Greek Yogurt Herb Dressing image

This fresh and tangy salad dressing is low in calories (just 60 per serving) and in fat (5 grams per serving). It also does double duty-it's great as a dip with vegetable crudites.

3/4 cup 2-percent Greek yogurt
2 tablespoons rice vinegar
2 tablespoons olive oil
1/2 cup chopped fresh chives (from a small bunch)
1/2 cup chopped fresh parsley
1 small garlic clove
Kosher salt and freshly ground black pepper

Steps:

  • Combine the yogurt, 2 tablespoons water, rice vinegar, olive oil, chives, parsley, garlic and 1/2 teaspoon each salt and pepper in a blender or food processor and blend until smooth. Cover and chill for 30 minutes before serving. The dressing will keep, refrigerated, for up to 3 days.

½ (8 ounce) package penne pasta
1 cup frozen peas
5 ounces sharp Cheddar cheese, cubed
6 slices cooked crispy bacon, minced
½ bell pepper, chopped
¼ onion, minced
1 (6 ounce) container plain Greek yogurt

Steps:

  • Bring a large pot of lightly salted water to a boil. Add penne and cook, stirring occasionally, until tender yet firm to the bite, about 11 minutes. Drain pasta and transfer to a large bowl. Mix in frozen peas (which will thaw and cool the pasta at the same time).
  • Add Cheddar cheese, bacon, bell pepper, and onion; mix well. Stir in Greek yogurt. Serve immediately or refrigerate for later.

This is a staple in our home. A simple salad that is made throughout the Middle East, Arabian influenced African countries such as Sudan were it is called Salatet Zabady bil Ajur & the Mediterranean. It is served as a mezza or salad side dish. It is especially good as a cool sauce to be paired with hot rice dishes as we do. Recipe#387395, for example. Modified from Delights from the Garden of Eden by Nawal Nasrallah. Prep time does not include 30 minutes in the refrigerator.

1 cup plain balkan yogurt (thick yogurt, though you could use regular if you wish to)
1 cup cucumber, finely diced
1 garlic clove, minced and crushed
sea salt, to taste
1 tablespoon mint, finely chopped (optional, but I do like to add it depending what it is served with) or 1 1/2 teaspoons dried mint, crushed (optional, but I do like to add it depending what it is served with)

Steps:

  • In a bowl stir yogurt until creamy. Add finely diced cucumber, minced and crushed garlic, sea salt to taste, and optional mint. Stir well and refrigerate for about 30 minutes before serving but not too much longer or cucumbers will lose their crunch.
  • Enjoy!

2 cups granny smith apples, peeled and diced into 1 inch cubes
1 cup red onion, thinly sliced
1 cup cucumber, skinned,seeded and diced
1/4 cup fresh cilantro, chopped
1 teaspoon salt, to taste
2 tablespoons jalapeno peppers, chopped (I leave half of the seeds in)
4 -5 cups plain yogurt, slightly whipped with a whisk to make it smooth (you can also adjust it according to your preference)

Steps:

  • Season yogurt with salt, mixing well.
  • Add apples, onions, cucumber, cilantro and jalapeno.
  • Mix all ingredients until well combined and place in the refrigerator before serving to guests, (or you can prepare the salad right before serving.).
  • You can also add raisins if you like.
  • Enjoy!
