My husband never like banana bread until I developed this uniquely textured version made with yogurt. These loaves freeze well: wrap in foil and freeze; thaw in foil until room temperature.

1/2 cup butter or 1/2 cup margarine, softened
1 cup sugar
2 large eggs, slightly beaten
1 cup mashed very ripe banana (about 3 medium)
1 teaspoon vanilla extract
1 1/2 cups flour
1 teaspoon baking powder
1/2 teaspoon baking soda
1/2 teaspoon salt
3/4 cup plain yogurt
1 cup chopped nuts, preferably toasted
2 tablespoons wheat germ (optional)

Steps:

  • Preheat oven to 375 degrees.
  • Cream margarine and sugar.
  • Add eggs, beating well.
  • Beat in bananas and vanilla until well blended.
  • Stir dry ingredients together; combine with first mixture.
  • Stir in yogurt and nuts.
  • Pour into 2 small (7 x 3") greased loaf pans or 1 large (9 x 5") greased loaf pan.
  • If desired, sprinkle wheat germ over top.
  • Bake 1 hour for small loaves and 80 minutes for large loaf.
  • Do NOT underbake as the yogurt makes this very moist.

2 cups (240 g) all-purpose flour
1 cup (200 g) brown sugar
3/4 teaspoon baking soda
1/2 teaspoon salt
3 (1 1/2 cups or 450 g) large overripe bananas, mashed
1/4 cup (4 tablespoons) plain whole fat yogurt
2 large eggs, beaten lightly
6 tablespoons unsalted butter, melted, plus more for greasing
1 teaspoon vanilla extract
2 tablespoons rum, optional (Captain Morgan brand)

Steps:

  • Preheat the oven to 350°F (175°C). Grease a loaf pan (9x5 inch loaf pan).
  • Add the walnuts on a rimmed baking sheet, slide in the oven and toast until fragrant, 5 to 10 minutes. Let cool.
  • In a large bowl, combine the flour, walnuts, brown sugar, baking soda and salt. In a medium bowl, stir the mashed bananas, yogurt, eggs, butter and vanilla with a spoon. Add rum, if using. Lightly fold the banana mixture into the dry ingredients with a rubber spatula, mixing just until combined. The batter should be thick and chunky. Scrape the batter into the loaf pan.

This is an adaptation of Sour Cream Banana Bread which I posted, then found out it was a duplicate. The difference is you use yogurt instead of sour cream. You may use plain, or be adventurous and try vanilla, lemon, or your choice of flavors! Or go ahead and use sour cream if you wish. I even used part mayonnaise once in a pinch. For the nuts, use whatever nuts you wish. So here is the recipe,I hope you enjoy! I used to make this for the Colonial Pines Inn in Highlands, NC. It was always well received, and the customers could buy a loaf to take home, which they frequently did!

3 very ripe bananas, mashed (about 1 1/4 cup mashed banana)
2 eggs, at room temperature (very important to be at room temp)
1/3 cup pure maple syrup (do not use honey)
1/2 cup plain or vanilla greek yogurt (whole milk or 2% is best)
1 teaspoon vanilla extract
1 3/4 cup whole wheat pastry flour*
1 teaspoon baking soda
½ teaspoon cinnamon
¼ teaspoon salt
1/3 cup butter, melted and cooled (you can also use olive oil or melted and cooled coconut oil but I prefer butter)
Optional add-ins:
1/2 cup chopped walnuts or pecans
1/2 cup chocolate chips, dairy free if desired
2 tablespoons chocolate chips, for sprinkling on top

Steps:

  • Preheat oven to 350 degrees F. Line a 8 1/2 x 4 1/2 inch pan with parchment paper and grease the inside of the pan to prevent sticking.
  • In a large bowl mix together the mashed banana, eggs, maple syrup, greek yogurt and vanilla extract to a bowl until well combined. (OR if you prefer, you can add all the wet ingredients to a blender to combine -- I prefer to mix in a bowl.)
  • In a large bowl, whisk together the dry ingredients: whole wheat pastry flour, baking soda, cinnamon and salt. Add dry ingredients to wet ingredients and mix until just combined. Do not overmix!
  • Next, mix in the melted and cooled butter (or coconut oil). At this point you can fold in an of the following: ½ cup chopped walnuts or ½ cup chocolate chips (or both!).
  • Add banana bread batter into prepared pan. Optional but not required: split a banana down the middle vertically then add on top of the batter or just add banana slices on top, side by side. Bake for 50-60 minutes or until a tester inserted into the middle comes out clean or with just a few crumbs attached. Allow bread to cool in the pan for 10 minutes, then remove and transfer to a wire rack to finish cooling.
  • Once bread is cool, cut into 12 slices. Serve with nut butter spread on top for a healthy snack or breakfast on the go.

½ cup plain Greek yogurt

1 1/2 cups (180 g) all-purpose flour
1/2 tsp baking soda
1/4 tsp sea salt
2 large eggs
2 medium-sized ripe bananas (200 g or 1 cup mashed)
1/2 cup (115 g) plain or vanilla Greek yogurt
1/4 cup (60 ml) maple syrup
1/4 cup (50 g) brown sugar
Optional add-ins: 1/2 cup chocolate chips/raisins/nuts

Steps:

  • Preheat your oven to 350ºF (176ºC), and lightly grease a 9 x 5 (23cm x 13cm) loaf pan.
  • In a large mixing bowl, combine the flour, baking soda, and salt. Set aside.
  • In a smaller mixing bowl, lightly beat the eggs until the yolks break apart. Whisk in the mashed bananas, yogurt, maple syrup, and sugar (if using), mixing until smooth.

I came up with this recipe to use up some extra bananas and yogurt, but since I live alone, eating a whole banana bread to myself is... well... pure gluttony. So, to my great pleasure, there is no willpower needed here! I am very proud of how it came out. It is very moist and the buckwheat gives it a nice flavour. If you are used to regular store-bought over-sweetened cakes, I recommend you increase the amount of sugar in the recipe or, you can use these tricks: use over-ripened bananas (they are sweeter), use sweetened applesauce and/or vanilla yogurt instead of plain.
