Found this recipe in Low Fat Ways to Cook for the Holidays (C1998). Love sweet potatoes but was looking for a new and different way to prepare them. I love how this sounds and plan to make for Thanksgiving this year. Adopted recipe. times are negotiable depending on power of microwave.

6 sweet potatoes, medium cut into 1-inch cubes (about 3 lbs)
1/2 cup brown sugar, firmly packed
2 tablespoons margarine
2 tablespoons orange juice, unsweetened
1/2 teaspoon salt
1 cup whole berry cranberry sauce
orange rind (optional)

Steps:

  • Place potatoes in 2 qt microwaveable safe baking dish: cover and micro on HIGH 12 min or until pototatoe is tender.
  • Combine sugar and next 3 ingredients in a 2 c glass measuring cup. Microwave on HIGH for 3 min, stirring every minute Add sugar mixture and cranberry mixture to potatoes, toss gently. Microwave on HIGH 10 min or until thouroughly heated, basting with sauce tice uring cooking.
  • Garnish with orange rind.

4 tablespoons butter, plus 1 tablespoon for greasing
4 medium yams or sweet potatoes, peeled
1/2 cup brown sugar
3 tablespoons maple syrup
Freshly grated nutmeg, to taste

Steps:

  • Preheat oven to 375 degrees F. Grease a 9 by 13-inch baking dish with 1 tablespoon butter.
  • Cut each of the yams into 8 evenly shaped wedges. Lay them out in the prepared baking dish in an even layer. Melt the butter in a small saucepan over medium heat. Stir in the brown sugar and allow to dissolve. Mix in syrup and cook until smooth. Pour the glaze over the yams and sprinkle with nutmeg.
  • Cover the baking dish with foil and bake for about 45 minutes or until the yams are tender when pierced with a fork but they still hold their shape.

5 medium sweet potatoes, peeled and cut into 1-inch pieces (about 1 1/2 pounds)
2 tablespoons olive oil
Kosher salt and freshly ground black pepper
1/2 cup cranberry juice cocktail
3 tablespoons dark brown sugar
2 tablespoons butter
1/2 teaspoon ground cinnamon
1/4 cup chopped toasted almonds

Steps:

  • Preheat the oven to 400 degrees F.
  • On a baking sheet, toss together the sweet potatoes, oil and some salt and pepper. Roast until the potatoes are golden brown and cooked through, 30 to 40 minutes.
  • In the meantime, in a small saucepan over medium-high heat, reduce the cranberry juice by half. Add the brown sugar, butter and cinnamon, stirring to dissolve and incorporate.
  • When the potatoes come out of the oven, add them to a large bowl. Pour the glaze over top and toss to coat completely. Serve topped with the toasted almonds.

3 1/2 pounds red-skinned sweet potatoes (yams), peeled, cut into 1-inch chunks
1 1/2 cups apple cider or apple juice
1/3 cup (packed) golden brown sugar
5 tablespoons butter
1/2 teaspoon salt
1/4 teaspoon ground allspice
1/2 cup dried cranberries
1/3 cup finely chopped green onions

Steps:

  • Cook sweet potatoes in large pot of boiling salted water until halfway cooked (a knife inserted into center will encounter considerable resistance), about 5 minutes. Drain and cool. (Can be prepared 1 day ahead. Cover and refrigerate.)
  • Combine cider, sugar, butter, salt and allspice in heavy large skillet over medium-high heat. Bring to boil, stirring often. Add sweet potatoes and cook 5 minutes. Add cranberries and continue cooking until liquid is reduced to syrupy glaze and sweet potatoes are tender, about 10 minutes. Season with salt and pepper. Transfer to bowl. 1 (4 pound) fresh turkey breast
4 tablespoons unsalted butter or margarine, melted
1 lemon, juiced
¼ cup cranberry wine or cranberry juice
2 tablespoons mixed dried fruit bits
1 cup water, divided
1 teaspoon Morton® Coarse Kosher Salt
½ teaspoon freshly ground black pepper
4 (8 ounce) sweet potatoes, scrubbed clean
4 teaspoons unsalted butter or margarine, melted
½ teaspoon Morton® Coarse Kosher Salt
1 cup Freshly ground black pepper, as desired
1 (14.5 ounce) can whole cranberry sauce
½ cup honey
1 teaspoon dried lemon zest
1 whole cinnamon stick

Steps:

  • Place turkey breast in a large resealable plastic bag. Combine butter, lemon juice, cranberry wine, dried fruit, Morton ® Kosher Salt, and pepper. Pour mixture over turkey to coat all sides; close bag. Refrigerate and allow flavors to marinate turkey at least 2 hours or over night.
  • To roast: Remove turkey from marinade. Place turkey, breast side up, on rack in a 14x12x2-inch roasting pan. Pour marinade over turkey; add 1/2 cup water to pan. Roast at 375 degrees F for 1 to 1-1/2 hours or until juices run clear and thermometer registers at 175 degrees F.
  • While turkey is roasting, prepare sweet potatoes. Do not remove potato skin. Brush potatoes with butter and sprinkle with Morton® Kosher Salt and pepper. Roast along side turkey for about 1 hour or until tender. Keep warm; slice before serving. Let turkey stand 15 minutes before carving.
  • Pour off grease from roasting pan and place pan on top of the stove. Add remaining 1/2 cup water; bring to boil while scraping bottom of pan vigorously with wooden spoon, loosening all the crisp bits on the bottom of the pan. Let reduce by half.
  • Serve over sliced meat and baked sweet potatoes. Serve Cranberry/Honey Sauce on the side in a gravy boat.
  • Cranberry Honey Sauce: Combine all ingredients in small saucepan. Bring to low simmer while stirring constantly. Keep warm until needed or cover and serve at room temperature with sliced turkey.

I do not like the tartness of most cranberry dishes, and sweet potatoes can be bland by themselves. This dish combines both to make a great all-in-one dish. When I take this dish to another person's home, I bake the first time and add the yams, cover, and then wait to heat until I am at their house.

1 small unpeeled orange, sliced
1 ⅓ cups white sugar
½ cup pecan pieces
¼ cup orange juice
¾ teaspoon ground cinnamon

⅛ teaspoon ground mace
1 (40 ounce) can cut yams, drained

Steps:

  • Preheat oven to 375 degrees F (190 degrees C).

  • In a large bowl, combine the flour, sugar, baking soda, pie spice, baking powder and salt. In another large bowl, combine the eggs, sweet potatoes, cranberry sauce and oil. Stir into dry ingredients just until moistened. Fold in pecans. , Pour into 2 greased 9x5-in. loaf pans. Bake at 350° until a toothpick inserted in the center comes out clean, about 55-60 minutes.   • Stir the cayenne and cinnamon into the cranberry liquid and spoon it over the sweet potatoes.
