Steps:
- Preheat oven to 350°F Lighly grease an 8 x 8 baking dish.
- Combine crushed crackers, black pepper and garlic powder in a small bowl.
- Press scallops into mixture so that they are evenly coated. Place them in the greased dish.
- In a separate bowl mix together melted butter, wine and lemon juice.
- Drizzle mixture over scallops.
- Bake until scallops are lightly browned, about 15 minutes.
- Garnish with parsley.

WONDERFUL BAKED SCALLOPS
I came across this recipe many years ago in a magazine and don't know which one it was. Finally tried these for dinner and my husband loved them. It is a simple recipe, quick to prepare and tasty. Be sure to use 'real' parmiggiano-reggiano cheese!! You won't be disappointed!

Steps:
- In four small gratin dishes, add 1 tablespoon butter and 2 cloves of minced garlic to each.
- Place in a 400* preheated oven until melted.
- Remove and add 1 dozen scallops to each dish.
- Top with 1 tablespoon wine and 1 tablespoon heavy cream, stirring to evenly coat the scallops.
- Top each dish evenly with the crushed crackers and then sprinkle each with 1 tablespoon of the grated cheese.
- Bake until hot and opaque, about 15 minutes.
- Switch the oven to broil and cook until the crumbs and cheese are golden brown.

BAKED SCALLOPS
Steps:
- Preheat oven to 400 degrees F (200 degrees C).
- Pour melted butter into a 2 quart oval casserole dish. Distribute butter and scallops evenly inside the dish.
- Combine the bread crumbs, onion powder, garlic powder, paprika, parsley, minced garlic and Parmesan cheese. Sprinkle this mixture over the scallops.
- Bake in pre-heated oven until scallops are firm, about 20 minutes.

BAKED SCALLOPS
This is another recipe that I clipped from the newspaper in 1984, which was attributed to then New York State Assemblyman George J. Hochbrueckner, who later was elected to Congress. I made this numerous times, serving it over rice, and always enjoyed the mild flavors. It is quick and delicious!

Steps:
- In a small skillet, over medium heat, melt 1/2 T. butter. Stir in the breadcrumbs. Cook, stirring constantly, until golden, about 4 minutes. Remove from heat; reserve.
- Place 2 T. butter in a shallow baking dish. Place in a preheated 400 degree oven until butter melts.
- Remove baking dish from oven. Add scallops to the dish. Sprinkle with lemon juice, salt and pepper to taste, and the chopped chives. Toss until well coated. Drizzle cream over top. Sprinkle with reserved bread crumbs. Bake until bubbly and scallops are cooked through, 8-10 minutes. Sprinkle with crumbled bacon. Serve with rice.

LEGAL SEAFOOD STYLE BAKED SCALLOPS
Whenever we get back to the Boston area, it's a priority to to have a meal at Legal Seafoods. I recently "re-discovered" this recipe buried in old newspaper clippings. I had tried to recreate it in the past but now know I was missing the most important ingredient - buttermilk. I made it again after posting the recipe so I have edited the original description. It's even better than I remembered, you might want to try just a dash (or more) of cayenne pepper. It's delightful !

Steps:
- Preheat oven to 400°F.
- Place scallops in a bowl, season with salt and pepper, add thyme and buttermilk and toss to coat.
- Place scallops, with buttermilk, evenly in the bottom of an oven proof dish, sprinkle with cracker crumbs and top with melted butter.
- Bake for 20 minutes, squeeze lemon over scallops and serve immediately.

- In a small bowl, combine the flour, salt and pepper. Toss scallops in flour mixture, a few at a time, and place into two greased 6 to 8-oz. baking dishes. - Preheat oven to 350 degrees.
- For topping:.
- In small saucepan melt butter.
- Add garlic, onions, parsley, salt, and pepper. Cook on low heat for 4 minutes. Add breadcrumbs. Mix well. Set aside.
- In large sauté pan heat olive oil. Add onions and garlic. Sauté 2 minutes.
- Place scallops in baking dish. Pour heavy cream and white wine on the scallops. Sprinkle with breadcrumb mixture.
- Top with Parmesan and Gruyere cheese. Bake 350 degrees for 20 to 30 minutes or until cheese is lightly brown.
BAKED SCALLOPS
Through the years I have tried to accumulate a collection of recipes that can be prepared very quickly but are still quite elegant. This is one of those dishes. It can easily be doubled or tripled as needed. Also, it can be baked in individual dishes for ease in serving. It can be a first course or a main dish.

- Preheat oven to 450^F.
- In a medium skillet, melt butter and brush some of the butter over a ten inch glass pie plate.
- Put the scallops in the dish and sprinkle with salt and pepper.
- Add breadcrumbs and garlic to the butter in the skillet and stir over medium heat until the crumbs are crisp, about 5 minutes.
- Mix in parsley and tarragon.
- Top the scallops with the crumb mixture.
- Bake until top is golden and scallops are opaque in center, about 10 minutes.

- Cut scallops in half or into quarters, depending on their size.
- Dry well with paper towels.
- Melt the butter with the honey and set aside.
- Roll the scallops in the bread or cracker crumbs and divide them equally into 4-6 individual greased ramekins or small baking dishes.
- Whisk the oil into the honey-butter blend and drizzle evenly over each portion of scallops.

DECADENT BAKED SCALLOPS
This recipe came from a co-worker of my best friend. It's absolutely delicious and somewhat rich. Please don't be put off by the ingredients. I promise you they are great if you like scallops and rich seafood. Perfect when having guests.They will never guess how simple they are to make. I have had lots of compliments on these and have given out the recipe to many. They in turn have shared. Trust me these are wonderful! I haven't tried it yet, but you could probably add other fish as well. I would like to try haddock (I'm a Maine-iac) and lobster.

- Rinse scallops in cold water and drain well.
- Toss flour in a quart plastic bag or put in bowl.
- Dredge scallops in flour. and shake off excess.
- In casserole dish, place scallops in single layer.
- Pour chicken broth around scallops until ALMOST covered.
- Pour melted butter over all.
- Add pinch of Thyme.
- Top with enough crushed Ritz crackers to thinly cover.
- Bake 350 degrees approximately 40 minutes.
