15 tablespoons unsalted butter, plus extra to grease the pan
7 ounces bittersweet chocolate, such as Lindt, broken
1 cup sugar
4 extra-large eggs, lightly beaten
1/2 teaspoon instant coffee granules, such as Nescafé
1/2 teaspoon kosher salt
1/4 cup all-purpose flour, plus extra for the pan
Sweetened whipped cream, vanilla ice cream, or crème fraîche, for serving

Steps:

  • Preheat the oven to 350 degrees F. Butter and flour an 8-inch springform pan.
  • Place a large heatproof bowl over a pot of simmering water, making sure the water doesn't touch the bowl. Put the butter and chocolate in the bowl, stirring occasionally, until the chocolate melts. Take the bowl off the heat and set aside.
  • First, whisk the sugar into the chocolate mixture, then whisk in the eggs, coffee, and salt, whisking until the mixture is combined and smooth. Sprinkle on the flour and fold it in with a rubber spatula until it's incorporated.
  • Pour the batter into the prepared pan and place it on a sheet pan. Bake for 30 to 40 minutes (see Cook's Note), until the top puffs up and cracks and the cake doesn't wobble when you jiggle the pan. (A toothpick will not come out clean.) Remove from the oven and cool completely on a baking rack. The cake will deflate as it cools. Run a small knife around the cake and remove the sides of the pan. Cut the cake in wedges and serve warm or at room temperature with sweetened whipped cream, vanilla ice cream, or crème fraîche.

9 ounces all-purpose flour (2 cups)
2 teaspoons baking powder
1/2 teaspoon salt
4 ounces unsalted butter, at room temperature (1/2 cup)
1/4 cup finely grated lemon zest
1 cup granulated sugar
2 large eggs, room temperature
2 teaspoons ground coriander
3/4 teaspoon ground mace
3/4 cup whole milk, room temperature
2 teaspoons caraway seeds
1 cup lemon curd (see Lemon Curd Filling)

Steps:

  • Preheat oven to 350.
  • Butter and flour a 4 1/2 x 8 1/2 inch loaf pan.
  • Sift flou, baking powder and salt together into a bowl.
  • Beat butter and lemon zest together with an electric mixer (use paddle attachment) until light and smooth- about 1 minute.
  • Add sugar, eggs, coriander and mace; beat until smooth.
  • Add half of the milk, beat until just blender.
  • Add the flour mixture in two batches, beat until just blended and scraping the bowl as needed.
  • Add remaining milk and mix until just blended.
  • Add caraway seeds and stir in with a rubber spatula.
  • Transfer to loaf pan and smooth top.
  • Bake until tester comes out clean in the middle of the loaf- abou 60-65 minutes.
  • Let cool for 10 minutes, remove cake from pan and cool completely on a rack.
  • Cake will keep 3 days at room temperature if wrapped well.
  • Cut with a serrated knife in thick slices- cake is tender.

These are adapted from an Emeril recipe and very very easy. Whenever I make them, people love them. You can serve them with fresh berries, ice cream, or whipped cream. Impress your guests!

8 tablespoons unsalted butter (1 stick)
2 tablespoons flour
6 ounces bittersweet chocolate, chopped
2 tablespoons cold heavy cream
2 tablespoons confectioners' sugar
2 large eggs
2 large egg yolks
1/4 cup sugar
1 teaspoon vanilla extract
1 pinch salt
sweetened cocoa, as garnish

Steps:

  • Preheat the oven to 450 degrees F.
  • Butter and flour 4 (6-ounce) ramekins or baking dishes, tapping out the excess flour.
  • Set on a baking sheet.
  • In a double boiler, or a glass bowl set over a pan of boiling water, melt butter with the chocolate, cream, and powdered sugar, stirring until smooth.
  • Remove from the heat.
  • In a separate bowl, whisk together the eggs, egg yolks, sugar, vanilla, and salt until thick ribbons form, about 3 minutes.
  • Sift flour into the egg mixture and fold together.
  • Fold the chocolate into the egg mixture. Divide among the prepared dishes and bake until the sides of the cake are set and the tops are puffed but still soft, about 10-12 minutes.
  • Remove from the oven and let cool in the ramekins for 2 minutes, then unmold onto dessert plates.
  • Sprinkle cocoa over the cakes, and serve.
  • Fresh berries, ice cream or whipped cream make a nice accompaniment.

3/4 cup unsalted butter
3 large eggs
3 large egg yolks
1 tablespoon all-purpose flour
1 quart coffee ice cream

Steps:

  • Generously butter eight 3/4-cup soufflé dishes or custard cups.
  • Sprinkle inside of each dish with 1 1/2 teaspoons sugar.
  • Stir chocolate and butter in heavy medium saucepan over low heat until smooth.
  • Remove from heat.
  • Using electric mixer, beat eggs, egg yolks, and remaining 5 tablespoons sugar in large bowl until thick and pale yellow, about 8 minutes.
  • Fold 1/3 of warm chocolate mixture into egg mixture, then fold in remaining chocolate.
  • Fold in flour.
  • Divide batter among soufflé dishes.
  • (Can be made 1 day ahead. Cover with plastic; chill. Bring to room temperature before continuing.) Preheat oven to 425°F.
  • Place soufflé dishes on baking sheet.
  • Bake cakes uncovered until edges are puffed and slightly cracked but center 1 inch of each moves slightly when dishes are shaken gently, about 13 minutes.
