PEAR SALAD WITH BALSAMIC AND WALNUTS
This pear salad recipe is a stunning fall side dish! Simple, elegant, and delicious, it'd be a great addition to a Thanksgiving or holiday dinner.

Steps:
- Assemble the salad with the mixed greens and top with the pears and fennel. Squeeze a little lemon over the pears and fennel and toss.
- Top with the cranberries, pecans, walnuts, hazelnuts, and pecorino. Drizzle with balsamic vinaigrette. Season to taste with salt and pepper.
WINTER SALAD
I make this salad for special dinners. Everyone loves the flavor combination and interesting textures of the pears, walnuts, greens and Gorgonzola cheese. It makes good use of ingredients grown here in California, and it's nice for winter when other fruits aren't readily available.

- Rub garlic clove over the bottom and sides of a large salad bowl; discard garlic. In the bowl, combine the lemon juice, honey and salt. Add pears; gently toss to coat. Add the greens, walnuts and cheese; toss to coat.

PEAR & WALNUT SALAD WITH BALSAMIC VINAIGRETTE
I came up with this salad recipe for Father's Day, and it was a huge hit. I strongly recommend recipe #154351 and recipe #323254 in this!! (I used both walnuts and pecans when making the candied nuts.) It's really pretty if you can get yellow pear tomatoes and use a red pepper, or vise versa.

PEAR APPLE WALNUT SALAD IN A BALSAMIC REDUCTION
I recently needed a "salad-ish" dish to take to a Christmas Eve dinner, and came up with this. Wintertime does not make me hungry for a cold salad, but this one is a nice compromise - and it doesn't involve one leaf vegetable! You can make the balsamic reduction in advance - it keeps nicely in the fridge for a few weeks in a closed container. The amounts of the ingredients are flexible as are the ingredients themselves. Choose your favorite apple and pear, and leaving the skin on them adds color and texture. The salad keeps well for a day or two in the fridge as well, but the fruits, cucumber and celery wilt a bit.

- Put the balsamic vinegar in a small saucepan and turn the heat on low. When making a balsamic reduction, you don't have to boil the vinegar - you just have to get it warm enough to evaporate the vinegar. Boiling may burn the reduction.
- Stir the balsamic occasionally to check the consistency, and make sure your hood fan is on. The evaporation of the vinegar can be quite pungent.
- Have patience - this reduction takes a bit of time. Maybe 45 minutes?.
- Once the volume of the vinegar has been reduced to about 1/3 of its original volume, remove it from the heat and set it aside.
- Slice your fruit, cucumber and celery and place in a bowl.
- Add the walnuts, cranberries and blue cheese crumbles.
- Toss.
- Add ground pepper and drizzle with balsamic reduction (make sure it's cool!).
- Add a bit more ground pepper, and more balsamic reduction if needed and toss again.
- Enjoy as an appetizer or a side salad.

BABY SPINACH, PEAR AND WALNUT SALAD
A refreshing and flavoursome salad which is visually appealing and complements any meat, rice or pasta dish. Adapted from a recipe in the latest issue of the Australian magazine 'New Idea'. When I posted this initially, I just listed "pears" in the ingredients, but have since located the pears specified, and I have made the salad with those pears: CORELLA PEARS. See notes below.

- Place the honey and vinegar in a medium bowl and stir until well combined; cut the pears lenghtways into 1cm-thick pieces and toss in the honey mixture.
- Cook the pears on a heated, oiled grill pan or BBQ hotplate on one side for 1 minute or until golden; remove and set aside to cool.
- Toss the walnuts in the remaining honey and balsamic vinegar mixture, and cook on a heated oiled grill pan, turning frequently, for 2 minutes or until golden brown; set aside to cool.
- FETA DRESSING: Place the milk and rosemary in a small saucepan and bring to the boil; remove and cool; discard the rosemary; place the feta in a medium bowl and gradually whisk in the milk, a little at a time until it forms a smooth paste, whik in the oil and season to taste.
- SERVING: Place the pears and walnuts in a large bowl, add the baby spinach leaves and chives, pour over the feta dressing, toss well and serve.
- NOTES: Corella pears are named after the colourful Australian Corella parrot. They are a type of pear which was first developed by the German settlers who settled the Barossa Valley, in South Australia, in the 1840s. Corella pears are soft skinned, golden and red: really beautiful. As my mother said, they look as if they belong in a still life painting. They lose this colour when cooked, but they come out a beautiful golden brown, and they are so, so deliciously sweet. if you are familiar with Fuji apples, in taste and appearance, they are their cousins. I'm planning to make this salad next time with half Corella pears and half Fuji apples.

- To a blender add olive oil, balsamic vinegar, honey, dijon mustard, diced shallot and season with salt and pepper to taste (I used a 1/4 +1/8 tsp salt and 1/4 tsp pepper).
- Blend mixture until well emulsified, about 20 seconds. Store in refrigerator in an airtight container until ready to serve.
- In a medium skillet melt butter along with brown sugar over medium heat. Once mixture has melted add walnuts and cook, stirring constantly until caramelized, about 2 minutes. Transfer to a plate in a single layer to cool.
- Layer lettuce and pears in a large bowl and toss with dressing, then top with parmesan, dried cranberries and candied walnuts and serve (alternately just layer all the salad ingredients then drizzle with dressing. Note: top this salad with dressing just before serving as it will wilt the lettuces after a while).
