients into shortening/sugar mixture.
  • Sift flour, baking soda, and baking powder together.
  • Sift dry ingredients in with wet ingredients and mix thoroughly. Dough should be the correct consistancy to roll, so you may need to add or decrease the dry ingredients as necessary.
  • Place dough on lightly floured board or pastry cloth and roll out to approximately 1/4 inch thick.
  • Cut cookies with round cookie cutter (my grandmother used a 2-inch biscuit cutter) and place onto an ungreased cookie sheet.
  • Bake at 350 degrees for 10 to 15 minutes until just beginning to brown. Don't overcook!
  • Store in a covered tin or plastic container.
