- Preheat the oven to 400°F
- In a small bowl, mix the chili powder with the cumin, salt and pepper. Rub the spice mixture all over the pork chops.
- In a large ovenproof skillet, heat the olive oil until shimmering. Add the pork chops and cook over high heat until browned, about 1 minute per side.
- Add the garlic, lime zest, lime juice and cilantro to the skillet and roast the chops in the center of the oven for 10 minutes, or until rosy throughout.
- Transfer to plates and serve.

- In a Dutch oven, cook the pork, onions and celery in butter over medium heat until meat is no longer pink. Stir in the beans, broth, water, jalapenos, spices, garlic, salt, parsley and hot pepper sauce if desired. Bring to a boil. Reduce heat; cover and simmer for 1-1/2 hours. , Uncover; simmer 30-40 minutes longer or until chili reaches desired consistency. Sprinkle with cheese.

Another gem from WW website. Broiled in the oven, quick and easy, they turned out juicy and crispy on the outside. Recipe needed salt, so we salted at serving time.

Steps:
- Make a paste with the ingredients, rub both sides of chops and place on sprayed broiler pan. Broil about 4 minute on each side. If chops are thicker, you'll need to broil another few minutes.

- Combine all ingredients, except the chops, and mix well with small whisk.
- Brush mixture on chops and either grill by searing on both sides and then cooking more slowly for 30 minutes or until done, brushing chops occasionally with the sauce.
- Or to broil the chops; place chops on a broiler rack 5" from heat and broil about 12 minutes per side or until done.

Found this recipe and the taste is spicy and sweet, and the chops come out juicy and not dried out. Great with roasted potatoes, and a nice salad. Hope you enjoy!

- Brush fresh peaches with lemon to prevent darkening and keep refrigerated.
- Combine garlic, coriander, pepper, brown sugar and soy sauce.
- Place chops on shallow rimmed plate or pan and brush both sides with the mixture.
- Cover and marinate at least 30 min (can be refrigerated overnight).
- Grill chops over moderately hot coals, preferrably in a covered BBQ for 10-12 min per side, or until cooked thru.
- 5 minutes before chops are done, place peach halves on grill, brush with butter.
- Top each chop with one peach half, sprinkle with chopped parsley and serve.
SWEET AND SPICY CHILI PORK CHOPS
From Cooking Light. What's particularly nice about this recipe is that, except for the chops, you are likely to have everything else handy. Quick recipe, great for weeknights. I usually use slightly larger bone-in chops, which I prefer.

- Heat a large nonstick skillet over medium-high heat. Coat pan with cooking spray. Add pork, cooking 3 to 4 minutes on each side. Remove pan from heat and let pork stand for 30 seconds.
- While pork cooks, combine brown sugar, soy sauce, chile paste, hoisin and rice vinegar in a small bowl.
- Pour sauce over the pork, scraping the pan to loosen the fond. Turn the pork over to coat. (The recipe does not call for this, but I often will return over low heat just to make sure the sauce is heated through, if there is not enough residual heat in the skillet).
- Serve garnished with the green onion slices.
- I had a couple of thick boneless chops sitting around, so I cut them into thin, flat slices and cooked as above; then doubled the sauce ingredients, tossed it all together and served with saffron rice. A nice variation.
EASY GRILLED/BROILED PORK CHOPS

- Rub both sides of the chops with the Kitchen Bouquet.
- Sprinkle the chops with half of the garlic salt and celery seed on each side.
- Grill or broil on medium to medium-high heat for 5-7 minutes per side for thin chops or 8-10 minutes per side for thicker chops OR until medium-well or well-done, according to personal preference.
- Do not overcook or they will be dry.

- Ina a saucepan, combine the first nine ingredients; bring to a boil.
- Reduce heat; simmer for 5 minutes, stirring occasionally.
- Set aside half of the sauce.
- Place chops on broiling pan rack.
- Broil about 4 inches from the heat for 4 minutes on each side.
- Brush with remaining sauce.
- Continue broiling, turning and basting occasionally, for 3-4 minutes or until juices run clear.
- Serve with reserved sauce.
