HERB & CHEESE QUICK BREAD
The restaurant next to my old office building used to give you a piece of this wonderful bread with every meal. When they sold the restaurant, they gave out the wonderful recipe. Enjoy!

Steps:
- Combine dry ingredients.
- Cut in margarine or butter.
- Combine cheese, egg, yogurt and milk, and add to other ingredients.
- Dump into a round or square 9-inch pan, sprinkle with poppy seeds.
- Bake at 350°F for 30-45 minutes, or until a knife inserted in the center comes out clean.

Steps:
- Beat yogurt and salt together in large bowl until smooth. Gradually add flour until you have a stiff dough. Tip onto a lightly floured bench and gradually knead dough, incorporating any remaining flour until the dough is soft and only slightly sticky. Transfer to a clean bowl and stand covered 30 minutes.
- When ready to cook, divide dough into 8 equal portions. Roll out thinly. Pile a small handful of cheese in the centre of the rolled out dough. Brush a little water around edges before folding over cheeses to seal. Pat cheese parcel with palm of hand until pressed together and about 5mm thick.
- Heat a large non-stick frying pan over very high heat. When hot, cook cheese parcels one at a time until browned and crisp on base. Flip over and continue to cook on other side until browned. Transfer to a large chopping board and cut in half to serve. Serve with salsa as a light snack.
- Tomato Salsa: Combine all ingredients in a medium bowl, stir well. Serve with cheese bread.

CHEESE AND YOGURT QUICK BREAD
This bread is very simple to make. You just need one bowl and you stir everything by hand. The strained Greek yogurt makes the bread very moist and also reduces the calories and fat content.

- Preheat the oven to 350°F. Spray an 9- x 5-inch loaf pan with PAM spray or grease pan with oil/butter.
- In a large bowl, stir together the flour, baking powder, and salt. Stir in the grated cheese. Add in the milk, yogurt, melted butter and egg. Stir until everything is combined but don't overmix.
- Pour the batter into the prepared pan.
- Bake for 45-55 minutes, until the loaf is golden and knife inserted comes out clean. Let bread finish cooling in pan before serving.

- Mix everything together in a bowl, except the olive oil and then transfer the mixture to a cloth bag.
- Hang it over a sink or another large pot to collect the liquid.
- Allow it to drip for 4 days continuously.
- Shape into walnut-sized balls.
- Transfer to a clean jar.
- Pour in enough olive oil to cover all the prepared balls.

YOGURT CHEESE (LABNEH)
This is an old-world recipe. It is really just drained, salted yoghurt, very easy to make and very easy to preserve. I guarantee that once you have made these and tasted how delicious they are, they will become a staple in your home.

Steps:
- In a large bowl stir the salt into the yoghurt.
- Spoon the yoghurt in the center of a piece of doubled cheesecloth or soft cotton fabric (preferably undyed and immaculately clean).
- Pull corners up and tie tightly.
- Suspend from a stationary object over a bowl (to catch liquid).
- Let this hang overnight or about 12 hours.
- When well drained it will be the consistency of cottage cheese.
- Remove from the cloth.
- Store covered in the refrigerator until needed.
- You can mix in fresh or dried herbs, minced garlic, pepper flakes, anything you would use to make an herbed cheese.
- Or you could drizzle with olive oil, sprinkle with fresh lemon juice and some cumin and dip pita crisps into it-- The sky's the limit really- so many uses!
- To make Yoghurt Cheese Balls (Labneh Makbus) (a great little appetizer!), drain the yoghurt for 10-12 hours longer.
- Take about one tablespoon at a time and roll it into smooth, round balls and place on a tray.
- Chill until firm.
- This will take several hours.
- After they are firm and slightly dried out, place in a sterile, air tight jar, cover with olive oil.
- Seal the jar and store at room temperature.
- The labneh will keep this way for several months but you will have eaten them all up long before that!
- Enjoy Labneh Makbus cut into halves, drizzled with olive oil and eaten with olives and fresh pita bread.

LABNEH (LEBANESE CREAM CHEESE)
This is the Lebanese version of cream cheese, a lot tastier and lower in calories. Serve on a plate, sprinkled with olive oil, olives, tomatoes, cucumbers and mint. Or simply spread it like cream cheese on pita bread.
